2 cups fresh basil + leafy greens {i.e. spinach (kale, chard, etc})
1/2 cup extra virgin olive oil
1/4 cup grated Parmesan cheese {omit for vegan version}
1/4 cup pine nuts
3 cloves garlic {omit & add 1 tablespoon garlic oil for low FODMAP version}
1/4 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper (or to taste)

Steps:

  • Combine all the ingredients in a food processor with blade attachment. Process until blended. Scrape down sides, and process again until smooth, or desired consistency is achieved. Store in refrigerator, tightly covered, until ready to use, or for up to 3 days. Or, freeze in ice cube trays, and defrost as needed when ready to serve.

I use pre-made or prepared pesto. Pesto concentrate also works great. Very simple and really tasty sauce. Great over pasta, veggies, and chicken. Enjoy!

2 tablespoons butter
1 cup heavy whipping cream
1 tablespoon all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
3 tablespoons sour cream
3 tablespoons pesto, or more to taste

Steps:

  • Melt butter in a saucepan over medium heat. Stir in heavy cream. Add flour and mix well to remove clumps. Season with salt and pepper.
  • Stir sour cream and pesto into the saucepan. Reduce heat to medium-low; simmer, stirring, until flavors combine, 2 to 3 minutes more.

1/2 cup pine nuts or walnuts
4 cups loosely packed fresh basil or parsley leaves
1/2 cup finely grated parmesan cheese
1 garlic clove
Salt and Pepper for seasoning
1/2 cup extra virgin olive oil

Steps:

  • Preheat oven to 350 degrees. Spread 1/2 cup pine nuts or walnuts on a rimmed baking sheet; toast in oven until golden and fragrant, tossing occasionally, 5 to 8 minutes. Let cool completely.
  • In a food processor, combine toasted nuts, 4 cups loosely packed fresh basil or parsley leaves, 1/2 cup finely grated Parmesan cheese, and 1 garlic clove; season with salt and pepper. Process until finely chopped. With machine running, pour 1/2 cup extra-virgin olive oil in a steady stream through the feed tube; process until smooth.

Steps:

  • Toast the nuts in a pan over a low heat. Tip into a mini chopper with the remaining ingredients, or use a large pestle and mortar, then blitz or pound into a rough sauce. Will keep for three days in the fridge.

  • Put the parmesan cheese in the food processor and pulse until the cheese begins to look like small crumbs. Add the basil and parsley (if using), pine nuts, garlic, and salt and pepper to the food processor. Turn the food processor on medium setting until a green paste begins to form. Begin to drizzle the olive oil into the green paste while the food processor is on. Stop the food processor and use a rubber spatula to scrape any ingredients from the sides back down into the bowl. Pulse the food processor again until everything is incorporated. You can use immediately or freeze.
  • Freezer instructions: If you are planning to freeze your pesto, pour it straight from your food processor into clean ice cube trays. Cover and put into the freezer. When pesto is completely frozen, transfer the pesto cubes from the ice trays to a labeled and dated freezer bag. Next time you need a quick dinner, grab a few cubes of pesto and let them thaw!
