SIMPLE MACARONI AND CHEESE
A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
- Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
- Fold macaroni into cheese sauce until coated.

EASY SHAKED-UP MACARONI AND CHEESE
If you are not a garlic-lover then you may omit, I like to add in a pinch or so of cayenne pepper also, for best flavor use a sharp cheddar cheese for this such as Kraft Cracker Barrel Sharp Cheddar Cheese and for a main meal add in 2 cups chopped cooked ham or cooked chicken.

Steps:
- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- Cook the macaroni in boiling water until al dente (do not cook until very soft) drain, then place into a bowl.
- Place the milk, flour, onion salt and garlic powder in a 1-quart jar; cover tightly and shake vigorously for 1 minute; pour the mixture over the macaroni and add in 3-1/2 cups shredded cheddar cheese; mix thoroughly to combine, then spread into the baking dish.
- Sprinkle with breadcrumbs then remaining 1 cup of cheddar cheese.
- Drizzle 1/4 cup melted butter or margarine over the top.
- Bake uncovered for 45 minutes or until golden brown.

SLIMMED DOWN MACARONI AND CHEESE

- Bring a large pot of cold water to a boil and salt it generously. Add the noodles, and cook, stirring occasionally, until al dente, about 8 to 10 minutes.
- Mix about 1 tablespoon of skim milk with the cornstarch and set aside. Heat the remaining skim milk in a saucepan over medium heat with the parsley, thyme, and bay leaf. When fragrant, whisk in the cornstarch mixture and bring to a boil over high heat, and simmer until the milk thickens. Remove the herbs and stir in the cheese, until melted. Whisk the butter, mustard, salt, nutmeg, and cayenne into the sauce.
- Drain the pasta and transfer to a large bowl. Toss with the cheese sauce and season with salt and black pepper. Serve.
KICKED UP MAC AND CHEESE
Steps:
- Preheat the oven to 350 degrees F. Grease a 9 by 9 by 2-inch square baking dish with the butter. In a mixing bowl, whisk the eggs and milk together. Season the mixture with salt and pepper. Add 1 cup of the Cheddar cheese, 1 cup of the White Cheddar cheese, the ham and the tater tots. Mix the mixture thoroughly. Pour the mixture into the prepared pan and sprinkle the top with the remaining cheese. Place in the oven and bake for 40 to 45 minutes or until the top is brown.

- Coat an 8x8-inch baking dish with cooking spray and set aside.
- Bring a large pot of lightly salted water to a boil. Cook whole wheat macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Stir 1 tablespoon evaporated milk and tapioca together in a saucepan. Whisk in remaining milk. Stir in Cheddar cheese, mustard, Worcestershire sauce, and pepper. Bring to a simmer and stir until the sauce thickens a bit and cheese is completely melted. Drain pasta and stir into the sauce. Spoon into the prepared baking dish.

"KICKED UP" MACARONI AND CHEESE
I have made this quite a few times, it is just delicious and a favourite with my family. This recipe makes quite a lot so make certain that you have a very large fry pan or use a Dutch oven. The complete recipe is made on top of the stove. Make certain to only cook pasta until just firm but a bit tender, as the pasta will cook more in the pan. All ingredients may be adjusted to suit taste. I have even added in some chopped cooked bacon...you will love this!

Steps:
- Cook the pasta from the Kraft dinner until firm-tender (do not over cook, leave firm!) drain and rinse under cold water, set aside the cheese packages and the cooked macaroni.
- In a large frypan or Dutch oven brown the ground beef with onion, garlic and celery until beef is no longer pink; drain fat.
- Add in the mushrooms and the cooked macaroni to the ground beef; mix to combine.
- In a bowl, mix together mushroom soup, tomato soup, HP steak sauce, Tabasco sauce (if using) green pepper, Parmesan cheese (if using) and the two packages of cheese mix; mix well to combine.
- Add the mixture to the ground beef in the pan and stir to combine.
- Simmer on medium heat for 10 minutes; reduce heat to low and simmer for 30-35 minutes, stirring occasionally, adding in milk to thin sauce (I use about 1/4-1/3 cup).
- Delicious!
