- Cut the potatoes in half lengthwise; cut each half lengthwise into three wedges. Place in a single layer on a greased baking sheet. Spread mayonnaise over cut sides of potatoes; sprinkle with seasoned salt. , Bake at 350° for 50-60 minutes or until tender.

- Preheat oven to 425 degrees.
- Slice your potatoes into chunks. I like to make them about 1/2 inch thick and 1 - 1 1/4 inches in diameter. This is quite a bit larger than I'd cut them for a hash. Place the sliced potatoes into a bowl and add all other ingredients. Stir to fully coat the potatoes.
- Spread coated potatoes in a single layer on a parchment paper lined baking sheet. Place in the oven. Roast for 20 minutes. Remove from oven and flip potatoes. Place back in the oven and roast for 5 to 10 more minutes (10 minutes is perfect in my oven).

- Peel and cube potatoes into bite size pieces (about 1" cubes).
- In a bowl, combine olive oil, black pepper, salt, garlic powder, and paprika. Add potatoes and toss or stir to coat. Pour potatoes onto parchment lined baking sheet and spread into a single layer.
- Roast potatoes in the oven for 30 to 35 minutes, or until potatoes are evenly browned and can be easily pierced through with a fork. Flip halfway through with a spatula to ensure even browning.

- Lined a rimmed baking sheet with aluminum foil and spray with cooking spray.
- Place potatoes in a large zip-top plastic bag.
- In a small bowl, whisk together OLD BAY seasoning and olive oil.

LOADED ROASTED POTATOES

- Preheat oven to 400°
- Lightly spray a 8x8 baking dish with a nonstick cooking spray.
- Place potatoes in baking dish and roast for 45-50 minutes or until potatoes are tender.
- While potatoes are roasting, add ground beef, onions and jalapeños to a large skillet or frying pan and cook over medium high heat until meat is no longer pink.
- Add garlic and cook for another minute or two. Drain and return to pan.
- Sprinkle taco seasoning over meat and add water and corn. Stir frequently and cook until hot.
- Remove potatoes from oven and spoon meat mixture over potatoes.
- Sprinkle both types of cheese over the top and bake until cheese has melted, about 5 minutes.
- Spoon into individual serving bowls and top with diced avocado, sour cream, cilantro, and green onions, if desired.

- Preheat the oven to 450ºF.
- Clean and cut the potatoes into 1/2"-1" cubes.
- In a large bowl, toss the potatoes with the oil and spices.
- Spray a shallow baking pan or cast iron pan with cooking spray or rub lightly with oil. Spread the potatoes in the bottom of the prepared baking pan. Try to have the potatoes in a single layer with space in between for the ultimate crispiness.
- Bake for 25 minutes, or until potatoes are tender. Stir the potatoes once after about 15 minutes of baking so they brown on all sides. Turn the broiler on low and broil the potatoes for about 5 minutes to brown them even more. This is optional, but it makes the potatoes crispy.
