EASY STICKY WINGS WITH HOT SAUCE



Easy Sticky Wings with Hot Sauce image

Cook up these super-simple, easy, sticky wings - a perfect shareable snack for movie night, game night, or any night of the week that anyone can make!The recipe is quoted with minor edits (based on the format of this blog and my own cooking experience) from Jacques Pépin Quick & Simple.

1 3/4 lbs (800 g) chicken wings ((12 to 16 wings))
1/2 teaspoon salt
1 tablespoon Sriracha ((or other hot sauce))
1 tablespoon hoisin sauce
1 tablespoon dark soy sauce ((or regular soy sauce))
2 teaspoons balsamic vinegar
2 teaspoons toasted sesame oil

Steps:

  • Arrange the chicken wings in one layer in a 12" nonstick skillet, skin side up. (Use two skillets if necessary.) Sprinkle the wings with half of the salt. Flip the wings over and sprinkle the other half of the salt onto them.
  • Cook the wings skin side down over medium-high heat, uncovered, until the bottoms are browned, 8 to 10 minutes. Shake the pan occasionally so the wings don't stick. Check on the bottom of the wings every few minutes, to prevent them from overcooking.
  • Meanwhile, prepare the sauce by mixing all the sauce ingredients in a bowl.
  • Turn the chicken wings. They should be nicely browned on the first side. Cover the skillet, reduce the heat to medium-low, and cook the wings for another 12 minutes, or until they are browned on the second side and tender.
  • If the chicken wings have rendered a lot of fat, use a few layers of paper towel attached in front of a pair of tongs. Pat the pans between the wings to absorb any excess oil, and discard it.
  • Pour the sauce over the wings and cook over medium-high heat, tossing the wings in the sauce, until the sauce has reduced enough that it coats the wings like a glaze, 2 to 3 minutes.
  • Serve immediately.

2 1/2 pounds chicken wings or drumettes
Kosher salt and freshly ground black pepper, to taste
1 1/2 tablespoons baking powder
1/3 cup oyster sauce
1/3 cup ketchup
2 tablespoons orange marmalade
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon chili garlic sauce, or more, to taste
3 green onions, thinly sliced
1 teaspoon toasted sesame seeds

Steps:

  • Preheat oven to 425 degrees F. Coat a wire rack with nonstick spray and place on a baking sheet lined with aluminum foil; set aside. Using paper towels, pat wings dry. In a large bowl, combine wings, 1 1/2 teaspoons salt, 1 teaspoon pepper and baking powder. Place wings onto the prepared baking sheet and bake for 40-45 minutes, using metal tongs to turn at halftime. In a small saucepan over medium low heat, combine oyster sauce, ketchup, marmalade, Dijon, honey and chili garlic sauce. Bring to a boil; reduce heat and simmer, stirring constantly, until slightly thickened, about 2-3 minutes. Preheat oven to broil. Line a baking sheet with aluminum foil. In a large bowl, combine wings and half the oyster sauce mixture. Place wings onto the prepared baking sheet and broil, turning once, until glossy and lightly caramelized, about 3-5 minutes. Stir in remaining oyster sauce mixture. Serve immediately, garnished with green onions and sesame seeds, if desired.

CRISPY WINGS WITH HOT HONEY SAUCE



Crispy Wings with Hot Honey Sauce image

2 1/2 pounds chicken wings
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon smoked paprika
1 cup honey
1 tablespoon barbecue sauce
1 tablespoon Louisiana hot sauce
1 tablespoon apple cider vinegar
2 jalapenos, thinly sliced
1 serrano chile, thinly sliced
1/4 cup chopped fresh parsley
Ranch dressing, for serving

Steps:

  • For the wings: Preheat the oven to 400 degrees F. Line a sheet pan with foil, then place a metal rack on the pan.
  • Pat the wings dry with kitchen paper, then sprinkle with the salt, pepper and smoked paprika on both sides. Place them on the rack, making sure they are not touching. Bake for 25 minutes, then pull them out. Use tongs to turn them over, then put them back in the oven and bake until golden brown and cooked through, an additional 20 minutes .
  • For the hot honey sauce: Meanwhile, add the honey, barbecue sauce, Louisiana hot sauce, vinegar, jalapenos and serranos to a small pot over low heat. Stir to combine. Bring to a simmer and continue to cook on low until reduced and slightly thickened, about 20 minutes.
  • Remove the wings from the oven and turn the oven to broil. One by one, dunk the wings in the sauce. Place them back on the rack and broil for 3 minutes to caramelize.
  • For the garnish: Place the wings on a platter and sprinkle over the chopped parsley. Serve with a bowl of ranch dressing for dipping.

