1 package Pepperidge Farm® Puff Pastry Sheets
4 plums (large)
9 tbsp sugar
1 large egg
2 tbsp water

Steps:

  • Preheat oven to 400 F. Line 2 baking sheets with parchment paper.
  • Cut plums on half, remove the pits and thinly slice.
  • Thaw puff pastry, following the instructions on the package.
  • Dust the counter with some flour, unfold the puff pastry, roll slightly and cut each piece (there are 2 in a package) into 9 squares.
  • Mark another square, about 1/2 inch from the outside over the puff pastry, scoring a square border on the inside of the pastry. Using a fork, make some dots over the inside square. This is where the sliced plums will go, only covering the inside square.
  • Brush the outside border with egg wash. Egg Wash brings out our pastry's golden color even more!
  • Sprinkle each tart with sugar on top and bake for 15-18 minutes at 400 F.
  • Take out of the oven, let the pastry cool for 5 minutes and remove from the pan. Dust with powdered sugar (optional).

The Times published Marian Burros's recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. "To counter anticipated protests," Ms. Burros wrote a few years later, "the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping." It didn't help. The paper was flooded with angry letters. "The appearance of the recipe, like the torte itself, is bittersweet," wrote a reader in Tarrytown, N.Y. "Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it." We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

  • Heat oven to 350 degrees.
  • Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
  • Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
  • Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)

1/4 cup butter-flavored shortening
2 to 3 tablespoons cold water
FILLING:
2 cups fresh sliced plums (about 3 large)
3 tablespoons plus 1/4 teaspoon sugar, divided
1 tablespoon all-purpose flour
1 large egg, lightly beaten

Steps:

  • In a bowl, combine the flour, sugar and salt; cut in the shortening until crumbly. Gradually add water, tossing with a fork until a ball forms. Cover and refrigerate for at least 1-1/2 hours. , On a lightly floured surface, roll pastry into a 9-in. circle. Transfer to a foil-lined 15x10x1-in. baking pan., In a bowl, combine the plums, 3 tablespoons sugar and flour. Place in the center of pastry. Bring edges of pastry over filling, leaving 3-1/2 in. of filling uncovered. Brush pastry with egg white, then sprinkle with remaining sugar. , Bake at 375° for 40-45 minutes or until bubbly and crust is golden brown.

2 1/3 cups cake flour or 2 1/3 cups pastry flour
1/3 cup granulated sugar
1/2 lb unsalted butter, chilled, cut into small pieces
2 egg yolks
1 -2 tablespoon heavy cream
2 tablespoons unsalted butter
8 large ripe plums, halved, pitted, and cut into slices 1/4 inch thick
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon plum brandy (optional)
1 egg
powdered sugar

Steps:

  • First, make the Sugar Dough: In a food processor fitted with the stainless-steel blade, combine the flour and sugar. Add the butter and process until the texture resembles fine meal.
  • In a small bowl, whisk together the egg yolks and 1 Tbs. of the cream. Scrape into the processor and process until a ball begins to form, drizzling in the additional Tbs. of cream, if necessary, to help the dough come together.
  • Remove the dough from the machine and, on a lightly floured surface, press down into a circle. Wrap in plastic wrap and chill in the refrigerator for at least 1 hour. Before assembling the tart, preheat the oven to 350 degrees.
  • Remove the Sugar Dough from the refrigerator and unwrap it. On a lightly floured surface, use a rolling pin to roll out the dough to a rough circle 14 inches in diameter. Lift up the dough and transfer it to a nonstick baking sheet. Put the baking sheet in the refrigerator while you prepare the plums.
  • In a large sauté pan over medium heat, melt the butter. Add the plums and sauté just until they begin to soften slightly, about 3 minutes. Gently stir in the sugar and lemon juice.
  • Remove from the heat and, if you like, drizzle in the plum brandy. Let the mixture cool to room temperature. Remove the dough from the refrigerator. Spoon the cooled plums into the center of the dough, spreading them evenly and leaving a 2-inch border all around the edge. Fold the edge up over the plums, leaving the fruit in the center of the tart exposed.
  • In a small bowl, lightly beat the egg. Brush the exposed rim of dough with the egg. Bake until the crust is golden brown, about 30 minutes. Remove from the oven and sprinkle with powdered sugar. Serve warm or at room temperature, cut into wedges.

