SALTINE CRACKER PUDDING
Comfort food at its best! Serve warm or cold, add raisins or dates, have fun with this easy and cozy recipe!

Steps:
- Beat egg yolks and sugar together in a bowl with an electric mixer until fluffy and pale yellow, 1 to 3 minutes. Heat milk in a large saucepan over medium heat, and whisk in the egg yolk mixture until smooth; boil for 1 minute. Mix in the coconut and cracker crumbs; bring to boil, reduce heat to low, and simmer the mixture until thick, about 5 minutes.
- Beat the egg whites in a glass or metal mixing bowl with an electric mixer until they hold stiff peaks; gently fold into the coconut mixture, and mix in the vanilla extract. Serve warm or cold. Refrigerate leftovers.

EASY PENNSYLVANIA DUTCH CRACKER PUDDING
This is one of my favorite puddings. The surprising mixture of the saltiness of the crackers mixed with the sweetness of the coconut is amazing. If you need to avoid salt, you could use graham crackers. Excellent with whipped cream and even better the next day. A lovely way to use up milk nearing its expiration date. Do *not* omit crackers as that is what thickens the pudding. Preparation time includes cooking time.

Steps:
- Bring milk to a simmer in a medium pan (do not boil).
- Mix crackers, sugar and coconut in a medium bowl.
- Stir cracker mixture into milk in the pan.
- Beat eggs in the medium bowl you just emptied.
- Stir a few spoonfuls of the hot pan mixture into the beaten egg.
- Now add egg mixture to pan and gently boil about 3 minutes, stirring constantly.
- Stir in vanilla.
- Chill and serve.

RITZ CRACKER PUDDING
This recipe is very easy to make. I came up with the recipe by experimenting. It only takes three steps to make.

Steps:
- Crush crackers into crumbs.
- Pour melted margarine into crumbs add sugar, and mix until moistened, save some for top of pudding just for garnish.
- Press into bottom of 9x13-inch pan.
- Mix pudding ingredients together with a mixer.
- Pour over crust.
- Top with Cool Whip and remaining crumbs.
- Refrigerate until firm.
- Serve.

- 1. In a saucepan gradually stir milk into egg yolks.Add 1/4 cup sugar. Cook and stir over medium heat till thick and bubbly. Remove from heat. Stir in crackers, coconut and vanilla. Pour into a 1 quart casserole dish. Beat egg whites till soft peaks form. Very gradually add 1/2 cup sugar, beat till stiff peaks form. Spread over hot pudding. Bake at 350 for 12 to 15 minutes. Serve and enjoy!

- In a medium sauce pan, add remaining 3 cups milk, butter and sugar. Whisk constantly over medium low heat until the mixture is scalding, not bubbling or boiling.
- Slowly whisk in milk/cornstarch/egg/salt mixture and cook over medium heat until thickened but do not boil.
- Remove the mixture from the heat, cover surface directly with plastic wrap which will prevent a skin from forming on the surface of the pudding mixture. Stir every 5 - 10 minutes. The mixture will continue to thicken slightly more as it cools.
