Steps:
- In a large skillet or a pot heat a Tbsp of olive oil at medium to medium high temperature. Add the pork and the black pepper. Stir for 2-3 minutes, to prevent from sticking to the pot or burning. Once the meat has turned color, add the sauerkraut and some of the juices. The juices shouldn't cover the pork and sauerkraut completely - but to around 2/3 (you can also use water instead). Stir in the paprika and optionally crushed red pepper and spices of choice. Once the dish has started to boil, reduce the heat and cook for 15-20 more minutes or until the pork is done and the sauerkraut juice is almost evaporated. At any point - add water if needed. At the end - give the sauerkraut a good stir and add the rest of the olive oil. Turn the heat off and serve like this or with some bread.
REALLY EASY PORK AND SAUERKRAUT BAKE
I threw this together when I was really craving kraut. It can be really hard to get good kraut in the UK but as I grew up Pennsylvania Dutch sometimes it is hard to ignore the calling of the kraut juice in my veins. This is really easy and reminds me of when my mother would slow cook pork and kraut for New Year's Eve. Using the lean pork steaks actually makes this pretty low fat. It goes well with mashed potatoes.

Steps:
- Preheat oven to 350°F.
- Put the lean pork steaks (I try to make them fairly thin steaks as this is a quick recipe) in the bottom of an oven proof dish.
- Lay the sliced mushrooms over the top of the steaks and then top with the sauerkraut.
- Pour the water into the dish and then put the dish into the oven and cook for between 30 to 40 minutes depending on the thickness of your pork.

Steps:
- Peel and dice the potatoes, apple, and onion, if using. Set them aside.
- Preheat the oven to 350°F (176°C).
- While the oven preheats, pat the pork chops dry with a paper towel and season very lightly with salt and pepper. Heat a large dutch oven on the stovetop over medium-high heat.
- Add the oil. Once the oil is shimmering (about 1 minute), add the pork chops. Brown on each side for about 3 minutes per side. They should easily release once they're ready to be flipped.
- Set the pork chops aside and add the saurkraut to the hot dutch oven. With a wooden spoon, gently scrape the bottom to deglaze it. Add the onion, potatoes and apples and then lay the pork chops on top. Sprinkle the caraway seeds.
- Cover and bake in the oven for one hour. Remove the dutch oven, allow to cool slightly, and serve!

PORK AND SAUERKRAUT
Eating sauerkraut on New Year's is an old Pennsylvania Dutch tradition, said to bring good luck. The traditional meal consists of pork and sauerkraut served together, with sauerkraut representing luck and the pig representing rooting into the New Year. It's a feel-good and flavorsome ritual and it may be just what you need to start the New Year. Serve with mashed potatoes or dumplings.

Steps:
- 1. In a large skillet over medium high heat, add ½ of the olive oil and let oil warm for about a minute. 2. Add half of the pork chops to the pan and season with a pinch of salt and a pinch of black pepper. Sear the chops for 2-3 minutes or until chops are golden brown on the bottom. 3. Turn pork chops over, season with a pinch of salt and a pinch of pepper and continue to cook another 2-3 minutes. 4. Remove pork chops and set aside on a plate. Repeat process with the remaining pork chops using the remainder of the olive oil, salt, and pepper. 5. Remove the second set of pork chops from the pan and place on the plate with the first set of pork chops. 6. Reduce heat to medium low and add can of sauerkraut to the pan; stir sauerkraut to get the fond from the chops off of the bottom of the pan (this will turn your sauerkraut a medium brown color). 7. Place the pork chops on top of the sauerkraut (including any juices collected on the plate from the chops). 8. Pour the water over the pork chops and then cover pan and cook an additional 30 minutes or until pork chops are fork tender.

EASY PORK AND SAUERKRAUT
This is a recipe that is similar to my Pennsylvania Dutch grandmother's but was modified by me. She used a pressure cooker but I prefer the crock pot. I always serve this with a side of mashed potatoes and applesauce to accompany it.
