2 tablespoons olive oil
2 small onions, chopped
¼ pound bulk Italian sausage
1 pound ground beef
1 teaspoon dried Italian herb seasoning
1 teaspoon garlic powder
½ teaspoon dried marjoram
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (14.5 ounce) can Italian-style diced tomatoes
1 (14.5 ounce) can Italian-style stewed tomatoes
¼ teaspoon dried thyme leaves
¼ teaspoon dried basil
½ teaspoon dried oregano
2 teaspoons garlic powder
1 tablespoon white sugar

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir onions and Italian sausage until the sausage is browned, about 10 minutes. Transfer the sausage and onions to a slow cooker. In the same skillet, cook and stir the ground beef, Italian seasoning, 1 teaspoon of garlic powder, and marjoram, breaking the meat up as it cooks, until the meat is browned, about 10 minutes. Transfer the ground beef into the slow cooker.
  • Stir in the tomato sauce, tomato paste, diced tomatoes, stewed tomatoes, thyme, basil, oregano, and 2 teaspoons of garlic powder. Set the cooker on Low, and cook the sauce for 8 hours. About 15 minutes before serving, stir in the sugar. Serve hot.

4 x 400g cans chopped tomatoes
6 tbsp tomato purée

  • Heat the oil in a large pan and fry the bacon and mince in batches until browned. Add to your slow cooker.

1 tbsp dried oregano

3 Tablespoons Olive OIl
1 Medium Onion, Peeled & Diced Small
2 Carrots, Peeled, Trimmed & Diced Small
3 Cloves Garlic, Peeled & Minced
1 Cup Dry Red Wine
1 (28 Ounce) Can Chopped Tomatoes
1 Tablespoon Tomato Paste
1/4 Cup Chopped Fresh Parsley
1/8 Cup Chopped Fresh Basil
1 Teaspoon Dried Oregano
Salt & Pepper
1 Pound Pasta of Choice
Grated Pecorino Romano or Parmesan Cheese

Steps:

  • If cooking in a slow cooker, in a heavy skillet, heat the olive oil over medium heat and brown the ribs well on all sides.
  • Place the ribs in your slow cooker, and add the onions and carrots to the skillet and cook for 3 to 4 minutes or until they take on color.
  • Add the garlic, and cook until fragrant.
  • Add the red wine to the skillet, and stir well, scraping any browned bits off the bottom of the pan and cook for 3 to 4 minutes.
  • Pour the wine and carrots over the ribs, then also add the tomatoes, paste, parsley, basil, oregano, salt and pepper.
  • Turn your slow cooker on low for 6 hours. (If the sauce begins to thicken too much, add a cup of water)
  • After 6 hours, use a fork to pull the meat off the bones of the ribs, break the meat up into small pieces, and discard the bones.
  • If cooking on the stovetop, use a Dutch oven instead of the skillet.
  • Brown the ribs, set aside and brown the vegetables.
  • Return the ribs to the pot, add the other ingredients and bring to a boil.
  • Reduce heat to a simmer and cook for 3 to 4 hours or until the meat begins to fall off the bones.
  • Remove the meat from the bones and stir into the sauce.
  • Cook the pasta until it is "al dente", then drain.
  • Add a scoop of sauce to the pasta and mix.
  • Serve the pasta in individual bowls topped with additional sauce and a sprinkling of chopped parsley.
  • Pass the cheese around the table.

  • Add the pancetta to the skillet and cook over moderate, stirring a few times until the fat has rendered, about 7 minutes. Add the onion, garlic and carrots and cook, stirring a few times, until softened, about 8 minutes. Add the red wine and stir to release any browned bits on the bottom of the skillet. Boil the wine over high heat until reduced by half, about 4 minutes. Add the tomatoes and their juices and the tomato puree and bring to a boil. Transfer the mixture to the slow cooker and add the thyme, rosemary and water.
  • Cover the slow cooker and cook on high for 2 hours. Transfer the sausages to a bowl and cover. Cook the sauce for about 2 hours longer, until the pork is very tender.
  • Transfer the pork to a bowl and shred coarsely with 2 forks. Coarsely break up the sausage. Return the meats to the cooker and simmer the sauce for 30 minutes longer. Discard the thyme and rosemary sprigs and season the sauce with salt and pepper.
