Braised Red Cabbage With Apples image

This is an adaptation of a classic cabbage dish that I never tire of. The cabbage cooks for a long time, until it is very tender and sweet. I like to serve this with bulgur, or as a side dish with just about anything. You can halve the quantities if you don't want to make such a large amount.

1 large red cabbage, 2 to 2 1/2 pounds, quartered, cored and cut crosswise in thin strips
2 tablespoons canola oil
1 small onion, thinly sliced
2 tart apples, such as Braeburn or granny smith, peeled, cored and sliced
About 1/3 cup balsamic vinegar
1/4 teaspoon ground allspice
Salt
freshly ground pepper to taste

Steps:

  • Prepare the cabbage, and cover with cold water while you prepare the remaining ingredients. Heat the oil over medium heat in a large, lidded skillet or casserole, and add the onion. Cook, stirring, until just about tender, about three minutes. Add 2 tablespoons of the balsamic vinegar and cook, stirring, until the mixture is golden, about three minutes, then add the apples and stir for two to three minutes.
  • Drain the cabbage and add to the pot. Toss to coat thoroughly, then stir in the allspice, another 2 tablespoons balsamic vinegar, and salt to taste. Toss together. Cover the pot, and cook over low heat for one hour, stirring from time to time. Add freshly ground pepper, taste and adjust salt, and add another tablespoon or two of balsamic vinegar as desired.

2 tablespoons white balsamic vinegar
2 tablespoons liquid honey
2 tablespoons rapeseed oil

Steps:

  • Combine red cabbage and salt in a bowl and knead with your hands for a few minutes until cabbage is soft. Mix in apples.
  • Whisk white balsamic vinegar and honey together in a cup. Whisk in oil. Drizzle over salad, mix well, and set aside for at least 1 hour for flavors to combine.

1/4 cup butter
1 medium head red cabbage (2 pounds) , shredded
2 medium tart apples, peeled and chopped
1 cup apple cider or apple juice
1/4 cup packed brown sugar
2 tablespoons cider vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
2 bacon strips, cooked and crumbled
Minced fresh parsley, optional

Steps:

  • In a large skillet, saute onion in butter until golden and tender. Add the cabbage, apples, cider, sugar, vinegar, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for about 1 hour or until cabbage and apples are tender and the liquid is reduced. Sprinkle with bacon and parsley if desired.

Quick Stir-fried Spiced Red Cabbage with Apples image

Red cabbage is wonderfully versatile - you can cook it long and slow and it seems to go on improving, or in the recipe below the opposite: fast cooking to retain some crunchiness and bite. Either way the apples and spices are essential. If you want to make this in advance it's one vegetable that doesn't mind being re-heated.

8 oz (225 g) red cabbage
1 level teaspoon brown sugar
1 tablespoon red wine vinegar
salt and freshly milled black pepper
1 medium Cox's apple, cored but not peeled
1 oz (25 g) butter
2 teaspoons oil
1 small onion, chopped
2 cloves garlic, chopped
¼ level teaspoon ground cloves
¼ level teaspoon ground cinnamon
a few gratings of whole nutmeg

Steps:

  • First you need to shred the cabbage quite finely into ¼ inch (5 mm) shreds, discarding any tough stalky bits (including the root). Chop the apple quite small too but leave the skin on (it improves the flavour). Now in the large, heavy-based frying pan melt the butter and oil over a medium heat, then stir in the onion and cook it for 2-3 minutes before adding the apple and garlic. Continue to cook for 2-3 minutes, then turn the heat up to high, add the cabbage and stir-fry it by keeping it on the move with a wooden spoon, so that it all comes into contact with the heat at the base of the pan. After 5 minutes or so it should have shrunk a bit, so at this point sprinkle in the spices and a seasoning of salt and pepper, then turn the heat down and let it go on cooking for a further 10 minutes, stirring it once or twice during that time. Bite a piece to see if it's tender and when it's ready, turn the heat up again, sprinkle in the sugar and vinegar. Stir everything thoroughly, then serve. Braised red cabbage goes with almost any winter dish. It takes minutes to prepare, then two hours of gentle cooking - you need do nothing except have a glass of wine and relax.

50g/2oz butter
1 medium onion, finely sliced
2 dessert apples, peeled, cored and sliced
1kg/2¼lb red cabbage, finely sliced
100g/4oz sultanas or raisins
200ml/7fl oz sherry vinegar
salt and freshly ground pepper

Steps:

  • Melt the butter in a stainless steel or flameproof casserole over a medium heat (an aluminium pan will not work for this).
  • Fry the onion in the butter for three minutes, then add the apple and cabbage.
  • Cook for five minutes or so, until softened, then add the sultanas and the sherry vinegar.
  • Place a lid on the pan and cook for one hour, until all the vegetables are just tender.
  • Season to taste with salt and freshly ground black pepper and replace the lid. Continue to cook until the cabbage is tender and all the liquid has evaporated. This dish will keep for several days, covered, in the fridge. Simply heat it up again when ready to serve.
