BREAKFAST POPOVERS WITH ITALIAN SAUSAGE



Breakfast Popovers with Italian Sausage image

Butter, for greasing the pan
2 tablespoons extra-virgin olive oil
Two 3-to-4-ounce sweet or spicy Italian sausage links, casings removed
2 cloves garlic, minced
1 cup shredded smoked mozzarella (4 ounces)
4 large eggs, at room temperature
2 cups milk, at room temperature
1 1/2 cups all-purpose flour
2 small green onions, pale green and white parts only, finely sliced to yield 1/4 cup
3 tablespoons chopped fresh basil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Maple syrup, for drizzling

Steps:

  • Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter the muffin cups.
  • Heat the oil over medium heat in a medium nonstick skillet. Add the sausage and break it into 1/4-to-1/2-inch pieces using a wooden spoon. Cook until brown and cooked through, about 6 minutes. Add the garlic and cook until aromatic, about 30 seconds. Spoon about 1 1/2 tablespoons sausage into each muffin cup. Sprinkle the cheese on top of the sausage.
  • Blend the eggs in a blender until frothy, about 15 seconds. Add the milk, flour, green onions, basil, salt and pepper. Blend until just incorporated. Pour the batter into the muffin cups, filling each cup to just below the rim. Bake, without opening the oven door, until puffed and golden, about 35 minutes.
  • Place the popovers on a platter and drizzle with maple syrup.

2 ½ teaspoons onion powder
1 teaspoon anise seed
1 tablespoon olive oil

Steps:

  • Mix pork, maple syrup, sage, salt, fennel seed, red pepper flakes, garlic powder, onion powder, and anise seed in a large bowl until evenly blended. Shape pork into small patties.
  • Heat olive oil in a large skillet over medium heat; fry patties in batches until pork is browned and no longer pink in the center, 4 to 5 minutes per side.

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease and flour six 6-ounce custard cups.
  • In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat. Fill custard cups 1/2 full.
  • Bake at 450 degrees F (230 degrees C) for 20 minutes. Decrease oven temperature to 350 degrees F (175 degrees C) and bake for 20 minutes more. Immediately remove from cups and serve piping hot.

12 oz bulk maple sausage or raw maple sausage links, casings removed
3 green onions, green and white parts separated, thinly sliced
1 cup Original Bisquick™ mix
1 cup milk
3 eggs
1/2 teaspoon salt
1 cup shredded mozzarella cheese (4 oz)
1 tablespoon real maple syrup

Steps:

  • Heat oven to 375°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage and green onion whites over medium heat 7 to 8 minutes, stirring occasionally, until sausage is no longer pink; drain. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, eggs and salt until blended. Stir in cheese. Pour into pie plate.
  • Bake 30 to 35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes. Drizzle with maple syrup; top with green onion greens.

I don't care for sausage, but actually love this recipe. You do not have to do it using maple syrup. I have also done it using hot/spicy sausage which my husband really likes (I'm not in to spicy stuff though!)

1 pkg ground sausage
1 pkg cream cheese
2 Tbsp maple syrup
1 can(s) refrigerated crescent rolls
1 egg white and a dash of poppy seeds (optional)

Steps:

  • 1. Brown and drain the sausage.
  • 2. Add the maple syrup and cream cheese. Mix until cheese is soft and well integrated with the sausage.
  • 3. Open the crescent rolls and spoon the sausage mixture into the center of each roll. Close up / pinch all ends to make a rounded pouch.
  • 4. Brush top with egg white and sprinkle with poppy seeds. Bake at 350 for about 15 minutes, or until golden brown.

A simple, delicious five-ingredient casserole that your family is sure to love! I made this from the top of my head last night for dinner. I had a pound of Maple sausage thawed and wanted something different. Turned out great!

6 -8 medium potatoes, peeled and sliced
2 medium white onions, peeled and diced
6 tablespoons butter
1 lb maple sausage, browned, rinsed & drained
1 cup shredded Mexican blend cheese (Monterey Jack, Cheddar, etc.)

Steps:

  • Preheat oven to 350*.
  • In large skillet, melt butter over medium-high heat. Add potatoes & onion. Cover and cook until onions are caramelized, stirring frequently.
  • In the meantime, brown maple sausage in a separate skillet. Once browned, drain & rinse sausage to remove excess fat.
  • Combine potato mixture with sausage in 9x13 pan. Cover with aluminum foil and bake for 25-30 minutes.
  • Remove foil and sprinkle cheese over top of casserole.
  • Return to the oven, uncovered, for 5-10 minutes until cheese is melted.
  • Serve while hot.

I get a kick out of learning how to 'Make my own' anything. I hope this one comes in handy for you. My family loves this sausage with pancakes and more maple syrup for breakfast. It also works very nicely in sausage and egg breakfast burritos.

5 pound(s) 80% lean boneless pork shoulder
2 tablespoon(s) kosher salt
1 tablespoon(s) fine ground pepper
1 1/2 tablespoon(s) fresh rubbed sage
1 large finely chopped onion
1/2 cup(s) real maple syrup
1/2 cup(s) ice water

Steps:

  • Trim the pork, cut it into 1 inch cubes, and grind it through the fine plate of your meat grinder.
  • Mix the spices with the ice water
  • Combine the spices and onions and maple syrup with the ground meat and mix very thoroughly for at least 2 minutes
  • Stuff into small sheep casings, 3/4 inch collagen casings, or make into patties.
  • Like all other fresh sausages, this recipe needs to be cooled as soon as it is done. It can be kept in the refrigerator for 2-3 days or in the freezer for up to 3 months.
