1 (16 ounce) package no-boil lasagna noodles
1 (30 ounce) can spaghetti sauce
2 lbs ricotta cheese
16 ounces mozzarella cheese, shredded
1 lb ground beef
1 tablespoon minced garlic
1/2 tablespoon basil
1/2 tablespoon oregano
salt & pepper

Steps:

  • In a small frying pan, brown the ground beef, basil, garlic, and oregano.
  • Drain and add Spaghetti Sauce then remove from heat and set aside.
  • In a square or rectangle shape Microwve Safe dish, place alayer of lasagna noodles across the bottom.
  • Cover with a layer of spaghetti sauce, a layer of Ricotta cheese, and a layer of Mozarella cheese.
  • Repeat one or two more times depending on the depth of your dish.
  • For the last layer, cover with another layer of lasagna noodles and spaghetti sauce.
  • Cover and microwave on high for 20 minutes.
  • Remove Lid and cover with one more layer of Mozzarella.
  • Microwave on high for 5 minutes.
  • Let stand for 5 minutes and enjoy!

1 (30 ounce) jar spaghetti sauce
1 lb ground beef
6 lasagna noodles (uncooked)
8 ounces shredded mozzarella cheese
16 ounces cottage cheese (combination of the two) or 16 ounces ricotta cheese (combination of the two)
parmesan cheese

Steps:

  • Brown the ground beef, mix with spaghetti sauce and 1/2 cup of water.
  • Set aside (I do not always use meat).
  • In a large deep Rock'N'Server pan (from tupperware) or a large rectangular microwavable pan, pour 1/4 of the sauce.
  • Layer 3 noodles on top and spread 1/2 the cottage/ricatto cheese on top of this.
  • Sprinkle with parmesan and 1/3 of the mozzarella.
  • Pour 1/2 of the remaining sauce mix on top and put the last 3 noddles top of the sauce.
  • Sprinkle with parmesan and 1/3 of the mozzarella.
  • Pour on the remaining sauce.
  • Cook on high for 8 minutes, medium for 25 minutes.
  • Sprinkle on the remaining mozzarella, and cook an additional 2 minutes.
  • Let stand for 10 minutes before serving.

This is another of those recipes my mom got from the 1980's microwave cooking class. You don't pre-cook the noodles for this. This recipe pre-dates turntables. To save wear and tear on your microwave's turn table take the glass turn table plate out, remove the roller ring and then put the plate back in upside down. This recipe requires a microwave safe 9x13 baking dish. I use a Pyrex one.

1 lb ground beef
1 quart spaghetti sauce
1 (8 ounce) box lasagna noodles, noodles1/2 box
1/2 cup water
3 cups mozzarella cheese
1 lb ricotta cheese
1/2 cup parmesan cheese
1/2 teaspoon salt (optional)

Steps:

  • Brown ground beef in a microwave safe dish (6-7 min on high).
  • Add sauce and water to beef and stir.
  • Cook 5-6 min on high.
  • Put a thin layer of sauce/beef mixture on bottom of a microwave safe 9x13 baking dish.
  • Butter dry uncooked noodles with ricotta cheese and place cheese side up on top of sauce.
  • Sprinkle mozzarella on top of Ricotta.
  • Repeat steps 4-6 using more generous layers of sauce until done.
  • Cover with wax paper and place in microwave.
  • Cook 10 min on high.
  • Rotate dish.
  • Cook 10 min on high.
  • Sprinkle with Parmesan cheese.
  • Cook 15 min on high.
  • Let stand at least 5 min before slicing.

Making lasagna has never been easier! With the help of the microwave, you can have lasagna in no time at all! We par-cook the noodles to ensure they're cooked through and tender before layering with marinara sauce and a blend of cheeses. We kept our version vegetarian with spinach, but feel free to experiment with other ingredients, like cooked ground beef or sausage.

2 no-boil lasagna noodles
1 ½ cups hot water, or as needed
⅓ cup whole milk ricotta cheese
¼ cup fresh baby spinach
¼ teaspoon kosher salt
½ cup marinara sauce
½ cup shredded italian cheese blend
fresh basil leaf, for garnish - optional
grated parmesan cheese, for garnish - optional
dried basil, for garnish

Steps:

  • Break the lasagna noodle sheets into roughly 1-inch pieces. Transfer to a medium microwave-safe bowl or large mug and pour in enough hot water to cover the noodles by 1 inch. Microwave for 3 minutes on high power under tender. 2.
  • Drain the noodles.
  • In a small bowl, stir together the ricotta, spinach, and salt.
  • Spoon 1 tablespoon of marinara sauce into the bottom of a large mug. Add a layer of noodles. Spread 1 tablespoon of the ricotta mixture over the noodles in an even layer. Top with 1 tablespoon shredded Italian cheese and then another 1 tablespoon marinara. Repeat with remaining ingredients. For the final layer, top the noodles with 2 tablespoons of marinara and the remaining shredded cheese.
  • Microwave for about 3 minutes, until the noodles are cooked through and the cheese is melted. Let sit for 1-2 minutes to cool slightly.
  • Garnish with fresh basil, Parmesan, and dried basil, if desired, and serve.
  • Enjoy!

1 (14 ounce) can tomato sauce
1 teaspoon oregano

1 lb ricotta cheese, part skim
1/2 cup parmesan cheese, grated
1 egg, beaten
2 tablespoons parsley

Steps:

  • Place beef and garlic in 2 quart casserole. Cook, covered on full power 4 to 5 1/2 minutes. Stir 1/2 way through time. Drain.
  • Add next 8 ingredients. Cook covered full power 6 to 8 minutes until boiling. Stir 1/2 way.
  • Blend ricotta, 1/2 cup parmesan, egg, and parsley in small bowl.
  • Layer 1/2 of noodles in 2 quart dish. Spread 1/2 of cheese mixture, 1/2 mozzarella, and 1/2 meat sauce.
  • Repeat layers.
  • Cover loosely with saran wrap. Heat full power 13 to 16 minutes. Sprinkle top generously with parmesan.

½ cup shredded mozzarella cheese

Steps:

  • In a small bowl, mix the ricotta, spinach, parsley, one tablespoon of Parmesan, salt, and pepper until combined.
  • In the glass container, spread a layer of tomato sauce. Top the tomato sauce with the lasagna noodles.
  • Cover the noodles with a layer of the ricotta mixture, then mozzarella.
  • Continue with another layer of noodles, ricotta, tomato sauce, then mozzarella. Repeat.

32 ounces pasta sauce
1/2 cup water
15 ounces ricotta cheese
1 egg
1 (10 ounce) box lasagna noodles
8 ounces sliced mozzarella cheese
grated parmesan cheese

Steps:

  • Microwave meat on high in uncovered bowl for 6 minutes.
  • Drain fat and chop meat up.
  • Mix sauce and water in bowl and add meat.
  • Mix ricotta and egg in small bowl.
  • Coat bottom of glass pan (13x9, 2-3 quart rectangular) with 1/3 of sauce mix.
  • Overlap 1 layer of uncooked noodles over sauce mix in pan.

2 cups cottage cheese
