Steps:
- To a large bowl, add the melted butter, confectioners' sugar, graham cracker crumbs, peanut butter, vanilla, optional salt, and stir to combine. Depending on how dry your mixture is, you may not need to add the pecans, but play it by ear. If the mixture is on the wet side, definitely add them and/or add additional graham cracker crumbs.
- Using a 1-inch cookie scoop (highly recommended for ease and speed), scoop out approximately 48 equal-sized balls, and place them on a sheet of parchment paper on a baking sheet. Roll each between your palms to smooth them out and compact them.
- Set aside in the fridge while you chop and melt the chocolate. I place the chopped chocolate in a microwave-safe bowl and heat in 15 seconds bursts until it can be stirred smooth; use a double boiler if you prefer.
- Using two forks or a toothpick, dip each ball in chocolate, shaking off the excess, and place on the parchment. Repeat until all balls have been dipped.
- Evenly sprinkle the balls with sprinkles, to taste.
- Allow chocolate to set up at room temperature or place the baking sheet in the fridge to speed it up.

EASY PEANUT BUTTER GRAHAM BALLS
This recipe goes back a long time, it is easy to make and one of my son's favorites! Use only smooth peanut butter or the balls will not hold together, these are even great without the chocolate coating, plan ahead the peanut butter balls need to chill for a few hours before coating in chocolate, cooking time is chilling time.

Steps:
- In a bowl combine the peanut butter with confectioners sugar and graham crumbs until well combined.
- Add in the melted butter and mix thoroughly until combined (I find that using my hands for mixing works better than a spoon, if the mixture is not holding together add in a little more melted butter).
- Using hands shape into small balls (about 1-inch).
- Place the balls on a plate and refrigerate until completely cold (about 2 hours).
- After the balls have chilled I like to re-roll them again to make a perfect shaped ball but that is optional.
- In the microwave melt the chocolate with the shortening until smooth, removing once and stirring.
- Dip the COLD balls into the chocolate mixture to coat.
- Place on a baking sheet lined with parchment or waxed paper to set.

- In a large bowl, combine peanut butter, butter, vanilla and salt with an electric mixer until smooth.
- Gradually add the powdered sugar, mixing with an electric mixer until combined. It might be crumbly, but when you press it together it will form a smooth ball. If it is too sticky, add a little more sugar. If it is too dry, add a bit more peanut butter or butter.
- Roll into 1 inch balls (squeeze it first in your hands so it comes together) -- I get about 30 from this recipe. Refrigerate for 1 hour, or pop in the freezer for 15 minutes until chilled.
- Make a double boiler to melt your chocolate: place 1" of water in a small pot and bring it to a simmer over medium high heat.

- Combine peanut butter, butter, vanilla, and salt in a large bowl. Beat with an electric hand mixer until light and creamy. Add powdered sugar and mix on low until combined. May seem slightly dry and crumbly, but that's ok.
- Shape into 1-inch balls using a Tablespoon measure or mini cookie scoop (#50 or #60). Roll with hands until smooth and round. Place on a parchment lined baking sheet.
- CHILL for 1 hour in the refrigerator or 20-30 minutes in the freezer, until cold and firm. Do not leave in the freezer for too long or chocolate may crack after setting. Refrigerating is preferred.
- Melt the chocolate wafers. METHOD 1: Microwave melting wafers for short 30-second bursts, stirring between each interval. Repeat until smooth. METHOD 2: Use a double boiler by placing a heat-safe glass or metal bowl inside of a pot of water over medium-low heat on the stovetop. Do not allow the water to boil or touch the bottom of the bowl. Stir until melted. Then remove pot from heat and start dipping. (Return chocolate to microwave or stovetop if chocolate starts to get too thick while dipping.)
