Steps:
- In a large stock pot or dutch oven, melt the butter over medium-high heat. Add in the ground beef and use a wooden utensil to break the beef into crumbles. Cook until browned completely, about 6-7 minutes. Then season the beef with salt/pepper- to taste, and garlic powder.
- Next, add in the shallot, stir together, and continue cooking along with the beef for another 4-5 minutes.
- Add in the dried pasta and broth. Stir to fully incorporate and place a lid on the pot and allow the pasta to cook through, about 10-12 minutes or until pasta is fully cooked, al dente.
- Turn off the heat and pour in the cream and both cheeses, stir to fully combine. Let the pasta sit, covered, for at least 10 minutes to allow the sauce and flavors to meld. Then serve and enjoy!

Steps:
- Heat oil in a large pot over medium. Add garlic and onion - cook slowly for 3 to 4 minutes until onion is translucent and sweet.
- Turn heat up to medium high, add zucchini and capsicum. Cook 1 1/2 minutes.
- Add remaining ingredients EXCEPT pasta and broccoli. Stir until tomato paste dissolves.
- When liquid starts bubbling, lower heat to medium, add pasta and stir. Top with broccoli, push in.
- Place lid on and cook for 5 minutes.
- Remove lid. Cook for another 3 to 4 minutes, stirring frequently, until pasta is almost cooked through and most of the liquid has been absorbed by the pasta.
- Stir through half the cheese (if using). Adjust salt and pepper to taste.
- Top with remaining cheese, put lid on. Leave for 1 minute until cheese is melted and pasta is perfectly cooked.
- Garnish with parsley and serve immediately. Don't leave leftovers in the pot, residual heat will overcook the pasta so transfer into a serving dish.

- Green Oatmeal. I have to admit that the color of this might be a little off-putting. The good news is that the bright green finish is all-natural, coming from a whole bunch of fresh spinach, so at least you know it’s healthy!
- Creamy Vegan One-Pot Pasta. Full of spinach and roasted red peppers, this pasta is already super delicious. I do love a nice creamy sauce, which is why I tend to avoid vegan pasta dishes.
- One Pan Mexican Quinoa. This dish is great for a quick, warm, spicy dinner, or served cold for lunch the next day. You might as well make extra because you’ll want more than one serving!
- Black Beans and Brown Rice. This dish is vegan, gluten-free, and very hearty. Plus, if you buy dried beans and rice, it’s pretty darn cheap to boot. The recipe calls for fire-roasted tomatoes, which do make a difference, so I definitely recommend getting them if you can.
- One-Pot Summer Vegetable Skillet Lasagna. It might not be the traditional layered pasta casserole your grandma used to make, but this skillet lasagna has all the same great flavors – made in half the time!
- Sweet Potato Quinoa Skillet with Kale and Sage. The combination of sweet potato, quinoa, and kale makes this dish savory, sweet, and slightly nutty. Add in the sage, and you’ll have such an earthy and filling dinner.
- One-Pot Vegan Chili Mac. There’s no better way to bulk out a vegetarian meal than to add pasta, and who doesn’t love pasta? I’m a massive fan of vegan chili, especially when it’s brimming with corn, beans, tomatoes, and peppers.
- One-Pot Vegan White Bean Shakshuka. Shakshuka is a fabulous breakfast/brunch dish, full of runny egg yolks and an intense tomato sauce. With this version being vegan, you won’t see any eggs but rather a few dollops of vegan cream cheese.
- One-Pot French Lentil Soup. Lentils are loaded with protein, fiber, iron, B vitamins, magnesium, zinc, and potassium. Along with all that goodness, they’re super inexpensive, and a little certainly goes a long way.
- One-Pan Vegetarian Burrito Bowls. This can absolutely be made in one pan, but you need to be sure that your veggies will all cook in the same time – or add the softer ingredients towards the end.

- Add the sausage to a large skillet or braiser over medium heat and sear the sausage medallions on both sides, until they crisp up a bit, about 4 minutes total (see notes). Remove and set aside on a paper towel lined plate. Don’t get rid of that sausage oil!
- Add the mushrooms, peppers, and garlic to the same skillet you cooked the sausage in and sauté for about 3 minutes, or just until the mushrooms begin to brown.
- Next, add the pasta, fire-roasted tomatoes, chicken broth, and cajun seasoning to the skillet. Stir just until everything is evenly combined, then place a lid on top and allow the broth to come up to a boil.
- Once boiling, turn the heat down to medium and let the pasta simmer for roughly 12-15 minutes (see notes), stirring every couple of minutes until the pasta is tender and cooked al dente.
