BAKED PEAR PUDDING

I have not made this but thought it looked interesting (for those of us that like pears that is). It is from our local TV guide from a column called the Chopping Block by Philomena Corradeno

1 (15 ounce) can pears in light syrup
1 cup biscuit mix
1/4 cup chopped nuts (walnuts, pecans or almonds)
1/4 teaspoon cinnamon
1/2 cup brown sugar
2 tablespoons butter
1 teaspoon lemon, zest of
2 tablespoons fresh lemon juice

Steps:

  • Drain and chop the pears, 1/2" chunks, reserve 1 cup of syrup.
  • Toss together the nuts, cinnamon, pears& biscuit mix.
  • Place this mixture in a shallow baking dish.
  • in a saucepan combine the pear syrup, brown sugar& butter.
  • Heat to boiling, add lemon zest and lemon juice.
  • Pour over the pears in the baking dish.
  • Bake in 375F oven for 30 minutes serve warm.

1 cup flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 pinch ground cloves
1/2 cup milk
4 medium pears, peeled and cut into 1/2 inch cubes
1/2 cup chopped pecans
3/4 cup brown sugar
1/4 cup butter
3/4 cup boiling water
vanilla ice cream (optional)

Steps:

  • In a mixing bowl, combine the first six ingredients; beat in milk until smooth. Stir in pears and pecans. Spoon into an ungreased 2 quart baking dish.
  • In another bowl, combine brown sugar, butter and water; pour over batter.
  • Bake, uncovered, at 375 for 45-50 minutes.
  • Serve warm with ice cream.

a friend gave me this recipe..she says it is wonderful..have not had a chance to try it myself..but looking forward to..Be sure to get the pudding that needs to be cooked, not instant

3 ounces butterscotch pudding mix
1 cup granulated sugar
1/2 cup brown sugar
1/2 cup evaporated milk
1 tablespoon butter
1 1/2 cups pecan halves

Steps:

  • Mix butterscotch pudding (not instant) sugar, brown sugar, milk and butter in a heavy 1 1/2 quart pan.
  • Cook and stir to a full all over boil.
  • Then boil slowly 3-5 minutes.until mixture reaches soft ball stage.
  • Remove from heat.stir in pecans.beat until mixture begins to thicken, but still looks shiny.
  • Drop tblsful of mixture onto waxed paper to form 3" pralines.
  • If mixture thickens and starts to loose its shine, add a few drops of milk before dropping more.
  • Let pralines stand till firm.

STICKY PEAR PUDDING

A warming dessert, just right for a cold winter's night. Now this is comfort food, a combination of Sticky Date and Golden Syprup pudding with a layer of cooked pears. Served with whipped cream this is just divine! The hardest part is finding just the right pan to cook it in!

4 large ripe pears, peeled, halved and cored
125 g plain flour
2 teaspoons baking powder
125 g caster sugar
1 medium egg
200 ml milk
75 g butter, melted
100 g light brown sugar
3 tablespoons golden syrup
175 ml cold water

Steps:

  • Set oven to 180°C.
  • With butter grease a 1.25-1.5 litre ovenproof dish, and arrange the pear halves, cut side up, in the dish.
  • Sift the flour and baking powder into a bowl, stir in the sugar.
  • Beat the egg into the milk, then beat egg mixture into the butter.
  • Pour batter into the dry ingredients and whisk well with beater until smooth then pour batter over the pears and set aside.
  • To make the sticky topping: Put the brown sugar and syrup into a small saucepan with 175ml cold water.
  • Warm through over a medium heat, stirring until the sugar dissolves then
  • increase the heat and bring to the boil without stirring. Take off the heat and immediately pour the sauce over the unbaked pudding.
  • Sit buttered ovenproof dish in a baking tray half filled with water and bake for 45 minutes until the sponge is golden and sticky on top.
  • Leave for 5 minutes before serving with cream.
