EASY SMOKED CHICKEN BREAST RECIPE ON A PELLET GRILL
This easy Smoked Chicken Breast Recipe is made on a pellet grill and is so simple to make. The boneless, skinless chicken breasts are juicy and flavorful; coated in a dry rub that has the perfect balance of sweet, salty, and spicy flavors. Plus, this recipe does not require any marinating or brining, and the smoking process only takes 1 hour, making it a perfect meal for busy weeknights. This is also perfect for meal prep; cook the chicken and then reheat for lunch or dinner!

Steps:
- Preheat the smoker to 225°F.
- Use paper towels to pat the chicken dry.
- Apply oil evenly over the entire chicken breast.
- Apply the dry rub over the chicken breast and ensure it covers all parts; top, bottom, and sides.
- Once the smoker comes up to temperature, place the chicken breasts directly on the preheated grill.
- Close the lid and smoke until the internal temperature of the chicken breast, measured in the thickest part of the meat, is 165 degrees F. This will take about 1 hour.
- If you like BBQ sauce, apply your favorite sauce for the last few minutes of cooking time.
- Remove the smoked chicken breasts from the grill and place them on a serving tray. Cover with aluminum foil and rest for 5 minutes to allow the juices to reincorporate into the meat.
- Serve with your favorite side dishes and enjoy!

SMOKED CHICKEN BREASTS
This is a delicious and different way to enjoy chicken breasts, with plenty of smoky flavor! Brining the chicken before smoking allows it to stay moist and flavorful. They are a great addition to a salad, on a sandwich, or just by themselves!

Steps:
- Combine water, kosher salt, brown sugar, and apple cider vinegar in a large bowl. Stir until salt and brown sugar are dissolved. Place chicken breasts into brine, cover, and refrigerate for at least 4 hours or overnight.
- Preheat an electric smoker according to manufacturer's directions to 225 degrees F (110 degrees C) using maple wood chips.
- Remove chicken breasts from brine and rinse under cold water. Pat dry. Combine salt, black pepper, paprika, brown sugar, garlic powder, and onion powder in a bowl. Sprinkle dry rub all over chicken breasts and place skin-side up on a grill rack in the preheated smoker. Place a drip pan underneath.
- Smoke chicken breasts in the preheated smoker until chicken is no longer pink at the bone and the juices run clear, about 4 hours, adding maple wood chips as necessary to keep the smoke continuous. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

EASY SMOTHERED CHICKEN BREASTS
After reading this recipe here, it sounded so good that I had to put my personal touches to it. I'm not particularly fond of chicken breasts unless they're flattened to a pulp and delicately browned after being dredged in flour. After that I followed the original recipe except I added crushed red peppers and Italian seasoning. I served this with fettuccine alfredo and roasted asparagus on the side. Delizioso!

Steps:
- Mix flour, bread crumbs, garlic salt, and black pepper together in a bowl. Coat each chicken breast with flour mixture.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon, reserving bacon drippings; drain bacon on paper towels.
- Cook and stir coated chicken breasts in the bacon drippings until chicken is no longer pink in the center and juices run clear, about 5 minutes per side; remove and keep warm.
- Cook and stir onion, lemon-pepper seasoning, Italian seasoning, salt, red pepper flakes, and brown sugar in the same skillet until onion is golden brown, 10 to 15 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Arrange chicken breasts on a baking sheet; top each breast with 2 bacon slices. Top with caramelized onion and Colby-Monterey Jack cheese.
- Broil chicken breasts until cheese is melted and bubbling, 1 to 3 minutes.

SMOKED CHICKEN BREASTS
Smoked chicken is given a husky taste that complements the inherent sweetness of the fowl and brings a hearty note to the food it's combined with. The sweeter-smelling the wood used, the more alluring the flavor it leaves behind. Hickory or fruitwoods, maple, oak and alder chips, dried grapevine trimmings or herb branches lend a sweet, firm flavor to food cooked in a closed container above it.

Steps:
- Place the wood chips in the bottom of a stove-top smoker and place the chicken on the rack over the chips. Place over medium heat until the wood begins to smolder. Cover and cook until the chicken is cooked through, about 45 minutes.
EASY SMOKED CHICKEN DRUMSTICKS
Drumsticks absorb the smoke flavor nicely and also do not dry out, making them one of my favorite cuts to smoke. They also don't need babysitting, so you can throw them on and go about doing other things.
