QUICK AND EASY FRENCH TOAST
Wake up to an irresistibly delicious breakfast that's super quick and easy to whip up using a few basic ingredients you likely already have in your kitchen. This French toast recipe soaks thick slices of bread in a mixture of milk, vanilla extract, cinnamon, and an egg before tossing each slice in a frying pan. Fluffy and tender on the inside and perfectly golden-brown on the outside, making French toast is one of our favorite - and most indulgent! - breakfast dishes. You can use any bread you have left over from the week to make this breakfast treat, but we especially love the density of sourdough, challah and brioche French toast. Drizzle with maple syrup and customize with different toppings like strawberries, blueberries, and honey butter for a scrumptious breakfast that's perfect for Easter brunch. Steps:
- In a small mixing bowl, add the eggs, milk, salt and orange extract. Beat well with a fork or whisk.
- Stack your bread in the bowl. Coat both sides of each slice with the egg mixture, letting it soak in for a bit. (Using a spatula, you can take turns carefully transferring the bottom piece of bread to the top of the stack and keep going, then flip the bread and repeat.) If there is leftover egg mixture, pour some on each piece when you start cooking.
- Heat a skillet or griddle to medium high. (If using an electric skillet, set it to 375 degrees F.) Melt a tablespoon of butter in the pan and spread it around with a spatula to coat the pan. Cook 3-4 slices of French toast at a time, depending on what will fit. Start checking each piece after 3-4 minutes on the first side.
- Flip each slice when it is starting to brown. Add another 1/2 tablespoon of butter to the pan and use your spatula to disperse it so it flows underneath the bread. Continue cooking the French Toast on the second side, until it is browned to your liking.
- Serve the French toast with maple syrup and orange slices, if desired.

ORANGE TOAST
This is a very quick and easy snack or dessert. You may serve it with whipped cream cheese and grated orange rind on the top, but I prefer mine plain. This is a great finger food at parties!

Steps:
- Lay bread slices (crusts on) on cookie sheets.
- Mix all the other ingredients together and spread on each bread slice and spread thick. There shouldn't be any left over.
- Cut each slice in 3 pieces (If you try to do two slices, it doesn't bake up as nice. I use my pizza cutter to slice these instead of a knife. Whatever is easier for you).
- Bake at 250 degrees for 45 minutes to 1 hour.
- Makes approximately 75 pieces. Let cool completely and store in an air tight container.

- BATTER: To a shallow bowl or baking dish add cornstarch, then slowly add in dairy-free milk while whisking. Whisk fully to ensure there are no clumps. Then add maple syrup, vanilla extract, black salt (or sea salt), cinnamon, ripe mashed banana (adds custardy texture and subtle sweetness — leave out if you dislike banana), and turmeric (optional — for color). Whisk again to combine.
- DIP: In the meantime, add your bread slices to the batter and soak on each side for ~15-20 seconds. It shouldn’t be super soggy, but they should be well coated. Option to dust each side with a bit more cinnamon.
- COOK: Add a bit of vegan butter to the hot skillet and as many pieces of French toast as will fit comfortably. Cook for ~2 minutes, or until the underside is golden brown. Then flip with a fork or spatula and cook for 2 minutes more, or until both sides are golden brown and caramelized. Repeat as needed until all French toast is prepared.

- Soak the bread into the liquid batter for about 1-2 minutes on either side, or until the slices have soaked through.
- Melt a teaspoon of coconut oil or butter in a frying pan or skillet on medium heat. Cook the French toasts one by one for 2 minutes on either side, until they are golden and slightly crispy on the surface.
