GRANDMA'S HOMEMADE GRANOLA
My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

- Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
- Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
- Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
- Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.

SALTED CARAMEL GRANOLA

Steps:
- Line a large baking sheet with parchment paper. Set aside. Preheat the oven to 300°F.
- In a large bowl, toss together the toasted oats, flax seeds, and almonds. Set aside.
- Add the water to a small saucepan. Pour the sugar into the center of the pan (in a pile so it doesn't touch the sides). Bring it to a boil and then reduce the heat just a little to medium high. Let the mixture cook. It will need to simmer for about 10 minutes until it turns a pretty amber caramel color. WATCH IT CLOSELY! It goes from perfect to burn pretty quickly.
- When the color looks right, place the pan in the sink. Add the milk or cream. The mixture will sizzle and bubble up. Stir quickly until it's smooth, then stir in the vanilla. Pour the caramel over the oats and almonds and toss to coat.
- Add the honey and oil to the same saucepan. Heat over medium until they blend. Scrape into the bowl.
- Use a spatula to turn the mixture over a few times. Scrape onto the prepared baking sheet in an even layer. Sprinkle with the sea salt.
- Bake for about 30 minutes. Let it cool completely. The granola will scrape off the parchment in oat clusters.
- Notes.
- To toast the oats, preheat the oven to 350°F. Scatter the oats evenly across the bottom of a 9 X 13 pan, and let them toast in the oven, stirring at least once, for about 15 minutes.

DANIEL FAST GRANOLA
Homemade granola for the Daniel fast. Can eat as a snack or as cereal.

- Preheat the oven to 200 degrees F (95 degrees C). Lightly grease a baking sheet.
- Mix pineapple juice and coconut oil together in a microwave-safe bowl or jar and melt in a microwave, about 1 minute. Add vanilla extract, cinnamon, and salt; stir.
- Pour rolled oats and sunflower seeds into a large bowl.
- Place dates and almonds into an electric blender with pineapple juice mixture. Pulse for about 15 seconds to combine. Pour into oat mixture and stir using a large spoon. Stir in quick-cooking oats. Pour onto the prepared baking sheet evenly.
- Bake in the preheated oven for 2 1/2 hours. Remove from the oven and add raisins and cranberries. Continue to bake until golden, about 30 minutes more. Let cool for 30 minutes before serving.

- Stir together the oats, brown sugar, and cinnamon in a wok or large skillet over high heat, cook 5 to 10 minutes; remove from heat and add the butter and caramel sauce; stir until evenly coated. Spread the mixture onto a flat platter or baking sheet in a thin layer. Sprinkle the white sugar over the granola. Allow to cool completely before serving.
