MICROWAVE ONE-BOWL NO-NUT GRANOLA



Microwave One-Bowl No-Nut Granola image

No one will guess that you made this crispy granola in the microwave in just 6 minutes! The secret ingredient is an egg white, which helps the granola cluster and crisp as if you'd nursed it through a long oven bake. And it gets mixed and cooked in the same bowl, making cleanup a snap on a busy school morning.

Number Of Ingredients 9

1 large egg white
Large pinch kosher salt
1 tablespoon olive oil
3 tablespoons packed dark brown sugar
1 cup old-fashioned rolled oats
1/2 cup unsalted, unroasted pumpkin or sunflower seeds, or a mixture of both
1/3 cup puffed millet
1/4 cup untoasted coconut chips
2 tablespoons tricolor or plain prewashed quinoa

Steps:

  • Beat the egg white and salt with a fork until frothy in a microwave-safe large bowl. Beat in the oil and the brown sugar. Stir in the oats, seeds, millet, coconut chips and quinoa, and toss really well to make sure the dry ingredients are coated in the egg mixture.
  • Microwave on high for 3 minutes. (At this point there should be a nice mapley smell of oatmeal.) Gently lift big chunks of the mixture from the bottom of the bowl with a rubber spatula, and turn them over. Microwave the mixture for 3 minutes more, and gently lift chunks from the bottom again, being sure not to break up clusters.
  • Carefully transfer the mixture to a baking sheet, and let cool for at least 10 minutes. Break it into small pieces or leave some large. The granola will keep, tightly sealed, for 2 days.

4 * 4 cups oatmeal
1/3 * 1/3 cup coconut
1/2 * 1/2 cup vegetable oil
3/4 * 3/4 cup brown sugar
3 * 3 tablespoons honey
1 * 1 teaspoon cinnamon
1 * 1 teaspoon vanilla
1/2 * 1/2 cup nuts
1/2 * 1/2 cup raisins or dried fruit
NOTE: Both Quick Oats or Old Fashioned, work well.

Steps:

  • Pour oatmeal into a glass microwaveable dish and cook for two minutes; stirring once. (YES microwave the oats! I'm not sure why, but this is how I learned to do it in my 7th grade Home Economics class and it has worked for me every time). Combine all other ingredients (except raisins or fruit) into a bowl. Add in oatmeal and stir until well blended. To finish, pour mixture into a glass dish and microwave on high for 4-5 minutes or until golden brown. Stir once every minute. Cool on parchment paper. When cool, break apart big pieces into bite size pieces. Add raisins or fruit. Store in tightly covered container.

Stick them in lunches or have them for breakfast, it's a yummy treat for the whole family! You can add any nuts, seeds, and/or berries, if desired.

1 cup mini marshmallows
1 cup crispy rice cereal
¾ cup rolled oats
2 tablespoons honey
1 tablespoon butter, room temperature
¼ cup chopped dried cranberries
¼ cup crushed almonds, or to taste
1 pinch ground cinnamon, or to taste

Steps:

  • Pour marshmallows into a microwave-safe bowl and microwave until melted, about 30 seconds. Stir rice cereal, oats, honey, and butter into marshmallows; microwave until heated through, about 30 seconds more. Stir until well-combined. Stir in cranberries, almonds, and cinnamon.
  • Press mixture into a 6-inch square dish and freeze until set, 30 to 60 minutes. Cut into bars.

1/2 cup wheat germ
optional nuts
optional dried fruit

Steps:

  • Place oats, oil, honey, wheat germ and nuts in a microwave safe bowl.
  • Mix ingredients.
  • Microwave on high for 2 minutes and then stir.
  • Mircowave on high for 2 minutes and then stir,
  • Microwave on high for 2 minutes and then stir.
  • Microwave on high for 1 minute and then stir. Start checking for brownness. Continue to microwave for 1 minute and stiring until the granola is brown enough for you.
  • Place on a cookie sheet to cool.
  • Once cooled add in dried fruit.
