This is a fun recipe for chicken in a gin and vermouth sauce with green olives.

2 tablespoons olive oil
4 skinless, boneless chicken breast halves
½ teaspoon salt
½ teaspoon ground black pepper
2 tablespoons butter
3 cloves garlic, chopped
¼ cup sliced pimento-stuffed green olives
¼ cup gin
1 tablespoon dry vermouth
1 teaspoon lemon juice

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper. Place chicken in the skillet and cook until browned, about 5 minutes per side.
  • Reduce heat to medium; add butter and garlic. Cook and stir mixture until garlic is fragrant, about 3 minutes. Mix olives, gin, vermouth, and lemon juice into chicken mixture; simmer until chicken is no longer pink in the center and sauce is thickened, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Super quick and super easy dinner that is extremely high in protein and very low in carbs and fat. I make this as a simple after-work/gym dinner with a green salad.

4 single chicken breast fillets, cut into thick strips
1 onion, thinly sliced
1 garlic clove, crushed
1/2 cup balsamic vinegar (plus 1 extra tbsp)
1/2 cup unpitted green olives
chopped flat leaf parsley, to garnish
salt and pepper

Steps:

  • To a non-stick frying pan add onion and garlic. Fry, adding a little water or oil if necessary, until softened.
  • Add chicken, olives and 1/2 cup vinegar. Cook, stirring, until chicken is done through and vinegar is caramelizing. Add the extra tablespoon of vinegar for the last 30 seconds of cooking.
  • Garnish, season and serve.
