- Preheat the oven to 325 degrees F.
- Melt the butter in a large skillet over medium-high heat. Add the onions and saute until translucent, about 7 minutes. Remove the pan from the heat and stir in the breadcrumbs, salt, pepper and garlic powder. Stir in the beaten egg and parsley.
- To cut pockets into the pork chops, insert the point of a small sharp knife horizontally into the fat-covered edge. Move the knife back and forth to create a deep pocket about 1 1/2 inches wide.
- Fill the pocket of each chop with the breadcrumb mixture. Secure the openings with toothpicks.
- Place the flour in a shallow bowl. Dredge the stuffed chops lightly in the flour, shaking off the excess. Wipe out the skillet used previously for the stuffing and place it over medium-high heat. Add the oil and, when hot, add the chops. Sear over medium heat until lightly browned, about 3 minutes per side.
- Place a rack in a roasting or baking pan and add water, being careful not to cover the rack with water. Place the chops on the rack and cover the roaster with the lid or aluminum foil. Bake the chops for 1 hour. Let rest, remove the toothpicks and serve.
BAKED STUFFED PORK CHOPS
WONDERFUL baked dish! This entree is a mainstay in our home and has been added to our family favorites list. May use bone-in or boneless pork chops. Easy and quick preparation. Note: One 6 oz. box of stuffing mix yields 6 servings. If your family likes a lot of stuffing you may consider using 2 boxes.

- Lightly brown pork chops in oil. Remove from heat.
- Bring water to a boil and stir in stuffing mix and butter. Set aside for 5 minutes and then fluff with a fork.
- Add soup and sour cream to stuffing mix and stir just until blended. Place one-half of mixture in a baking pan. Place pork chops on top. (If desired, pork chops may be split and stuffed with stuffing mixture.) Add remaining one-half of stuffing mixture on top.
- Bake covered for 45 minutes in a 350 degree oven. Uncover and bake an additional 15 minutes.

- 1. Heat oven to 400 degrees. Foil line baking dish for easy clean up.
- 2. Heat stock or broth in microwave until hot. Place stuffing mix in bowl with apples, diced onions, and celey. Pour 1 1/2 cups of water over it. Mix with melted butter. Stir to combine well.
- 3. Take chops and turn fat side up. Cut down the center not all the way through leaving an inch on each side forming a pocket.
- 4. Stuff pockets in pork with stuffing. Secure with tooth picks. Salt and pepper chops. Place in pan.
- 5. Mix the onion soup mix with 1 1/2 cups of hot chicken stick or broth, and cream of mushroom soup. Pour over pork chops. Lay sliced onion on top of chops. Cover with foil.
- 6. Place in oven covered and bake 45min. Check for doneness. If pork is still a bit pink. Continue to cook another 15 minutes. It takes about an hour in my oven. If you use convection method. You must decrease temperature to 350°.
- 7. Drain liquid from pan with strainer to catch stuffing. Place liquid into a sauce pan. Turn burner on to med-high. Mix corn starch with 1/4 cup water. Whisk into drippings. Stir over heat until thickened. Salt and pepper to taste. Use as a gravy for chops.

- 1. Make dressing to package directions using the butter, celery, onion and chicken broth, toss together.
- 2. Slit each chop on the rounded side, cut through almost to bone to make a nice deep pocket for the dressing.
- 3. Fill each chop with 1/4 of the dressing, secure with 2 or 3 toothpicks, you will take these out later.
- 4. Put oil in fry pan on med high and brown chops on both sides.
- 5. Place on a foil lined pan (no cleanup) and bake in a 350 degree oven for 45 minutes or chops register 140 degrees in the center.
- 6. You could also put these in your slow cooker and cook on low for 7 to 8 hours as well.

- If the pork chops do not already have a pocket cut in them, slice the meaty side of the pork chop in half almost to the bone so that it creates a pocket.
- On both sides, sprinkle the pork chops with salt and pepper.
- Heat the oil in a skillet over medium heat. Once the oil is hot, sear the pork chop on both sides just until golden brown.
- Remove the pork chops to a plate.
- Preheat the oven to 350 degrees Fahrenheit.
- In a skillet, melt the butter. Add the celery and onion. Saute the celery and onion until tender, about 10 minutes.
- In a large bowl, combine the bread cubes, butter mixture and the remaining stuffing ingredients. Mix well.
- Stuff about 1/2 cup to 3/4 cup stuffing in each pork chop so that it fills the pork chops and also sticks out a little bit. This will give the pork chop a pretty look!
- Place the pork chops in a baking dish, either 9x13" or a bit smaller.
- Arrange the remaining stuffing around the pork chops.
- Bake the pork chops for about 20-25 minutes or until the internal temperature of the pork reaches 145 degrees Fahrenheit. At this temperature there will be a blush of pink in the pork which means they will be nice and juicy!
- Allow the chops to rest for 3-4 minutes, then serve.

- Make slits in pork chops to form a pocket in fat end. Combine bread crumbs, sugar, pepper, salt, 3 tablespoons of the melted butter, onions, and parsley; mix well. Stuff chops generously and skewer shut with toothpicks.

- Preheat oven to 350°F.
- In a large oven-proof skillet, melt butter over medium-high heat. Add apple, onion, and celery; sauté just until tender (about 5-7 minutes).
- Meanwhile, prepare the stuffing according to the package instructions. Use a fork to gently combine the prepared stuffing with the sauteed apple, onion, and celery mixture. Set aside.
- Use a sharp knife to cut a pocket in each pork chop. Be careful not to slice all of the way through. Pat the pork chops dry with a paper towel. Season on both sides with salt and pepper.
- Fill each pork chop with about ¼ cup stuffing (or as much stuffing as you can fit inside). Secure with toothpicks.
- Wipe out the skillet that you used to sauté the apples and vegetables. Add the oil to the skillet and heat over medium-high heat.
