Steps:
- In a large serving bowl, combine the first seven ingredients. Add mushrooms and onion; toss to coat. Cover and refrigerate 8 hours or overnight. Sprinkle with red pepper before serving.

EASY PICKLED MUSHROOMS
This is a recipe I have made for years and it is as popular now as it was the first time I made it. Using canned mushrooms allows it to be made ahead and kept in the fridge.

Steps:
- Bring onion, vinegar, oil, sugar, and Dijon mustard to a boil in a saucepan. Add mushrooms and simmer until liquid is slightly reduced, 5 to 6 minutes. Transfer mixture to a covered container and chill. Drain before serving.

PICKLED MUSHROOMS

- Mix the salt and water, and pour brine over mushrooms. Let mushrooms sit in the refrigerator, covered for 24 hours.
- Remove mushrooms from brine, rinse, and then lay them out on paper towels to dry. In a saucepan, mix the vinegar with the remaining ingredients and bring to a boil.
- Place mushrooms in sterilized jar and cover with hot liquid. The mushrooms will be ready to eat in 1 week and will hold in cool place for up to 1 year. These are great for salads or as a garnish for meat dishes.
PICKLED CHANTERELLE MUSHROOMS
Steps:
- Gather the ingredients.
- Clean your chanterelle mushrooms. Ignore the warning you sometimes hear never to use water to clean mushrooms-it's fine to give chanterelles a gentle scrub in clean water to remove any dirt. Slice off any moldy or dark spots.
- Heat a large skillet over medium-low heat. Do not add any oil or butter. Add the mushrooms and cook, stirring frequently, until the chanterelles begin to release their juices. Because chanterelles are relatively dry mushrooms, this will only take about 5 minutes.
- Add 1 teaspoon of the salt. The salt will draw out any liquid left in the mushrooms. Once this starts to happen, add the remaining teaspoon of salt along with the vinegar, water, sugar, thyme, and spices to create the brine. Crank the heat up to high and wait just until the liquid comes to a boil. Give it a stir or two while it's coming to the boil.
- Reduce the heat to medium-low and simmer for 5 minutes.
- Use a slotted spoon to transfer the chanterelles to a clean glass jar. Pour the brine over. Make sure the mushrooms are completely covered by the brine. Cover tightly.
- At this point you have two choices: you can simply transfer the jar to the refrigerator or you can process the jar in a boiling water bath.
- To process the jars, screw on the canning lid and process in a boiling water bath for 15 minutes (adjust the time if you are canning at high altitude ).

- Fill a large pot with water (enough to hold all of the mushrooms) and bring the water to a boil. Once the water is boiling, add the mushrooms and boil them for about 10 minutes, until they are cooked. When finished, drain the water away from the mushrooms.
- In a large jar, stuff the mushrooms. You can add garlic cloves, onion, and thyme amongst the mushrooms for flavor!
