My family actually calls this peach cobbler but the crispy shortbread-type crust makes it a crisp. Very good with ice cream or sprinkled with pecans before baking.

1 (29 ounce) can sliced peaches, drained
2 cups all-purpose flour
1 ½ cups white sugar
1 pinch salt
1 ½ teaspoons ground cinnamon
1 cup butter, chilled

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Layer the peaches in a 9x13 inch baking pan. In a large bowl, mix the flour, sugar, salt and cinnamon. Slice the butter into chunks and mix it into the dry ingredients until it looks like pea size crumbs. Sprinkle crumbs over peaches.
  • Bake for 30 to 40 minutes in the preheated oven, until lightly golden.

Fastest one pan, oven baked dessert I have ever made! Kids and adults alike will eat this cold or hot - just give 'em a spoon! (Or perhaps a scoop of vanilla ice cream on top too!). White cake mix can be used in place of yellow.

1 (29 ounce) can sliced peaches, with juice
1 (18.25 ounce) package yellow cake mix
½ cup margarine
1 cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour canned peaches into a 9x13 inch baking pan; make sure juices cover peaches, if not add a small amount of water to just cover fruit. Mix peaches with 1/2 cup of the sugar and sprinkle cinnamon to taste into mixture.
  • Sprinkle dry cake mix evenly over top of peach mixture. Poke holes into cake mix to allow juice through. Cut stick of margarine into small pats, placing randomly over the top. Sprinkle with the remaining 1/2 cup of sugar and a light dusting of cinnamon.
  • Bake in preheated oven for 25 to 30 minutes, or until the juice mixture is bubbly and the top of the cake mix topping is crusty and golden brown.

Steps:

1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 cup cold butter, cubed
FILLING:
2 cans (15-1/4 ounces each) sliced peaches
1 cup sugar
1/4 cup cornstarch
TOPPING:
1-1/2 cups old-fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
5 tablespoons cold butter, cubed

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, brown sugar and salt. Cut in butter until crumbly. Pat into a greased 9-in. square baking pan. Bake until lightly browned, about 15 minutes. , Meanwhile, drain the peaches and reserve juice in a small saucepan. Stir in the sugar and cornstarch until smooth. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove from the heat; stir in peaches. , Pour over crust. For topping, combine oats, brown sugar and flour. Cut in the butter until crumbly. Sprinkle over filling. Bake until golden brown and bubbly, 25-30 minutes.

2 21oz can(s) of your favorite canned fruit/pie filling
2/3 c all purpose flour
2/3 c oatmeal, uncooked
1/2 c brown sugar
1/2 c butter, cold
1/2 tsp cinnamon, ground
1/4 tsp nutmeg-optional
1/4 tsp salt

Steps:

  • 1. Preheat oven 375 degrees
  • 2. Prepare your choice of fruit mixture as indicated in ingredients list. Cover bottom of buttered cake pan with mixture.
  • 3. Combine flour, oats, brown sugar, cinnamon, nutmeg and salt together in bowl. Cut butter in dry ingredients until mixture is crumbly. Sprinkle topping over fruit and bake in a moderate oven. 3 pounds peaches (peeled, pitted, and cut into 8ths)
2/3 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
3/4 cup light brown sugar (packed)
3/4 cup all-purpose flour
2/3 cup old fashioned rolled oats
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon fine sea salt
1/2 cup cold unsalted butter (grated or small diced)

Steps:

  • Preheat the oven to 350°F. Grease a 9x9 baking dish with baking spray or butter, set aside.
  • Place the peaches in a large bowl and toss with the sugar until coated. Let the bowl sit at room temperature for 15 minutes.
  • While the peaches are resting, make the topping. In a medium-sized bowl, stir together the brown sugar, flour, oats, cinnamon, nutmeg, and salt until combined.
  • Add the butter to the small and toss with the flour mixture so the pieces of butter are coated.
  • Using your hands or a pastry cutter, work the mixture until it resembles wet clumpy sand. Any pieces of butter should be about the size of a pea or less. Place this in the fridge until you are ready to assemble the crisp.
  • Drain the peaches over a large bowl to catch the juice. Take ¼ cup of the juice and place it back in the original large bowl. Whisk the cornstarch, vanilla, cinnamon, and salt with the peach juice until smooth.
  • Add the peaches back in the bowl and toss with the sauce.
  • Pour the peach mixture into the prepared baking dish. Add the topping. Bake for 40-50 minutes until bubbly and golden brown on top. Let stand for at least 15 minutes before serving.