Crust:
2 cups/250g all purpose flour
9 tablespoons/125 g unsalted butter(cold)
1/2 cup/100g granulated sugar
1/4 teaspoon/2 g salt
Zest from 1 lemon
1 teaspoon vanilla extract
1 large egg
2-3 Tablespoons/30-45ml water or milk
Plums layer:
1 1/2 pounds/600g plums
1/4 cup/30g ground walnuts
Custard:
2 tablespoons/15g all purpose flour
2 tablespoons/20g/granulated sugar
1/4 teaspoon/2 g cinnamon
1/2 cup/100ml milk
1 large egg
4 tablespoons/50ml sour cream
2 tablespoons butter cut in small cubes(for the top of the tart)

Steps:

  • How To Make The Crust:
  • In a food processor: Mix flour, sugar and salt together and place in the food processor. Add cold butter cut into small cubes and pulse a few times until you obtain a mixture that resembles sand or bread crumbs. Do not overmix. Add lemon zest, vanilla extract, the egg and water, one tablespoon at a time pulsing a few times until the mixture holds together.
  • By hand: Mix flour, sugar and salt together, then cut the cold butter into small cubes and add it to the flour. Use a pastry tool to incorporate the butter into the flour, or use your fingertips. You should have a mixture that resembles sand or bread crumbs. Add lemon zest, vanilla extract, the egg and water, one tablespoon at a time until the mixture holds together.
  • Make the dough into a disk, wrap it and place it in the refrigerator for an hour.
  • Preheat oven to 350F/180C.
  • How To Make The Plum Layer:
  • Slice the plums in half and remove the stone, then cut each half into 4-5 slices. If you can't remove the stone, just carefully cut around it.
  • Set aside.
  • How To Make The Custard:
  • Mix flour, sugar and cinnamon together in a bowl. Separately beat together the egg with milk and sour cream. Pour the liquid over the flour mixture and mix well. Set aside.

Mini Plum Tarts are so quick to make and utterly delicious. Flaky pastry is topped with a sweet cream cheese mixture and slices of fresh plums. These tarts are perfect for brunch, dessert or with a cup of coffee. This is a simple recipe that looks impressive!

2 sheets butter puff pastry - 22 ½ cm (9" square) (See Note 1)
170 g (6 oz) cream cheese - at room temperature
3 tbsp icing/powdered sugar (See Note 2)
1/2 tsp fine lemon zest
1 tsp vanilla extract
9 fresh plums (See Note 3)
1 egg - beaten
4 tbsp demerara sugar (See Note 2)

Steps:

  • Preheat the oven to 200 Degrees C (400F).Set the frozen pastry aside to thaw. Do not allow it to become too soft. Return it to the fridge to keep cool if necessary.
  • In a medium-sized bowl, place the cream cheese, icing/powdered sugar, lemon zest and vanilla extract. Using hand-held electric beaters or a stand mixer, beat until smooth and creamy. Set aside.
  • Halve the plums and remove the stone.Using a sharp knife, cut each plum half in thin slices about ½ cm (1/8"). Set aside.
  • Use a 7cm (2 ½") round cookie cutter to cut 9 circles out of each sheet of pastry.
  • Using a smaller cookie cutter, mark a circle about 1cm (¼") in from the edges of the pastry circles.
  • Use a fork to prick the pastry inside the smaller circle.
  • Dab about a teaspoon of the cream cheese mixture in the centre. Spread the filling inside the smaller circle of each pastry.
  • Arrange the slices of plum on top of the cream cheese mixture.
  • Brush the edges of the pastries with the beaten egg. Sprinkle the edges of each pastry with about a half teaspoon of demerara sugar.
  • Bake in the preheated oven for 10-15 minutes or until the edges of the pastry are a lovely golden brown.
  • Gently lift the pastries onto a cooling rack.Allow the pastry to cool a few minutes before serving. The plum will be very hot.The pastries are lovely served warm with our Vanilla Ice Cream.

1/2 recipe Rough Puff Pastry or 14 to 16 ounces store-bought frozen puff pastry, thawed
1 pound plums (about 5), pitted and cut into 1/2-inch wedges (3 cups)
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon fresh lemon juice
1/4 teaspoon kosher salt (we use Diamond Crystal)

Steps:

  • Preheat oven to 400°F. Line a 9 1/2-by-13 1/2-inch rimmed baking sheet (quarter sheet pan) with parchment, leaving a 2-inch over-hang on long sides.
  • On a lightly floured surface, roll out dough to an approximately 14 1/2-by-11 1/2-inch rectangle, about 1/4 inch thick. Trim edges so you're left with a 14-by-11-inch rectangle. Fit into sheet (dough should come all the way up sides without an overhang). Freeze 15 minutes.
  • Stir together fruit, sugar, cornstarch, lemon juice, and salt; arrange mixture in tart shell, in a single, slightly overlapping layer (if using a variety of colors of fruit, arrange by color if desired).
  • Bake 15 minutes, then reduce temperature to 375° and continue baking, rotating sheet twice, until fruit is bubbling and pastry is puffed and cooked through, 1 hour to 1 hour, 15 minutes (if pastry is browning too quickly, tent with foil; if middle puffs up during baking, remove sheet from oven, use scissors to snip a little hole in puffed-up spot, and return to oven).
  • Let cool completely in sheet on a wire rack. Use parchment overhangs to remove before cutting into pieces to serve. Tart can be stored at room temperature, covered loosely with foil, up to 1 day.

