This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite.

3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted

Steps:

  • In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

This is my favorite recipe for pancakes. Over time I tweaked a recipe I found, till i got it just right! It makes fluffy pancakes with that little bit of extra from the vanilla and cinnamon! These pancakes are especially good with your favorite berry syrup.

1 ¼ cups all-purpose flour
1 ½ tablespoons white sugar
1 tablespoon baking powder
1 tablespoon ground cinnamon
¾ teaspoon salt
1 ⅓ cups milk
1 egg, lightly beaten
3 tablespoons vegetable oil
¾ teaspoon vanilla extract
1 teaspoon vegetable oil, or as needed

Steps:

  • Whisk together flour, sugar, baking powder, cinnamon, and salt in a bowl. Whisk in the milk, egg, 3 tablespoons vegetable oil, and vanilla extract until only a few lumps remain. Let the batter stand for 5 full minutes for extra fluffiness.
  • Heat a skillet or griddle over medium heat, and brush with 1 teaspoon vegetable oil. When the oil shimmers, slowly pour about 1/4 cup of batter into the hot pan. Cook until bottom is browned, about 2 minutes, then flip and cook until the center of the pancake is set and the other side is browned, about 2 more minutes. Keep warm until serving.

Nothing says "weekend" like homemade pancakes for breakfast. Our easy recipe will help you whip them up in less than 30 minutes. Making pancake batter from scratch is so simple that you'll wonder why you never did it before!

1 cup all-purpose flour, (spooned and leveled)
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
2 tablespoons unsalted butter, melted, or vegetable oil
1 large egg
1 tablespoon vegetable oil
Assorted toppings, such as butter, maple syrup, confectioners' sugar, honey, jams, preserves, sweetened whipped cream, or chocolate syrup

Steps:

  • Preheat oven to 200 degrees; have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.
  • In a medium bowl, whisk together milk, butter (or oil), and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix; a few small lumps are fine).
  • Heat a large skillet (nonstick or cast-iron) or griddle over medium. Fold a sheet of paper towel in half, and moisten with oil; carefully rub skillet with oiled paper towel.
  • For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 2 to 3 in a large skillet).
  • Cook until surface of pancakes have some bubbles and a few have burst, 1 to 2 minutes. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes more. Transfer to a baking sheet or platter; cover loosely with aluminum foil, and keep warm in oven. Continue with more oil and remaining batter. (You'll have 12 to 15 pancakes.) Serve warm, with desired toppings.
  • BUTTERMILK: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with low-fat buttermilk.
  • YOGURT: In step 1, add 1/2 teaspoon baking soda to dry mixture. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.
  • WHOLE-GRAIN WITH YOGURT: In step 1, replace the all-purpose flour with 1/2 cup whole-wheat flour, 1/4 cup each cornmeal and wheat germ, and 1/2 teaspoon baking soda. In step 2, replace the milk with 2/3 cup plain low-fat yogurt and 1/3 cup milk.

300ml milk
1 tbsp sunflower or vegetable oil, plus a little extra for frying
lemon wedges to serve (optional)

Steps:

  • Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp sunflower or vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter.
  • Set aside for 30 mins to rest if you have time, or start cooking straight away.
  • Set a medium frying pan or crêpe pan over a medium heat and carefully wipe it with some oiled kitchen paper.
  • When hot, cook your pancakes for 1 min on each side until golden, keeping them warm in a low oven as you go.
  • Serve with lemon wedges and caster sugar, or your favourite filling. Once cold, you can layer the pancakes between baking parchment, then wrap in cling film and freeze for up to 2 months.

These are the best; we sometimes have them for supper too. They're fairly thick, but light and very tasty. The recipe makes lots, but my Norwegian background gives me a love for leftover pancakes spread with butter and brown sugar. Yum!

2 2/3 cups all-purpose flour
2 tablespoons baking powder
1/4 cup white sugar
4 eggs
2 1/2 cups milk, lowfat is fine
1/3 cup vegetable oil
1 teaspoon vanilla, optional

Steps:

  • You can do this the night before, or just before cooking: combine the dry ingredients in a large bowl.
  • If doing the night before, cover and leave on the counter.
  • You can also do this the night before, or just before cooking: in a small bowl, beat the eggs then stir in the milk and oil, and vanilla if using.
  • If doing this the night before, cover and store in the fridge.
  • When ready to cook, pour the liquid mixture (stir well again if taking it straight from the fridge) into the flour mixture; stir quickly with a fork until the ingredients are moistened but the batter is still lumpy.
  • Lightly grease a frying pan with a lid, like an electric frying pan.
  • Pour the batter on to the hot surface-- about a quarter of a cup for each pancake.
  • Cover and cook until the surface loses its wet look and bubbles have formed.
  • Flip the pancakes over and cook, uncovered, about two or three minutes longer, or until the underside is browned.
  • Keep warm in a low oven until all pancakes are cooked.
  • Makes approximately 24 pancakes; should serve four to six with leftovers; we love leftover pancakes at my house.
  • Best served with warmed real maple syrup, although I am also a big fan of blueberry syrup.

SUNDAY MORNING PANCAKES



Sunday Morning Pancakes image

Saturday or Sunday Morning Pancakes. Perfect for a weekend brunch or breakfast. This is my favourite recipe for pancakes.

3/4 cup milk
2 Tbsp white vinegar
1 cup all-purpose flour
2 Tbsp granulated sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 large egg

Steps:

  • In a medium bowl, combine the milk and the vinegar, and let stand for at least 5 minutes to "sour"
  • In a separate bowl, combine flour, sugar, baking powder, baking soda and salt in a large mixing bowl. Whisk egg into the "soured" milk. Pour the flour mixture into the wet ingredients, and whisk it together until the batter is smooth.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Flip and cook the other side until it is golden.

1 cup glutinous rice flour
2 tsp baking powder
½ tsp baking soda
¼ cup sugar
¼ tsp salt
2 eggs
1¼ - 1½ cups unsweetened soy milk (can also use unsweetened almond milk)
2 tbsp vegetable oil or olive oil
1 tsp vanilla extract

Steps:

  • Add both flours, baking powder, baking soda, sugar and salt into a mixing bowl and whisk until incorporated.
  • In a separate bowl mix together the eggs, 1¼ cup soy milk, oil and vanilla extract.
  • Pour the wet ingredients into the dry ingredients.
  • Stir until you have a smooth batter. Add additional ¼ cup soy milk if needed to thin the batter.
  • Drop a ¼ cup of batter into a greased and heated skillet.
  • Cook the pancakes until small bubbles appear. Flip and continue to cook for another minute until cooked through.
  • Repeat until all batter has been used. Batter makes 16 pancakes.
  • Serve pancakes with maple syrup and fresh berries.

  • Blend until its a slick mixture and add the flour (I use the machine because its pretty early in the morning.).
  • Add milk until homogeneity.
  • Put some butter on the frying pan and a few seconds later add the dough.
  • You can serve with hot chocolate, marmalade, cheese and any kind of sauce that you feel like adding!
