MAPLE BREAKFAST SAUSAGE
Homemade breakfast sausage made with ground pork and seasonings. Great cooked in crumbles for biscuits and gravy, or in patties for breakfast sandwiches or eggs benedict. I like to premake a large batch and freeze the patties, then just take out a few the night before.

HEARTY MAPLE BEANS
I modified this recipe to suit my family's taste. It's a great side dish for a backyard barbecue with hamburgers and hot dogs. It can be made in advance and kept warm in a slow cooked for hours without losing any flavor. -Margaret Glassic, Easton, Pennsylvania

MAPLE BAKED BEANS
Since my husband raises hogs and my parents produce maple syrup, this recipe's a natural for me! I usually prepare Maple Baked Beans just for us during the winter. In summer, I'll often make it for family picnics and get-togethers.

EASY MAPLE BEANS WITH SAUSAGE
Adapted from Woman's Day, with lighter ingredients. I like to use the baked beans with onions in them(even though there are onions in this recipe too). The amount of mustard is correct - in fact, if you like things a bit zestier, you might even want to add more at the end. This recipe is fairly mild & kid friendly.

- Decide whether you'll be cooking the sausages in the Instant Pot, oven, or steamer. The Instant Pot is my preferred method for simplicity, shorter cook time, and ideal texture of the sausages.NOTE: a food processor is a quick way to make the seitan dough, but you can also prepare this recipe without one. See Notes for instructions.
- In the bowl of a large food processor, combine the first 15 ingredients and the maple sugar, if using (this is everything except the broth, chickpeas, and gluten). Process into a slurry.
- Scrape down the sides of the bowl as needed. Add the broth and chickpeas, and pulse 5 to 7 times to break up the beans. Add the vital wheat gluten, and process for 30 seconds. Transfer the dough to a flat work surface, and knead by hand for 30 seconds to 1 minute or until the dough feels firm.
- Shape the dough into a square, and cut it into 4 equal-size pieces. To create 16 small/medium-size links, cut each of those pieces into 4. Or for 8 large, entree-size sausages, only cut each piece of dough in half.
