PATE A CHOUX
Use this pate a choux recipe to make mouthwatering pastries such as profiteroles, cream puffs, and eclairs.

Steps:
- Bring butter, sugar, salt, and 1 cup water to a boil in a medium saucepan. Remove from heat. Using a wooden spoon, quickly stir in flour. Cook over medium-high heat, stirring constantly, until mixture pulls away from sides and a film forms on bottom of pan, about 3 minutes.
- Transfer to the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until slightly cooled, about 1 minute. Raise speed to medium; add whole eggs, 1 at a time, until a soft peak forms when batter is touched with your finger. If peak does not form, lightly beat remaining egg white, and mix it into batter a little at a time until it does.
PâTE à CHOUX RECIPE - BASIC RECIPE
Steps:
- Preheat oven 425F.
- In a medium pot, bring the water and butter to a simmer on medium heat. Add the flour and with a wooden spoon or spatula, stir very quickly in one direction. Carefully watch and you'll see that the flour starts absorbing the liquid -- and a dough will form. Keep stirring to continue cooking the flour and cook off some of the water, another minute or two.
- You can do the next step one of two ways:
- Transfer the paste to the bowl of a standing mixer fitted with the paddle attachment or to a bowl if you're using a hand mixer.
- If you want to mix the eggs directly into the dough in the pot, let it cool slightly, 4 or 5 minutes, or cool off the pan itself by running cold water over its base if you will be mixing the eggs in that pot. You don't want to cook the eggs too quickly.
- Add the salt and the eggs one at a time mixing rapidly until each is combined into the paste. The paste will go from shiny to slippery to sticky as the egg is incorporated. The pâte a choux can be cooked immediately at this point or refrigerated for up to a day until ready to use.
- Spoon the dough into a large gallon-sized plastic bag (or piping bag.) Use your hands to squeeze dough towards the bottom corner. With kitchen shears, snip off just the tippy tip of the bag, about 1/4" of the tip. Pipe onto a baking sheet into little puffs, keeping the puffs 2-inches apart. With your finger, press down the peaks (as they can burn.) Bake at 425F for 10 minutes, then 350F for 18-30 minutes, depending on the size of your puffs.

QUICK AND EASY CHICKEN LIVER PATE
A very easy pate that's big on taste as opposed to those that boil the livers. Great on crackers and especially in Beef Wellington!

Steps:
- Melt butter in heavy sillet over medium heat.
- Add cleaned chicken livers and saute until tender, about 6-8 minutes. Cut ino quarters and cool.
- Save pan drippings.
- In a blender or food processor, combine liver pieces with the reserved pan drippings, onion, salt and pepper.
- Blend well for about 20 seconds.
- Optional: Blend in the hard boiled egg for a richer pate.
- Enjoy!

- Wash and dry liver. Chop it and add to vegetables. Cook for about 5 minutes, until no longer pink.

- Put the crabmeat, celery and red pepper in a bowl.
- Add the Dijon mustard, lemon, a good pinch of salt and a grinding of black pepper.
- Stir lightly together.
- Add the mayonnaise, a bit at a time, just until the mixture clings together nicely.
- Taste for seasoning.
- Serve as desired as a paté, in canapés, salads and sandwiches garnished with a bit of parsley or paprika if liked.
EASY PATE

- In a bowl, mix liverwurst with cream cheese and butter until soft and fluffy.
- Fold in olives and garlic.
- Place into serving bowl and chill.
- Cut the vegetables into desired pieces: slice the carrots and zucchini on the diagonal; remove stems from the mushrooms and flute caps; cut tomatoes into wedges; chunk celery; separate broccoli or cauliflower flowerets.
- Wrap and chill vegetables.
- Serve pate with vegetables around it.

- Goat Cheese Trio: Cut a 12-ounce log of goat cheese crosswise into 3 mini logs. Roll 1 piece in chopped mixed herbs, another in cracked mixed peppercorns and the last in chopped dried cranberries and cashews.
- Cannellini Bruschetta: Combine 1 drained can cannellini beans, 1 cup chopped drained giardiniera (Italian pickled vegetables) plus a splash of brine from the jar, 1/4 cup diced provolone and 2 tablespoons each chopped parsley and olive oil.
- Spiced Olives: Heat 1/3 cup olive oil with 1 strip each lemon zest and orange zest, 1/4 teaspoon red pepper flakes and 1 smashed garlic clove. Stir in 1 cup mixed olives and a few thyme sprigs.
- Radish-Anchovy Canapes: Finely chop 1 to 2 rinsed anchovies, 2 tablespoons parsley and 1 teaspoon grated lemon zest; mix with 1 stick softened butter.
- Blue Cheese–Pecan Spread: Mix 1/2 cup soft blue cheese with 2 tablespoons chopped toasted pecans. Spread on celery sticks or crackers and drizzle with honey.
- Kale-Artichoke Dip: Thaw 1 1/2 cups frozen kale and 1/2 cup frozen artichoke hearts; squeeze dry, then roughly chop. Combine with 4 ounces softened cream cheese, 1/2 cup each shredded Swiss cheese and milk, 1/4 cup grated Parmesan, 1 minced small garlic clove, 1/2 teaspoon salt and a dash each of cayenne and Worcestershire sauce in a microwave-safe dish.
- Indian Yogurt Dip: Mix 1 cup Greek yogurt with 2 tablespoons each chopped cilantro and tomato, 1 tablespoon minced shallot, 1/2 teaspoon each grated ginger and garlic, and salt to taste.
- Cucumber-Caviar Rounds: Spoon dollops of crème fraîche onto cucumber rounds. Top each with a small spoonful of salmon or trout caviar.
- Pomegranate Guacamole: Cook 3 tablespoons pepitas (hulled green pumpkin seeds) in 1 tablespoon olive oil until toasted; season with salt. Mash 2 avocados with 1/2 cup chopped cilantro, 1/4 cup finely chopped onion, the juice of 1/2 lime, 1 finely chopped jalapeno and 1/4 teaspoon salt.
- Fried Ravioli: Fry uncooked small cheese or meat ravioli in 365 degrees F vegetable oil until golden, about 2 minutes. Drain on paper towels and sprinkle with salt and grated Parmesan.
