Strawberry Vinaigrette image

Pair this sweet and tart strawberry vinaigrette dressing with any salad for a fresh twist for summer. -Carolyn McMunn, San Angelo, Texas

1 package (16 ounces) frozen unsweetened strawberries, thawed
6 tablespoons lemon juice
1/4 cup sugar
2 tablespoons cider vinegar
2 tablespoons olive oil
1/8 teaspoon poppy seeds

Steps:

  • Place the strawberries in a blender; cover and process until pureed. Add lemon juice and sugar; cover and process until blended. While processing, gradually add vinegar and oil in a steady stream; process until thickened. Stir in poppy seeds. Transfer to a large bowl or jar; cover and store in the refrigerator.

4 large strawberries, pureed (1/3 cup pureed)
1 ½ tablespoons honey, or to taste
1 teaspoon poppy seeds

Steps:

  • Combine apple cider vinegar, strawberry puree, and honey in a mini blender; blend until smooth. Pour into a glass container and add poppy seeds. Let rest on counter for an hour for flavors to marinate, then store in fridge.
