QUICK AND EASY MASHED SWEET POTATOES
This is my favorite quick and easy recipe. For more flavor, add maple syrup.

Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes; drain.
- Transfer potatoes to a large bowl; mash butter, garlic, basil, and thyme into the potatoes with a potato masher until smooth.

- If using fresh sweet potatoes, place in a large saucepan or Dutch oven; cover with water. Bring to a boil. Reduce heat; cover and cook 25-40 minutes or until tender. Drain; cool slightly and peel. Cut into chunks., Preheat oven to 350°. Place sweet potatoes in a 2-qt. baking dish. In a small saucepan, combine butter, syrup, brown sugar and cinnamon; bring to a boil, stirring constantly. Pour over potatoes. , Bake, uncovered, 30-40 minutes or until heated through.

Steps:
- Wash potato thoroughly; cut off any dark marks on the skin and cut about a quarter inch into it completely around it lengthwise.
- Microwave for approximately 10 minutes on high or until fork tender.
- Remove to a microwaveable dish, slice it in half through the cut made earlier, score the inside meat.
- Drizzle the honey over the inside, spread 1 teaspoon on each side and spread 1 teaspoon of butter on each side. Sprinkle with salt and pepper.
- Place back in microwave and cook for 30 seconds.
- Enjoy.

Steps:
- Scrub sweet potatoes clean under running water.
- Poke holes ( all over) in the potatoes with a fork.
- Bake at 350 degrees f for about 1 hour or until they are soft ( place potatoes directly on rack withour wrapping n foil).
- Put butter in dish on table.
- Put brown sugar in dish on table.
- Score the sweet potatoes down the middle.
- Serve to everone and have each person put butter and brown sugar ( to liking ) on the potato.
- Eat.
