Steps:
- Heat the olive oil in a large heavy skillet over medium-high heat. Add the onions, garlic, chili powder, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onion is soft, 3 to 5 minutes. Stir in the tomato paste, the chipotle chiles and sauce, and cook for 1 minute. Add the beef and cook, breaking it up with a wooden spoon, until no longer pink, about 3 minutes.
- Add the beer and simmer until reduced by about half, about 8 minutes. Add the tomatoes and beans and bring to a boil. Cook, uncovered, stirring occasionally, until thick, about 10 minutes. Adjust the seasoning with salt and pepper and serve with desired assorted toppings.

- STOVE-TOP DIRECTIONS: Combine all ingredients in a large pot. Bring to a simmer over medium low heat, cover with lid and simmer, stirring occasionally for 2-10 hours. (Yes, you can simply bring the chili to a boil, simmer 15 minutes and then serve it. However, if you have the chance to cook it longer, I highly recommend it. SPICY CROCK POT CHILI
Slow cooked chili with Ground beef tomatoes, beans and jalapenos and a spicy seasoning, This Crock Pot chili is a great meal for the week day!

- Add all the chili seasoning spices together and mix.
- Chop the onion, jalapeno and the garlic for the meat.
- Take about a cup of kidney beans and a cup of pinto beans and put them in a blender. Blend for 2 minutes; set aside.
- In a cast iron skillet, Brown the ground beef over medium heat for about 5 minutes and drain.
- Stir in about 3 tbsp of the chili seasoning, 2 tsp of salt, and the onion, garlic and half of the jalapenos.
- Cook for about 2 minutes, chopping up the meat into small pieces.
- Add the meat mixture, tomatoes, and beans into crock pot and stir together. Add bean paste
- Now add the bean paste, 2-3 more tbsp of chili seasoning and remaining chopped jalapeno
- Cook for about 4-6 hours in the crock pot on low.
- Set heat on crock pot to warm about 30 minutes prior to serving. add the remaining 2 tsp of salt slowly, tasting as you go until you get the flavor that you want.

- In a large saucepan, brown the ground beef and ground sausage, using a wooden spoon to break it into small pieces as it cooks. Drain most of the grease and remove meat to a plate.

EASY MEDIUM SPICY CHILI
Medium spicy chili that is not overwhelming and generally will please everyone. Very Easy to Make. Chipotle Chili in Adobo Sauce adds a nice smoky kick but still a good chili if you don;t have this ingredient on hand. I use Tomato sauce but any type of tomato will do. Diced, crushed, whatever you prefer or have on hand. I love mushrooms so I use a lot. I don;t love Kdney beans as much so I use less. I use a crockpot for cooking but a dutch oven or larger stockpot with lid will do just as well. Adjust ingredients to yor own tastes. It is after all Chili!

- Brown ground beef, drain and set aside. Heat Olive oil in sauce pan. Saute finely chopped Onion, Green Pepper, Garlic, Habanero and Chipotle Chilis for about 5 minutes on medium heat. Combine everything in crockpot. Rinse Kidney Beans and mushrooms. Add to crockpot along with tomato sauce and spices. Stir well. Set crockpot on low for 3 hours.
