EASY CARBONARA
This easy pasta sauce will cook in about the same time it takes to cook some dried pasta in boiling salted water - we're talking about quick and easy options here. These amounts serve 2 but are easy to scale up or down. Remember you want about 75g of dried pasta per person - use whatever shape you've got. Or, check out my super-simple method for fresh pasta, using just flour and water.

Steps:
- Cook the pasta in a pan of boiling salted water according to the packet instructions.
- Slice the bacon and place in a non-stick frying pan on a medium heat with half a tablespoon of olive oil and a really good pinch of black pepper. Leave it to get super-golden and crispy, tossing occasionally, then turn off the heat.
- Meanwhile, beat the eggs in a bowl, then finely grate in the Parmesan and mix well.
- Use tongs to transfer your pasta straight into the pan and toss with the bacon.
- Pour the Parmesan eggs into the pan, and keep everything moving, loosening with splashes of the pasta cooking water until you have a silky sauce. Make sure the pan isn't too hot otherwise the eggs will scramble.
- Plate up the pasta, and finish with an extra grating of Parmesan.

WHITE SAUCE FOR PASTA
My husband lived in Italy for 3 years, so he's really picky about his Italian cuisine! I needed a great meal that was super-quick one night for his dinner; I had spicy battered shrimp on hand that I wanted to use and a couple choices of dried pasta. This sauce sounded perfect to tie it all together! Served over tortiglioni pasta with salad and toasted Italian bread. Just like I spent all day on dinner. It is really hard to mess-up this kind of white sauce. In my opinion, it was very much like an Alfredo sauce! Of course there is very little difference in the two sauces.

Steps:
- Crush the garlic with the flat side of a knife.
- Bring the extra virgin olive oil (and lard, if using) to medium high heat, then add the garlic and chopped parsley.
- After a minute, add the ground beef and break up with a wooden spoon. Add some salt, and cook until it begins to dry up, then add the tomato passata/purèe/chopped tomatoes of your choice.
- If using Mutti, they tend to be thick, so add about ¾ cup (6 oz) of water or until the bottom line of the jar (shake to rinse) then add to the pot. If you're using another brand, rinse the can/jar with a little less water, unless it's very thick.
- Put the burner on high to bring the sauce to a simmer, and add more salt. Don't be afraid to add Kosher/sea salt as I can guarantee you will have much less sodium in this sauce than a jar of store-bought.
- Lower the heat so that the sauce simmers gently for about an hour, stirring occassionally (so that the sauce won't stick). Taste for seasoning after about 30 minutes, and add salt if needed.
- When the sauce is ready, check once again for seasoning. Add salt and pepper as desired, and a generous amount of fresh basil, torn into pieces.

- Heat the olive oil over high heat until it shimmers. Saute the onions, stirring frequently, until they soften and shine, about three minutes. The onions should sizzle and hiss as they cook. Add the garlic. Stir to combine. This prevents the garlic from burning. Cook an additional two minutes. Add the basil, red pepper flakes, salt, and sugar. Stir to combine. Add the butter. Stir, cook for about a minute.
- Add 1/2 can of the crushed tomatoes. Scrape the bottom of the pan to remove any stuck on bits. Reduce heat to low. Add remaining tomatoes. Stir in 1/4 cup water. If the sauce seems too thick, add additional water.
- Allow sauce to simmer for 10 minutes to up to one hour. If simmering for a longer, stir the sauce occasionally and add additional water as needed to keep the sauce at the correct consistency.
HOW TO MAKE CHEESE SAUCE FOR PASTA WITH MILK - EASY
From food.onehowto.com
5/5 (5)Total Time 15 mins
- Making this easy and delicious cheese sauce only takes a few minutes. To begin, choose whatever cheese you like. You could have Cheddar served with nachos and homemade guacamole, or a blue cheese if you want to give your grilled meat a special taste. But today, we're going to make pasta, so the ideal cheeses to choose are Emmental, Guyère or Cheddar.
- Take your chosen cheese and grate it to make it easier to melt. Then melt the butter over a low heat in a pot. Once the butter has melted, add in 3 tablespoons of sifted flour and stir well to avoid lumps.
- Add salt and pepper to taste, and keep stirring over a low heat. Pour in the milk gradually, while stirring. Remember that if you use two cups of milk as suggested, your cheese sauce will be more runny, whereas if you use less milk, your sauce will be stronger and thicker. This texture is perfect for a cheddar cheese sauce, for example.
- Once the mixture is as thick as you want it to be, add in the grated cheese and stir until it has melted completely. Try it, and add salt and pepper if necessary. Turn off the heat when the cheese has fully melted. You see it's simple! With these simple steps you'll get a rich and easy cheese sauce for pasta with milk, ready to pour on your pasta dish. Why not give it a go?

- Once the spaghetti is cooked drain it while reserving about 1 tablespoons of the starchy pasta water. Add the spaghetti to the pan with the oil and garlic. Toss the pasta around until it’s coated (this is where you can add in the starchy pasta water to keep the pasta moist if it looks too dry).

- Marinara. A simple tomato sauce will never go out of style. A can or two of good tomatoes, a lot of garlic, and a bit of fresh herbs, simmered together until your kitchen smells like an Italian restaurant, is effortless comfort food at its very best.
- Ragù. Amp up that marinara sauce with ground meat and you’ve got a hearty ragù on your hands. The best meat sauces are simmered low and slow, so the juices from the meat have plenty of time to flavor the sauce.
- Pesto. The bright, fresh mix of basil, garlic, olive oil, nuts, and cheese is an easy favorite. Knowing how to make a straightforward basil pesto will not only give you a quick pasta sauce to add to your repertoire, but also have something to dress up pizza, swipe on sandwiches, and even add to chicken salad.
- Brown Butter. Brown butter is the one-ingredient pasta sauce that’s equal parts fast and fancy — it’s nutty, rich, and decadent. It comes together in minutes and makes just about any bowl of noodles feel a little fancy.
- Alfredo. It’s hard to deny the pleasure of this classic cream sauce bolstered with butter and Parmesan. Don’t save decadent Alfredo sauce for a night at your local Italian restaurant — it’s quite simple to make at home and can be enjoyed as is or with a topping of chicken.

- Spicy Pasta with Ground Beef and Tomatoes. This one-pot pasta with ground beef and tomatoes has a little kick thanks to Mexican or Cajun seasoning. Use elbow macaroni, penne, rigatoni, or your favorite small shaped pasta.
- Beef Lo Mein. Grab a wok, some flank steak, lo mein noodles, oyster and soy sauce, as well as some shredded veggies for a simple Chinese-inspired pasta dish.
- Instant Pot Chicken Alfredo. Use your Instant Pot to make creamy and comforting chicken Alfredo on a weeknight without cracking open a jarred sauce. Fettuccine or linguine noodles work well in this recipe, but we don't recommend thinner noodles like spaghetti, since they'll end up mushy.
- Chicken Cajun Pasta. Start with precooked chicken for this speedy Cajun pasta dish. Adjust the level of spice by using more or less cayenne pepper (or leaving it out entirely) and swap out the vegetables for your family's favorites.
- Stovetop Broccoli Mac and Cheese. Get some vegetables into the kids' diet with stovetop macaroni and cheese with broccoli that doesn't require turning on the oven.
- Hamburger and Pasta Skillet. For a zesty, flavorful and meaty weeknight supper, try this beef and pasta skillet. You can leave out the bacon if you like, and use plain diced tomatoes or chili-style for even more zip.
