This easy Smoked Chicken Breast Recipe is made on a pellet grill and is so simple to make. The boneless, skinless chicken breasts are juicy and flavorful; coated in a dry rub that has the perfect balance of sweet, salty, and spicy flavors. 4 chicken breasts (boneless, skinless)
2 tbsp olive oil
1 tbsp Dry Rub for Chicken (or your favorite seasoning.)

Steps:

  • Preheat the smoker to 225°F.
  • Use paper towels to pat the chicken dry.
  • Apply oil evenly over the entire chicken breast.
  • Apply the dry rub over the chicken breast and ensure it covers all parts; top, bottom, and sides.
  • Once the smoker comes up to temperature, place the chicken breasts directly on the preheated grill.
  • Close the lid and smoke until the internal temperature of the chicken breast, measured in the thickest part of the meat, is 165 degrees F. This will take about 1 hour.
  • If you like BBQ sauce, apply your favorite sauce for the last few minutes of cooking time.
  • Remove the smoked chicken breasts from the grill and place them on a serving tray. Cover with aluminum foil and rest for 5 minutes to allow the juices to reincorporate into the meat.

4 cups water
¼ cup kosher salt
2 tablespoons brown sugar
1 tablespoon cider vinegar
4 pounds skin-on, bone-in chicken breasts
maple wood chips
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon paprika
1 tablespoon brown sugar
½ teaspoon garlic powder
½ teaspoon onion powder

Steps:

  • Combine water, kosher salt, brown sugar, and apple cider vinegar in a large bowl. Stir until salt and brown sugar are dissolved. Place chicken breasts into brine, cover, and refrigerate for at least 4 hours or overnight.
  • Preheat an electric smoker according to manufacturer's directions to 225 degrees F (110 degrees C) using maple wood chips.
  • Remove chicken breasts from brine and rinse under cold water. Pat dry. Combine salt, black pepper, paprika, brown sugar, garlic powder, and onion powder in a bowl. Sprinkle dry rub all over chicken breasts and place skin-side up on a grill rack in the preheated smoker. Place a drip pan underneath.

After reading this recipe here, it sounded so good that I had to put my personal touches to it. I'm not particularly fond of chicken breasts unless they're flattened to a pulp and delicately browned after being dredged in flour. After that I followed the original recipe except I added crushed red peppers and Italian seasoning. I served this with fettuccine alfredo and roasted asparagus on the side. Delizioso!

¼ cup seasoned bread crumbs
2 teaspoons garlic salt
1 teaspoon freshly ground black pepper
