EASY TANGY PORK LOIN CHOPS
Surprisingly simple recipe. Do not use diet soda. Serve with au gratin potatoes and broccoli. My father-in-law use to cook this for us and we all loved it. Its unusual ingredients make very tender and delicious pork chops! My kids love it too!

EASY-PEASY PORK CHOPS WITH BROCCOLI ORZO
I first used the seasoning mix I made up for grilled chicken breast; it was so delicious, I decided to try it on the pork chops. I then thought up the orzo side dish, and it was loved by even my picky kids! You can also cook the chops on your outdoor grill.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 11 minutes. Drain.
- Combine sazon seasoning, Italian seasoning, salt, and black pepper together in a small bowl. Sprinkle mixture generously over both sides of pork chops.
- Heat a large grill pan over medium heat. Grill chops until no longer pink inside, about 4 minutes per side.
- While chops are grilling, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until crisp-tender, 2 to 4 minutes.
- Transfer cooked chops to a place. Heat olive oil in a saucepan over medium heat and cook onion until soft and translucent, 3 to 4 minutes. Reduce heat to medium-low and add garlic. Stir and cook without burning, 1 to 2 minutes more. Remove from heat.
- Stir cooked orzo and steamed broccoli into the saucepan with the onion mixture. Serve with pork chops.

Steps:
- Salt and pepper both sides of the pork chops.
- Combine beaten egg and milk in a shallow bowl big enough to dip pork chops in.
- Combine Italian Bread Crumbs and Parmesan cheese in a shallow bowl big enough to dip pork chops in. (I like to use a pie tin.)
- One at a time, dip a pork chop first in the egg wash and then in the bread crumb mixture. Place on a large cookie sheet sprayed with cooking spray and repeat until all pork chops have been breaded.
- Bake at 350 for 1 hour. If pork chops are extra-thick, you may need to increase cooking time. If they are thin, reduce cooking time to 30-40 min.

- Lay the pork chops on a plate and cover both sides with the marinade. (In an ideal world you would cover the plate with clingflim and leave to marinate for 30 minutes outside of the fridge so the flavours develop and the chops can come up to room temperature, but if time is short you can skip this step.)
- Heat up a griddle pan on a high heat for 2 minutes. (Use a large frying pan if you don’t have a griddle pan.)
- When the griddle pan is hot, put the pork chops into the pan and cook for 5 minutes on each side. Try not to move them about on the griddle pan and they will develop lovely char lines on each side.
