EASY HOMEMADE GRANOLA
This Easy Homemade Granola is made with oats, nuts, fruit, coconut oil and sweetened with honey or maple syrup. It makes the perfect after school snack and works perfectly as granola cereal. You can also use it as a topping for yogurt, ice cream and more!

Steps:
- Preheat oven to 350F.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Combine the oats, shredded coconut, and almonds in a large bowl.
- In a small bowl, combine the honey, brown sugar, oil, cinnamon, and salt.
- Microwave on high heat for 30 seconds. Stir to combine.
- Add honey mixture to the oat mixture and stir to combine. You may need to use your hands to evenly distribute.
- Spread on prepared baking sheet and bake for 20 to 25 minutes or golden brown, stirring every 7 to 8 minutes.
- Let the granola cool completely, stirring occasionally.
- Stir in dried cranberries.
- Store granola in an airtight container for up to 2 weeks

HEALTHY GRANOLA

- Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
- Pour in the oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
- Bake until lightly golden, about 21 to 24 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula to create a more even layer). The granola will further crisp up as it cools.
- Let the granola cool completely, undisturbed (at least 45 minutes). Top with the dried fruit (and optional chocolate chips, if using). Break the granola into pieces with your hands if you want to retain big chunks, or stir it around with a spoon if you don't want extra-clumpy granola.
- Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5 to 10 minutes before serving.

- Adjust two oven racks to the upper middle and lower middle positions. Preheat oven to 325 degrees. Line two rimmed baking sheets with parchment paper or foil.
- In a very large bowl, whisk together honey, brown sugar, olive oil, vanilla, cinnamon, nutmeg, and salt.
- Fold in oats, nuts, and seeds. Divide between two prepared baking sheets (about 7 cups granola per baking sheet) and spread evenly.
- Bake 40 minutes, stirring the granola after 20 minutes. Remove from the oven and cool completely. Store covered in an airtight container at room temperature.

MOLASSES COOKIE GRANOLA
Steps:
- Pre-heat oven to 300 degrees and line a baking sheet with oven-safe parchment paper.
- In a large bowl, whisk together melted coconut oil, molasses, maple syrup and the spices (cinnamon through salt). Add in the oats, pecans and flax seed meal and stir until evenly coated with the molasses mixture.
- Spread oat and nut mixture evenly on parchment-lined baking sheet and bake for 30 minutes. Let cool on pan for 30 minutes then break up granola into bite-sized pieces.

CINNAMON WALNUT GRANOLA
Got this from a nutritionist friend of mine. It has flax seed, and walnuts are good for you - the only nut that has omega 3's. Sometimes I'll also add a cup of sunflower seeds. My daughter loves it and a 8 yo friend was over and tried it. His comment: "This is tasty!" I gave the recipe to his mom and she made it for a school function and it was a hit! I use rolled oats, but you could use quick oats too. I use this on top of fruit and yogurt for a healthy breakfast.

- Preheat oven to 275°F In big bowl, combine oats, raisins, nuts and flaxseed.
- In microwavable bowl, blend together brown sugar, oil, honey and cinnamon.

This is really quick and easy to make, and I posted variations as well -- Maple Pecan and Honey Almond. Very healthy, and it smells wonderful straight out of the oven! We eat it mixed with vanilla yogurt, or just as a snack.

- Put brown sugar, oil and molasses in large bowl, microwave for 30 seconds, then mix well with a wooden spoon.
- Pour oats, nuts, and seeds on top of the mixture and mix everything well.
- Line a large baking pan with aluminum foil and spray the foil lightly with spray oil. Spread the mixture evenly onto this pan.
- Bake in preheated 350 oven for 20 - 30 minutes. Stir well after the first 10 minutes and then at 5 minute intervals until everything is lightly browned.
- Let cool (watch out -- the nuts are HOT when they first come out of the oven) and store in airtight bags or containers.

- Mix the dry ingredients together in a large bowl.
- In a small saucepan over medium low heat, warm the coconut oil, maple syrup, molasses and vanilla extract. Pour over the dry ingredients and mix well.