8 large Plums, raw

Steps:

  • Combine flour, sugar, and salt in a large bowl. Rub in cold butter cubes with your fingers until mixture looks like bread crumbs. Add water and egg yolk; knead into a ball. Wrap pastry in plastic wrap and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine softened butter and sugar in a large bowl and beat with an electric mixer until light and fluffy. Add egg and mix until well combined. Add ground almonds and beat frangipane until well combined.
  • Roll out chilled pastry dough and transfer to a 9-inch fluted tart tin; trim edges.

sheet frozen puff pastry (half of a 17.3-ounce package), thawed
All-purpose flour, for dusting
1/4 cup almonds, chopped
3/4 cup sugar, plus more for sprinkling
Juice of 1/2 lemon
2 pounds large plums, halved and pitted
6 tablespoons unsalted butter, diced
1 vanilla bean, split lengthwise and seeds scraped out
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F. Lay the pastry on a floured surface and cut in half. Sprinkle one piece with the almonds and some sugar; lay the other piece on top. Press together with a rolling pin to make a 6-by-14-inch rectangle. Score a 1-inch border with a knife. Pierce the middle with a fork and make small slits with a knife. Transfer to a baking sheet lined with parchment paper, brush with water and bake until golden, 20 to 25 minutes. Cool on a rack.
  • Stir 3/4 cup sugar, 2 tablespoons water and the lemon juice in a heavy pan. Cover and cook over medium-high heat just until the sugar melts. Uncover and cook, swirling the pan, until amber, about 5 minutes. Remove from the heat; add the plums, 3 tablespoons butter and the vanilla pod and seeds. Cook over low heat, tossing, until the plums are soft and the sauce thickens, about 20 minutes. Add the remaining 3 tablespoons butter and swirl to combine.
  • Transfer the crust to a platter. Top with the plums and half of the sauce. Serve with ice cream and the remaining sauce on the side.

3/4 cup light brown sugar, lightly packed
12 tablespoons cold unsalted butter (1 1/2 sticks), diced
1 egg yolk
2 pounds firm, ripe Italian prune plums, pitted and quartered lengthwise

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the flour, walnuts, and sugar in a large bowl. Add the butter and the egg yolk. Mix, either by hand or with an electric mixer, until crumbly.
  • Press 1 1/2 cups of the crumb mixture in an even layer into the bottom of a 9 1/2-inch springform or tart pan. Arrange the plums in the pan, skin side down, to form a flower pattern; begin at the outside and work your way in.
  • Sprinkle the rest of the crumb mixture evenly over the plums. Bake the tart for 40 to 50 minutes, or until it's lightly browned and the plum juices are bubbling. Remove from the oven and cool for 10 minutes. Remove from the pan and transfer the tart to a flat plate. Serve warm or at room temperature.

THE BEST PLUM AND ALMOND TART

We live in southern Turkey, where we get a plum glut every autumn. We also have a plentiful supply of almonds from the surrounding orchards. If you love Bakewell tart and you love plums, this is an absolute winner - it's like a very light, fruity version of the classic tart. I've yet to find someone who doesn't love it. Outside the plum season, you could make it with any fruit in season, or you could soak prunes or dried apricots in brandy or sherry overnight, before proceeding as below.

  • For the pastry. If using ready-made shortcrust, roll out as thinly as possible and line the tin. If making your own pastry, place flour and sugar in bowl of food processor, cut cold butter into small (1cm approx) cubes and add to dry ingredients. Process briefly until mix resembles breadcrumbs. Tip into bowl, add egg and cold water. Mix with knife until dough comes together. Knead very briefly just to bring mix to a smooth dough, wrap in cling film and refrigerate for at least 30 mins. (If you don't have a food processor, rub butter into flour until mix resembles breadcrumbs, then proceed as above).
  • Remove dough from fridge. If it feels very cold and solid, leave for 10 or 15 minutes at room temperature until it yields a little to your touch. Roll out pastry as thinly as possible and line prepared tin. Reserve excess pastry for another day (you can freeze it - remember to label it sugar dough, not plain!) then return pastry case to fridge for at least half an hour.
  • Halve and stone the plums.
  • Once pastry has rested for half an hour, pre-heat oven to 190C, remove pastry case from fridge and place plums, cut side up (or other fruit), and evenly distributed, inside pastry case. Mix all filling ingredients together, beat well and pour over plums. Sprinkle over some flaked almonds and a tablespoon of sugar.
  • Bake for approximately 35 minutes, turning if necessary, until the filling has risen above the plums and is a lovely deep golden brown. The flaked almonds should have slightly caramelised. If it looks a bit pale, leave for another five minutes and check again - it should be the colour of toffee.
