Steps:
- Preheat oven to 350 degrees.
- In a mixing bowl combine the cake mix and the strawberry pie filling. Do not follow the directions on the box. You do not have to add water.
- Mix with a hand mixer and it will break up some of the chunks of strawberries in the pie filling.
- Pour into an UNGREASED 9x13 baking pan.
- Bake in preheated oven for 30-35 minutes or until the top begins to brown.
- Cut and serve. I like to serve with whipped cream and fresh strawberries.

- Slice the 2 cups (500 mL) strawberries. Place in small saucepan, with sugar and 2 tbsp (30 mL) lemon juice. Simmer over medium heat 5 min. until sugar is melted and liquids are thickened. Remove from heat. Cool. Transfer to blender; pulse until smooth. Strain mixture through fine mesh sieve. Discard seeds. Set aside strawberry sauce.
- In bowl, use electric mixer on high speed to beat butter until light and fluffy, about 1 min. With mixer on low speed, beat in icing sugar, whipping cream, 2 tsp (10 mL) lemon juice and salt until smooth. Increase speed to high and beat until light and fluffy, about 1 min. Fold 1/2 cup (125 mL) reserved strawberry sauce into frosting. Chill frosting in refrigerator about 10 min. to firm up.
- Place cake on serving platter. Spread frosting over top and sides of cake. Hull the 12 whole strawberries; halve lengthwise. Arrange around top of cake.
- Serve cake with remaining strawberry sauce.

Steps:
- Stir orange juice into cornstarch in medium saucepan.
- Add strawberries, sugar and marmalade.
- Bring to a boil, stirring occasionally.
- Reduce heat to low; cook 2 minutes, stirring, or until sauce thickens.
- Cool or chill.
- Cut cake into 12 slices.
- To serve, spoon sauce over each slice.
- Garnish with whipped topping, if desired.

- Remove the stems from the strawberries, and place the strawberries in a pan lined with parchment paper. Sprinkle the granulated sugar over. Let the strawberries roast for 15-20 minutes (along with the cake), until they are soft and juicy. They should be easy to crush with a fork, and juice should be accumulating in the bottom of the pan.
- Place the strawberries and all excess juice in a blender and puree. (This will smell delicious). Then use a fine mesh strainer to strain the strawberries seeds out. Keep the juice and toss the seeds.
- Stir the lemon juice into the strawberry juice, and place in the fridge to let chill. This step is important because adding warm strawberry juice to the whipped cream frosting will melt it.
