EASY KETO CUSTARD RECIPE
Steps:
- Add cream and vanilla to a small saucepan. Whisk over medium heat until it reaches a low simmer and remove from heat.
- In a separate bowl whisk together sweetener and egg yolks. Whisk into the cream mixture.
- Return to the heat and continue whisking until custard thickens and coats the back of a spoon. Serve warm or chill for later.
- If making Pastry Cream; whisk through butter and xanthan gum after taking off the heat. Push through a sieve to remove any lumps.
- Leave to cool at room temperature then press cling film over surface of pastry cream and transfer to the fridge. Refrigerate 2-3 hours.
- Insert Butterfly. Add the ingredients to the mixer; cook 9 min/90 ̊C/speed 4.
- If making Pastry Cream, add the butter and xanthan gum to the custard in the mixing bowl. Mix 1 min/speed 4. Scrape down the sides of the bowl and mix again 30 seconds/speed 4.
- Leave to cool at room temperature then press cling film over surface of pastry cream and transfer to the fridge. Refrigerate 2-3 hours.

SIMPLE CUSTARD
This is my own alteration of a few different recipes. Not too rich or too sweet as many egg custards can be. Can be served warm immediately or cold.

- Cook and stir milk, vanilla extract, and butter in a saucepan over medium heat until simmering. Remove mixture from heat before it comes to a boil.
- Whisk eggs, sugar, and cornstarch together in a bowl until sugar dissolves.
- Set saucepan back over low heat. Pour in egg mixture slowly, whisking constantly, until custard thickens enough to coat the bottom of a spoon, 5 to 10 minutes.

- Place milk in a 2 cup microwavable cup. Microwave on High for 4 to 5 minutes or until steaming. Let cool.
- Mix together remaining ingredients in a 1 1/2 quart microwable casserole dish until well blended.
- Pour milk into egg mixture and stir.
- Cover with plastic wrap or tight fitting lid.
- Micowave on Low (30% - 40%) for 14 to 16 minutes or until mixture thickens to desired consistency.
- Remove cover immediately and allow to cool to room temperature.
EASY MICROWAVE POURING CUSTARD
**Please note this was made in a 700wt Microwave. Please check your own guidelines book to adjust times for a higher wattage oven. Another quick and easy recipe for when you want a warm custard without the hassle of milk sticking to the pot!! You can also flavour this custard with vanilla or your favourite liqueur such as Frangelico, Kahlua, Cointreau, Brandy or Rum :) A good way of using left over egg yolks from another recipe that calls for only the whites, OR use the whites to make some small meriingues to have with the custard and maybe some fruit:)

Steps:
- In a microwave safe jug heat the milk on medium-high (70% power) for 1 minute.
- Combine the sugar and egg yolks and then whisk mixture into the warm milk.
- Cook uncovered on medium (55% power)for about 5 minutes, whisking twice during cooking, until custard thickens slightly.
- When cooked, cover with some plastic wrap, laying it on the surface of the custard.
- Serve either warm or cooled with maybe some fruit & meringues or over a steamed pudding.

- The first step in making custard in the microwave is to pour 140ml of milk into a microwave-proof bowl. Pour the rest of the milk into a glass dish. Add in the corn flour and mix until completely dissolved.
- In the bowl containing the 140ml milk, add the lemon skin, the cinnamon stick and the vanilla. Put in the microwave on high power (800W) for 1 minute. Meanwhile, add the egg yolks to the corn flour mixture and mix well.
- When the microwave beeps, take out the bowl and pour the contents into the corn flour mixture. Mix well using a whisk. If you want to, you can take out the cinnamon stick, lemon skin and vanilla pod. If you leave them in, the custard will have a stronger and sweeter taste.
- After mixing the ingredients well with the whisk, put the mixture back into the microwave on high power (800W) for 50 - 60 seconds. Afterwards, check that the mixture is mixed well and if it is not, repeat the process: beat with a whisk and heat in the microwave again.

- Heat the milk to scalding point in a heavy-based saucepan. Meanwhile, in a bowl, beat the egg yolks with the vanilla caster sugar and flour until pale and smooth. Pour the milk over the egg mixture, whisking until mixed well. Now return the mixture to the milk pan and reheat it very gently, stirring all the time (a wooden spoon or spatula is best). As soon as the mixture begins to coat the back of the spoon, rather than just looking like hot milk, the custard is ready. It shouldn’t be any thicker than, say, single cream. Easy eh?