⅔ cup hot pepper sauce (such as Frank's RedHot®)
½ cup cold unsalted butter
1 ½ tablespoons white vinegar
¼ teaspoon Worcestershire sauce

Steps:

  • Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper, garlic powder, and salt in a pot and place over medium heat. Bring to a simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

3-1/2 to 4 pounds whole chicken wings
1 cup packed brown sugar
3/4 cup soy sauce
1/2 cup teriyaki sauce
1/2 cup butter, melted
1 tablespoon Creole seasoning
1 teaspoon ground mustard

Steps:

  • Cut chicken wings into three sections; discard wing tips. In a large bowl, combine the brown sugar, soy sauce, teriyaki sauce, butter, Creole seasoning and mustard; add chicken and turn to coat; cover and refrigerate for 8 hours or overnight., Drain and discard marinade. Place chicken in a greased 13x9-in. baking dish. Bake, uncovered, at 375° until chicken juices run clear, 45-50 minutes. , Transfer the wings to a rack on a broiler pan. Broil 4 in. from the heat until crisp, 2-3 minutes on each side.

This has become my #1 wings recipe; love 'em! I serve these as a main course, but I think they'd be great to serve as a snack or appetizer, or take to a potluck. My son and I really enjoy these (DH, on the other hand, hates wings of any kind; his loss); I hope your family enjoys them too.

2 1/2 lbs chicken wings (separated at joint, with wing tips discarded or saved to make stock)
1/2 cup low sodium soy sauce
1/2 cup liquid honey
2 tablespoons ketchup
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger

Steps:

  • Preheat oven to 425F; have ready a shallow baking pan that you've lightly sprayed with nonstick cooking spray.
  • Arrange chicken wings in prepared pan; lightly sprinkle both sides of wings with salt and pepper (go easy on the salt).
  • Bake in preheated oven for 15 minutes.
  • While wings are in oven, whisk together the soy sauce, honey, ketchup, garlic powder and ginger; please note that the original recipe called for minced fresh garlic and minced fresh ginger, but I found they had a tendency to burn easily so went with the dried spices instead.
  • Feel free to use two minced garlic cloves and 1 tsp of freshly minced ginger, instead of the dried spices, if you want to give fresh a go.
  • After the wings have baked for 15 mins, remove from oven and drain off any accumulated fat.
  • Pour the sauce over the wings and return to oven.
  • Bake for 20 more minutes, turning wings over in sauce frequently (I do it every 4 or 5 minutes), so that they are thoroughly coated.
  • Wings should be well glazed and sticky when done.

2 pounds chicken wings (split & tips removed)
1 ½ tablespoons flour
2 teaspoons baking powder
salt & pepper
sesame seeds & sliced green onions for garnish
⅓ cup buffalo sauce (or hot sauce)
⅓ cup honey
¼ cup soy sauce
3 tablespoons butter (melted)
1 teaspoon ginger
2 cloves garlic (minced)

Steps:

  • Preheat oven to 425°F. Line a large baking pan with parchment paper.
  • Combine all sauce ingredients in a small pan. Bring to a boil and let boil 3-4 minutes or until slightly thickened, set aside.
  • Rinse wings and pat dry with a paper towel. Toss with flour, baking powder, salt, and pepper. Spread out on the prepared pan. Bake for 30 minutes, flipping over after 15 minutes.
  • Remove wings from the oven and place in a large bowl, toss with sauce. Place back on the baking sheet and turn the oven up to 450°F. Bake additional 10-15 minutes or until sauce is thickened and browned.
  • Cool 3-4 minutes before serving.
