Steamed Broccoli is one of the best side dishes for meatloaf. It's so easy to make with a few ingredients.

1 large head broccoli
salt (to taste)
freshly ground black pepper (to taste)

Steps:

  • In a medium saucepan over high heat, add about an inch of water and bring to a boil.
  • Cut the broccoli head into 2-inch pieces and add to a steamer basket.
  • When the water is boiling, place the basket inside the pot.
  • Cover the steamer and reduce heat to medium.
  • Steam for 5-7 minutes or until you can pierce the broccoli stalk with a fork.
  • Serve and enjoy immediately.

1 1/2 pounds (2 large heads) broccoli
1/4 cup red onions, thinly sliced (or substitute green onion)
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 cup feta cheese (optional)
Freshly ground black pepper

Steps:

  • Chop the broccoli into florets.
  • If using, thinly slice the onion. Place it in a bowl of water while you're making the rest of the recipe, then drain. (This helps to reduce onion breath and remove some of the spicy bite. If you use green onion, skip this step!)
  • Place 1 1/2 cups water into a saucepan or pot. If using a steamer basket without a handle, add it to the pot now: the water surface should be right under the basket. Bring the water to a boil.
  • Once boiling, add the broccoli (in the steamer basket, if it has a handle). Steam with the lid on 3 to 4 minutes until just tender, testing with a fork to assess whether it's done. We like our broccoli on the crisp side: if you'd like it more tender, cook 1 minute more. Just be careful not to cook much longer or the color will immediately fade and it will be overcooked!
  • Carefully remove the broccoli to a bowl. Toss with the olive oil, kosher salt, feta cheese (optional), and drained red onions. Top with freshly ground black pepper.

3 tablespoons butter
2 cloves garlic, minced
1 pinch salt
2 teaspoons lemon juice
1 teaspoon ground black pepper

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.

This is what I came up with that he deemed "perfect". (The sugar is merely to help the water boil, like salt does, without adding a salty flavor to the vegetables. I read that tip on a website when I was learning to use the steamer and have used it ever since.)

1/8 teaspoon pepper
1 egg
1 1/2 cups broccoli florets
4 tablespoons breadcrumbs
1/2 cup mild cheddar cheese, grated
4 green onions, minced
1 teaspoon salt
1 tablespoon melted butter
1 tablespoon ketchup
1/2 teaspoon dried basil

Steps:

  • Preheat oven to 350.
  • Mix meat, pepper, egg, basil, half the bread crumbs, and 3/4 of the green onion together.
  • Set aside Bring a pot of water to boil.
  • Drop broccoli florets in and cook 3 to 4 minutes until crisp-tender.
  • Drain thoroughly.
  • Mix broccoli, cheese, salt, remaining bread crumbs, and remaining onions.
