  • In a small bowl, stir together peanut butter, soy sauce, sugar, hot pepper sauce and garlic until well mixed. Gradually stir in water until texture is smooth and creamy.

1 tsp clear honey
1 tbsp soy sauce
1 tbsp curry powder
3 tbsp smooth peanut butter
165ml can coconut milk

Steps:

  • Mix the lime juice, honey, soy sauce, curry powder and peanut butter in a small bowl. Add a splash of water if it's too stiff. Transfer to a small pan with the coconut milk, and heat gently for 5 mins stirring continually, until combined.

I created this recipe as an answer to the high fat peanut sauces in restaurants and in most recipes. It is a touch sweeter than most, but I find the soy sauce and the cayenne dampens the sweetness considerably.

1/2 cup better n' Peanut butter low-fat peanut butter
1/2 cup hot water
1 tablespoon cornstarch
3 tablespoons soy sauce
1 tablespoon pureed ginger
1 tablespoon crushed garlic
5 scallions, sliced
5 sprigs fresh basil, chopped
1/2 teaspoon cayenne

Steps:

  • Mix peanut butter with hot water in a small bowl until smooth.
  • Add spices, soy sauce and cornstarch and whisk to remove any lumps.
  • Steam-fry veggies of choice, and add the peanut sauce when stirfry is half done.
  • Bring to a boil, then reduce to a simmer until veggies are done and the sauce thickens.
  • Serve!

2 teaspoons oil
1 small onion (diced)
2 garlic cloves (crushed)
1 teaspoon chili (crushed)
1 teaspoon curry powder
2 tablespoons peanut butter
125 g tinned chopped peeled tomatoes
1 cup vegetable stock
1/2 lemon
salt and pepper

Steps:

  • In a saucepan add oil, onions and garlic stir until the onions become transparent.
  • Add chilli and curry powder and stir for a further 2 minutes to release the flavor.
  • Stir in penut butter and then add tomatoes and stock.
  • Simmer for 5-7 minutues.
  • Add lemon salt and pepper to taste.
  • Enjoy!

This easy 10-minute Satay Sauce Recipe makes a great dip for chicken, pork or vegetable skewers. Smooth and creamy with a little chilli kick!

3 heaped tbsp smooth peanut butter
1 tbsp dark soy sauce ((use tamari for gluten free))
1/2 tsp chilli flakes (red pepper flakes)
1 tbsp fish sauce ((sub with vegetarian fish sauce if you want it vegetarian))
7 oz (200ml) coconut milk (from a tin)
1 tbsp light brown sugar
1/2 tsp ground coriander
Juice of 1 lime ((about 2 tbsp))
1/2 tsp sesame seeds
1 tbsp roasted peanuts (finely chopped)
pinch chilli flakes
1 tbsp fresh coriander (cilantro leaves)

Steps:

  • Place all of the satay sauce ingredients EXCEPT for the lime juice into a small pan
  • Heat over medium heat whilst stirring with a wooden spoon. The sauce will look thin at first, then as it comes close to boiling point, it will start to thicken. Don't let the sauce boil, just turn down the heat as it approaches boiling point and stir until thickened, then turn off the heat and stir in the lime juice.
  • Transfer the sauce to a serving dish and sprinkle with sesame seeds, chopped peanuts, chilli flakes and fresh coriander before serving.

6 cups thinly sliced Savoy or green cabbage
½ cup thinly sliced red bell pepper
½ cup matchstick-cut carrots
¼ cup finely chopped green onion
2 tablespoons toasted sesame seeds

Steps:

  • Prepare Thai Chicken Satay with Spicy Peanut Sauce as directed. Remove the chicken from the skewers and cut into strips. Divide the sauce among 4 small condiment containers with lids and refrigerate until ready to use.
  • To prepare slaw: Toss cabbage, bell pepper, carrots and green onion in a large bowl.
  • Divide the slaw among 4 single-serving containers with lids. Top each with one-fourth of the chicken and 1/2 tablespoon sesame seeds. Dress with the reserved sauce just before serving.
