1 cup all-purpose flour
1/2 cup uncooked old-fashioned oats
1/2 cup firmly packed brown sugar
1/2 cup Land O Lakes® Butter softened
Filling
3/4 cup sugar
1 (15-ounce) can pumpkin
1 (12-ounce) can evaporated milk
2 large Land O Lakes® Eggs
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
Topping
1/2 cup firmly packed brown sugar
1/2 cup chopped pecans
Garnish
Land O Lakes® Heavy Whipping Cream sweetened, whipped, if desired

Steps:

  • Heat oven to 350°F.
  • Combine all crust ingredients in small bowl. Beat at low speed until mixture resembles coarse crumbs. Press onto bottom of ungreased 13x9-inch baking pan. Bake 15 minutes.
  • Meanwhile, combine all filling ingredients in large bowl. Beat at medium speed until smooth; pour over crust. Continue baking 20 minutes.
  • Stir together 1/2 cup brown sugar and pecans in small bowl; sprinkle over filling. Continue baking 15-25 minutes or until knife inserted in center comes out clean. Cool completely.
  • Store refrigerated. Garnish with sweetened whipped cream, if desired.

1/2 cup cold butter
1 egg
2 eggs
1 (29 ounce) can pumpkin (not pumpkin pie mix)
2/3 cup milk

1/2 teaspoon clove
1/2 teaspoon ginger
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/4 cup brown sugar, firmly packed

Steps:

  • Preheat the oven to 350 degrees.
  • CRUST: Empty cake mix into a bowl. Cut in 1/2 cup butter until mixture forms moist even crumbs. RESERVE ONE CUP MIXTURE. Add the egg to the remaining mixture and stir until crumbled together.
  • Spoon into a 9" x 13" greased pan and press lightly to form an even layer. Bake for 10 minutes and remove, but leave the oven on.
  • FILLING: Beat two eggs until foamy. Beat in pumpkin, milk, spices and 1/4 cup of brown sugar. Pour on top of baked layer. (It should be liquidy but don't worry - it will bake up fine.).
  • TOPPING: Combine reserved crumb mixture with 1/2 tsp cinnamon, 1/4 cup brown sugar and 1/4 cup butter. Sprinkle to form an even layer of crumbs on top of the pumpkin batter.
  • Bake until custard is slightly set in the center, about 30-40 minutes. Let cool completely.

1 and 1/2 cups (180g) graham cracker crumbs (about 12 full-sheet graham crackers)
1/2 cup (62g) chopped pecans
2 Tablespoons (25g) granulated sugar
5 Tablespoons (71g) unsalted butter, melted
1 can (15-ounce; 425g) pure pumpkin*
1 cup (200g) light or dark brown sugar
2 large eggs
1 and 1/2 cups (360ml) heavy cream
1 teaspoon pure vanilla extract
1 Tablespoon cornstarch
1 and 1/2 teaspoons pumpkin pie spice*
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon fresh ground pepper
optional for topping: whipped cream and chopped pecans

Steps:

  • Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper with enough overhang on the sides to easily remove the bars from the pan. Set aside.
  • Using a food processor, pulse the graham crackers (or crumbs) and pecans together into crumbs. A few larger pieces of nuts is OK. Add the sugar and melted butter and pulse until combined. Press tightly into the bottom and up the sides of the prepared baking pan. Pre-bake crust for 12 minutes. Leave oven on.

Bars are best served chilled.
  • Top with whipped cream and chopped pecans, if desired. Cover and store leftovers in the refrigerator for up to 1 week.
