Moldovan Lazy Flatbreads with Kefir-Yogurt Dip image

These feta- and herb-packed flatbreads from Olia Hercules' Ukrainian cookbook Mamushka are a perfect springtime treat.

2/3 cup kefir, or watered down plain yogurt
3/4 teaspoon white vinegar
3/4 teaspoon granulated sugar
1/4 teaspoon fine sea salt
1 teaspoon sunflower oil (or organic canola), plus about 1/4 cup for frying
8 ounces feta cheese, crumbled
4 scallions, finely sliced
1/2 bunch dill, chopped
2 1/4 cups all-purpose flour, plus more for dusting
1 scant teaspoon baking soda
1/2 cup plain full fat yogurt
1/2 cup kefir
2 generous handfuls dill leaves, chopped
2 scallions, finely sliced
3/4 teaspoon ground sumac (*optional)
Pinch of sea salt

Steps:

  • In a large bowl, combine kefir, vinegar, sugar, salt and 1 teaspoon oil. Add the feta, scallions and dill, and mix well with a fork.
  • Sift in the flour and baking soda, and mix in with a fork. The dough should be soft yet dense, and a bit sticky.
  • Generously dust a work surface with flour and knead dough until it is homogeneous and holds together, about 1 minute. Divide dough into 6 pieces and roll into balls. Roll out each ball into a circle 6 inches in diameter.
  • In a large frying pan over a medium-low flame, heat up enough oil to cover the bottom. Fry breads one at a time, for three minutes per side, adding more oil if needed. Transfer breads to a paper-towel lined platter to drain excess fat before serving. Serve warm with yogurt dip (recipe below).
  • Leftover flatbreads can be kept wrapped in plastic wrap in the fridge up to 4 days. Reheat flatbreads in a skillet.
  • Combine all ingredients in a bowl and season to taste. Serve with warm flatbreads. Sauce will keep in the fridge up to 4 days.

STUFFED MOLDOVAN FLATBREADS WITH DILL AND SORRELL



Stuffed Moldovan Flatbreads with Dill and Sorrell image

Kefir, a traditional Russian fermented milk drink, adds tenderness to the dough for these flakey Moldovan flatbreads, stuffed with dill, scallions, and sorrel-the perfect starter for a large picnic or as an afternoon snack. If you don't have access to kefir, simply substitute 3/4 cup natural plain yogurt mixed with 1/4 cup water. This recipe comes from Ukraine-born chef Olia Hercules, author of "MAMUSHKA MAMYIIIKA: Recipes from Ukraine & Beyond" (Mitchell-Beazley, 2015).

1 cup kefir
1 cup plus 1 1/2 tbsp. vegetable oil
1 1⁄2 tsp. white wine vinegar
1 1⁄2 tsp. sugar
1⁄2 tsp. kosher salt, plus more to season
2 1⁄2 cups all-purpose flour, plus more for dusting
1 tsp. baking soda
1 bunch spring onions, roughly chopped
1 bunch dill, roughly chopped
1 bunch sorrel, roughly chopped
2 eggs
Freshly ground black pepper

Steps:

  • In a large bowl, combine the kefir with 1 1⁄2 teaspoons of the oil, the vinegar, sugar, and 1 1⁄2 teaspoons salt. Stir in the flour and baking soda, and knead until a smooth, soft dough forms. Divide dough into 4 balls and cover with a kitchen towel.
  • For the filling, in a medium bowl, stir the spring onions, dill, and sorrel with the eggs, salt, and pepper.
  • On a lightly floured work surface, work with one ball of dough at a time, and roll the dough into an 8-inch circle. Spread one-quarter of the filling in the middle of the circle and then fold in all sides to make a 4-inch square, sealing the dough where the edges meet. Roll the dough packet into a 6-inch square, and then fold each corner inward to meet in the middle of the square. Roll the dough into a 6-inch hexagon, and cover with a kitchen towel. Repeat rolling and filling the breads with the remaining dough balls and filling.
  • Heat the remaining 1 cup oil in a 12-inch skillet over medium heat. Working with one dough packet at a time, fry the bread, flipping once halfway through, until golden brown on the outside and an instant-read thermometer inserted in the middle of the bread reads 200°, about 6 minutes. Transfer the bread to a rack to drain and repeat frying to make remaining breads. Let cool for 5 minutes before serving.

