2 pounds pumpkin, peeled and cubed
4 cups chicken broth, divided
1 teaspoon sugar, or more to taste
salt and freshly ground black pepper to taste
1 (5.3 ounce) container Greek yogurt

Steps:

  • Combine pumpkin and 1/3 of the chicken broth in a deep pan over medium-low heat. Simmer, covered, until pumpkin is soft, about 15 minutes.
  • Remove from heat and puree with an immersion blender. Add remaining chicken broth, sugar, salt, and pepper. Cook until flavors combine, about 5 minutes.
  • Ladle into bowls and serve with a dollop of Greek yogurt.

A quick, healthy breakfast, these easy pumpkin parfaits are a favorite for mornings that are short on time.

2 cups vanilla greek yogurt (divided in half)
2 Tablespoons of pumpkin puree (not pie filling!)
1/2 teaspoon pumpkin pie spice (divided in half)
3/4 cup of crumbled graham crackers (oats, granola, etc.)

Steps:

  • In a small bowl, combine 1 cup of the vanilla greek yogurt with the pumpkin puree and 1/4 teaspoon of the pumpkin pie spice.
  • In another small bowl, combine the remaining 1 cup of vanilla greek yogurt with the other 1/4 teaspoon of the pumpkin spice.
  • To serve, in a small glass, layer the vanilla yogurt, then the graham crackers (or whatever you decided to use) then the pumpkin yogurt, then another layer of the graham crackers and then top both glasses with remaining vanilla yogurt.
  • Depending on the size of the glass used, you could maybe get three out of this.
  • Goes great paired with some fresh cut up banana slices.

EASY PUMPKIN PIE CAKE WITH GREEK YOGURT



Easy Pumpkin Pie Cake with Greek Yogurt image

1 16 oz can of pumpkin puree (not pumpkin pie filling!)
2 teaspoons of ground ginger
1 teaspoon of cinnamon
1/2 teaspoon of ground nutmeg
1/4 teaspoon of ground cloves
1 cup of plain Greek yogurt
3/4 cup of sugar
2 eggs
1 1/2 sticks of unsalted butter, melted
1 box of yellow cake mix

Steps:

  • Preheat the oven to 350 degrees Fahrenheit and lightly grease a 13 x 9 glass baking pan with butter.
  • Combine the pumpkin and spices in a saucepan and cook over medium heat, stirring occasionally, until the mixture transforms from a bright orange, canned smelling mixture to a deep orange, savory and aromatic mixture you just can't wait to eat. This takes 5-10 minutes.
  • Off the heat, whisk in the Greek yogurt.
  • Once the Greek yogurt is fully incorporated, whisk in the sugar.
  • Beat the two eggs together and then whisk them into the pumpkin mixture.
  • Pour the pumpkin into the baking dish and spread it evenly, if needed.
  • Cut the corner of the cake mix pouch and spread it, as evenly as possible, over the pumpkin.
  • Pour or spoon the melter butter over the cake mix. It will probably pool up, so use the back of a spoon or a spatula to spread it as evenly as possible.
  • Bake on the middle rack in the preheated oven for 40-50 minutes, or until the top is browned.
  • Allow the pumpkin pie cake to cool for at least two hours (if you can stand the wait!) before cutting in to ensure it holds together when served.

I have started reading SuperFoods RX by Steven Pratt (which I highly recommend) and am learning about all of the nutritional benefits pumpkin has to offer. The challenge is that I am used to eating pumpkin in nothing but pies/cookies/sweet breads etc. I decided to try a pumpkin yogurt because yogurt is also one of Pratt's 14 super foods.
