1 ½ cups cooked fresh white acre peas (you can substitute a 15 oz can of drained and rinsed black-eyed peas)
15 ounces canned black beans (drained and rinsed)
1 ½ cups fresh tomatoes (finely chopped and drained, or a 15 oz can of drained and rinsed petite diced tomatoes )
1 ½ cups fresh corn kernels (or a 15 oz can of corn drained and rinsed)
½ cup Vidalia onion (finely diced)
1 medium red bell pepper (finely diced)
1 medium green bell pepper (finely diced)
1 medium yellow or orange bell pepper (finely diced)
2 jalapenos (seeds and ribs removed, finely diced, if you like heat include the seeds and ribs)
½ cup finely diced cilantro or parsley
1 avocado (seeded and chopped, *wait to add this until you are ready to serve)
4 tablespoons fresh lime juice
1 tablespoon red wine vinegar
2 cloves garlic (grated)
4 tablespoons extra virgin olive oil
1 teaspoon kosher salt (or to taste)
¼ teaspoon ground black pepper (or to taste)

Steps:

  • Add all dip ingredients except the avocado to a large colander to drain. When the mixture has finished draining, add all ingredients to a large bowl and mix to combine.
  • Combine the dressing ingredients in a mason jar and shake well. Add to the dip and mix well.
  • Just before serving, add the avocado, taste and add additional salt and pepper if needed, and combine. Serve cold or at room temperature.
  • Store this dish tightly covered in the refrigerator for up to four days. Leftovers are delicious and even better the next day. Do not freeze.

1 can corn (drained (15.25 ounces))
1 can black-eyed peas (rinsed and drained (15.5 ounces))
3 bell peppers (orange, red, yellow (chopped))
1 onion (chopped)
1/4 cup olive oil
1/4 cup granulated sugar
1/2 cup white vinegar

Steps:

  • Combined the beans, corn, peas, diced peppers and onions in a bowl.
  • In a small separate bowl, mix the oil, sugar and vinegar.
  • Pour the dressing over the bean mixture.
  • Refrigerate for at least an hour so the flavors get mixed well.
  • Serve with tortilla chips or on a salad.

Have fun with this dish. This is a great dish to experiment with, you can add or subtract ingredients to fit your personal taste. I have added black-eyed pea relish, jalapeños, and even pear relish on occasions, depending on my mood and what I had on hand. This is a fun dish and people of all ages love it.

2 (15 7/8 ounce) cans black-eyed peas, drained
2 (10 ounce) cans shoe peg corn or 2 (10 ounce) cans corn, drained
2 (10 ounce) cans Ro-Tel tomatoes, drained
1 (15 7/8 ounce) can black olives, chopped
1 green pepper, chopped really small
1 red pepper, chopped really small
1 (15 7/8 ounce) can black beans, drained
1 larger purple onion, chopped really small
3 ripe tomatoes, chopped small
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon cumin
1 teaspoon chili powder (optional, only if you want a bit of a kick to it)
1 teaspoon parsley flakes
16 ounces house Italian dressing or 16 ounces zesty Italian dressing

Steps:

  • Mix all ingredients together.
  • Refrigerate at least 8 hours before serving, so flavors can fuse (this is the key to this dish).
  • Serve with Tostitos Scoops or whatever chips you prefer.

1 can(s) black beans, drained and rinsed well
1 can(s) shoepeg corn, drained
1 can(s) diced tomatoes with jalapeno peppers (Rotel), drain some of juice off
1 can(s) diced tomatoes, drained
1 chopped bell pepper (1/2 green pepper and 1/2 red pepper is really pretty)
chopped onion to taste (you can used a few green onions and some sweet onion or you may like chopped red onion, whatever your preference
1 or 2 chopped jalapeno peppers, with insides removed (be careful they will cause skin to burn when removing insides)
chopped fresh cilantro, to taste, about 1/2 cup
sugar to taste, about 2-3 Tablespoons
1 bottle Zesty Italian dressing
1 tsp minced garlic

  • 1. Put beans, peas, and corn in container with tight fitting lid. Add tomatoes and Rotel. Chop and add rest of ingredients. Pour Italian dressing over, marinate a few hours or overnight. Keep refrigerated.
