EASY HOMEMADE CHICKEN SALAD



Easy Homemade Chicken Salad image

I copied this down once while sitting in the waiting room for a doctor's appointment. (Goodness knows there's always time enough for copying recipes!) I think it came from "Child" magazine. I estimated number of servings.

Number Of Ingredients 9

1 1/2 cups chopped cooked chicken or 1 1/2 cups cooked turkey
1/2 cup sliced celery
1/2 cup thinly sliced green onion
1 tablespoon lemon juice
1/8 teaspoon pepper
1/3 cup mayonnaise
2 tablespoons sweet pickle relish or 2 tablespoons chopped green peppers
2 teaspoons prepared mustard
2 hard-boiled eggs, chopped

Steps:

  • In medium mixing bowl combine first three ingredients.
  • Stir in the lemon juice and pepper.
  • Combine the mayo, pickle relish and prepared mustard.
  • Add this sauce to chicken and gently stir in the eggs.
  • Cover and chill until ready to serve.

Daddy's Molded Salad image

Molded salad was my Dad's favorite but over the years I have forgotten this salad's name. Whatever it's name, everyone who tries it loves it!

1 (3 ounce) package lemon flavored Jell-O®
1 cup boiling water
1 cup mayonnaise
1 (16 ounce) package small curd cottage cheese
1 (15 ounce) can crushed pineapple, drained
¾ cup chopped walnuts
1 ½ cups miniature marshmallows
5 maraschino cherries, halved

Steps:

  • Grease or butter one 2 quart gelatin mold pan.
  • In a small saucepan, bring 1 cup of water to a boil; add gelatin and mix until dissolved. Remove from heat and let cool to room temperature. Stir in mayonnaise, cottage cheese, pineapples, walnuts and marshmallows.
  • Pour into molded pan and chill until firm. Remove onto serving dish and garnish with halved cherries.

Mom's Molded Salad Supreme family recipe is easy to make ahead. The texture and taste of this light yet flavorful sugar free jello salad is wonderful. Diabetic friendly!

2 small packages of lime jello sugar-free
2 cups of boiling water
1/2 can crushed pineapple, undrained
1/2 cup chopped pecans or walnuts
1/2 cup cottage cheese
1 cup mayonnaise
6 oz canned milk

Steps:

  • Dissolve gelatin in boiling water*Let it cool a bit, and add the mayonnaise.*Let it cool more, but not set. --This allows the mayonnaise to blend in evenly.
  • When the gelatin is cool, add the remaining ingredients.*Partially freeze the pineapple and pecans before adding to the gelatin to help keep the ingredients in suspension. (If they are added while everything is warm, the pineapple and pecans settle a bit.)
  • Pour into a mold or into a pretty bowl, and chill until set.Unmold onto a serving plate just prior to serving.
  • Serve with extra pecan pieces, if desired.
  • ** For a more "festive look" if molding the salad, add a few maraschino cherries to the bottom of the mold and freeze: then add the thick salad contents and when you unmold, the cherries provide a nice color contrast.

Easy Molded Chicken Salad image

This is a tasty Molded Chicken Salad. It is a culmination of a couple of recipes I found on the web. I don't have a jello mold so I use an 8x8" square Pyrex dish. The portions are quite thick. I am sure you can use a 9x13" baking instead if you want thinner portions.

Number Of Ingredients 7

2 envelopes knox unflavored gelatin
1/2 cup cold water
2 1/2 cups chicken broth (homemade or canned)
1 cup mayonnaise or 1 cup Miracle Whip
1 diced green bell pepper, or red bell pepper or a combination (appx 1 cup)
8 green onions, diced (appx 3/4 cup)
2 cups diced cooked chicken

Steps:

  • Put the diced bell peppers and green onions in the same bowl.
  • Chill in refrigarator until ready to use.
  • Pour the chicken broth into a saucepan and bring it to a boil
  • Meanwhile, pour the cold water into a large mixing bowl.
  • Sprinkle the Knox Gelatin into it, stirring as you add until well mixed
  • Pour the chicken broth into the gelatin mixture, using a wire whisk, until gelatin is completely dissolved.
  • Add the Mayonnaise or Miracle Whip using the wire whisk until well mixed and no lumps appear.
  • Add the bell pepper and green onion mixture and mix well.
  • Add the diced chicken and mix well.
  • Pour the mixture into desired baking dish or jello mold.
  • Cover with lid or plastic wrap.
  • Refrigerate for 4 hours or untl set.
  • If using a Jello mold, unmold it onto a plate.
  • For a nice touch. place some lettuce leaves on the plate before unmolding the jello salad.
  • If using a cake pan or pyrex dish, serve the jello salad from it.

MEXICAN STREET CORN-CHICKEN SALAD

Use leftover rotisserie chicken to make a delicious, easy salad featuring the flavors of Mexican street corn. As a side dish or a main course, this is perfect for summer or anytime. I serve it with homemade Mexican rice for a definite hit!

¼ cup crumbled cotija cheese
¼ bunch cilantro, finely chopped
1 clove garlic, minced
½ medium lime, juiced

½ teaspoon hot pepper sauce (such as Tapatio®)
¼ teaspoon ground cumin
salt and ground black pepper to taste
2 cups shredded cooked chicken
1 (15.25 ounce) can whole kernel corn, drained
1 (6 ounce) can sliced black olives
1 medium head butter lettuce, torn
1 medium avocado, sliced
2 tablespoons crumbled cotija cheese, or to taste
4 sprigs cilantro

Steps:

  • Whisk together mayonnaise, cotija cheese, cilantro, garlic, lime juice, chili powder, hot pepper sauce, and cumin for dressing in a large bowl. Season with salt and pepper.
  • Add chicken, corn, and olives to dressing and toss to coat.
  • Divide lettuce among 4 bowls and scoop chicken mixture over top. Garnish each salad with avocado slices, cotija cheese, and a cilantro sprig.