Make our easiest ever flatbread recipe with just a handful of ingredients. They're perfect for mopping up a warming curry or saucy shakshuka

110g self-raising flour , plus extra for dusting
110g plain wholemeal flour or atta flour
3 tbsp rapeseed oil , plus extra for the bowl
small knob of butter , melted

Steps:

  • Sift the flours and 1 tsp salt into a large bowl. Add 1 tbsp of the oil and 150ml warm water. Bring together into a soft but not too sticky dough (you may need up to 175ml water). If it feels too wet, add some flour. If it's too dry, add water.
  • Tip onto a floured surface and knead for 4-5 mins, or until smooth. Put the dough in an oiled bowl, cover and leave for 30 mins.
  • Tip onto a floured surface. Divide into six balls and roll each out into a thin, 18-20cm wide circle using a rolling pin. If you prefer, you can divide again into twelve balls to make smaller flatbreads.
  • Brush a heavy-based pan with oil and cook one flatbread over a high heat for 1-2 mins on each side, or until golden and starting to puff. Put on a plate and brush with butter. Repeat with the rest of the dough.

Whip up these speedy flatbreads for an Indian-style feast. They're like a cheat's version of naan bread, and are great for mopping up a curry

300g self-raising flour, plus extra for dusting
½ tsp baking powder
150g natural yogurt
1 tbsp vegetable oil
melted ghee or butter, for brushing
cumin seeds, chopped garlic cloves, chopped coriander or chopped chillies (optional)

Steps:

  • Combine the flour, baking powder, yogurt and oil with 1 tsp salt and 2 tbsp water, and bring together into a rough dough. Tip onto a lightly floured surface and knead for a few minutes until slightly smooth, then divide into four to eight pieces, depending on the size of flatbread you want.
  • Heat a heavy-based frying pan over a high heat. To make basic flatbreads, roll the dough pieces out on a lightly floured surface into rough ovals, then fry for 1-2 mins on each side until golden and slightly charred in spots. Alternatively, roll the dough pieces out, brush with a little melted ghee or butter, and scatter over the cumin seeds, garlic, coriander or chillies, if you like. Fold each piece of dough over on itself, then roll out again into a rough oval and cook in the same way.
  • Brush the flatbreads with a little melted butter or ghee, then serve.

Easy Moldovan Flatbreads image

These easy Moldovan flatbreads are made by mixing the filling into the dough rather than stuffing it. My grandmother called them Frumentaty.

Yield Makes 6

Number Of Ingredients 10

150 ml (¼ pint) kefir or whey
¼ cup sunflower oil, plus ¾ tsp.
¼ Tbsp. white wine vinegar
¼ Tbsp. sugar
¼ tsp. fine sea salt
200 g (7 oz) feta cheese, crumbled
4 spring onions, finely sliced
½ small bunch of dill, chopped
350 g (11½ oz) all-purpose flour, plus an extra 100 g (3½ oz) for dusting
1 scant tsp. baking soda

Steps:

  • Mix the kefir or whey, the ¼ tablespoon of sunflower oil, vinegar, sugar and salt together in a large bowl. Add the feta, spring onions and dill and mix in well with a fork.
  • Sift the flour with the baking soda, then sift again into the kefir or whey mixture and mix in.
  • The dough should be soft and pillowy. If it's still a bit sticky, heavily flour your work surface and start kneading the dough and incorporating more flour. The dough will remain very slightly sticky from all the cheese.
  • Divide the dough into 6 pieces. Flour your work surface really well and roll each one out into a 15 cm (6 inch) diameter circle.
  • Heat the ¼ cup sunflower oil in a large frying pan and fry the breads, one at a time, for 3 minutes on each side, lowering the heat if you see them catching. Alternatively, brush the breads with oil or butter and cook them under your broiler.
