- Prepare the caramel. Scoop 3 tablespoons of sugar in each (3 small) llanera or flan molds or 4 tablespoons for big llanera. Place the llanera on top of the stove over low heat. When the sugar starts to liquefy, using tongs, turn the llanera in a circular motion to prevent the sugar from burning and let them caramelize evenly. Remove from heat once all granules have turned liquid and are light brown. Set aside.
- Place the egg yolks in a bowl, and slowly beat them with a fork or whisk. Try not to beat too fast and create a lot of bubbles. Gradually add the milk and condensed milk while continuously stirring. Lastly, add the vanilla extract and zest of key lime or lemon and stir a couple of times more until all is well blended. Sieve the mixture with a strainer to remove undissolved bits.
- Pour the mixture into each mold. Tap the mold several times on a flat surface to get rid of trapped bubbles. Place the filled llanera or mold in a water bath and bake in the oven at 160°C/320°F for about 30 minutes or until an inserted toothpick comes out clean. Do not overcook or the will start to create tiny holes.
- Let them cool down and then chill in the fridge for at least an hour. When ready to serve, run a knife around the inner edges to separate the flan from the mold. Place a serving plate top-side down over the llanera and flip them over to transfer.

- Preheat oven to 350°F.
- Pour the sugar into a skillet over medium heat. Stir the sugar continually until it begins to brown and clump together. Keep stirring until the sugar completely melts and dissolves into a golden-brown syrup. Remove the syrup from the heat as soon as it has dissolves as it can burn.
- Working quickly, carefully pour the caramel into a 7-inch round pan or a special flan pan (flanera) as shown in the photos in the blog post. Pour the caramel evenly into the bottom of the pan so the entire bottom is coated. If you need to, use an oven mitt or potholders to move the pan from side to side to get the caramel evenly distributed. If the caramel hardens too quickly, you can carefully reheat the pan by placing it directly on the stove or on the skillet for a few seconds.
- Set the caramel-coated pan aside to cool and harden.
- In a large mixing bowl, add the eggs, sweetened condensed milk, whole milk and vanilla extract. Whisk together until everything is fully combined, but try not to overwhisk so that there aren't too many air bubbles in the mixture.
- Pour the custard mixture into the caramel-coated pan. Cover the top of the pan with the lid (if using a flanera) or tightly with aluminum foil.
- Place the flan pan in a large baking dish and pour enough water in the dish until it reaches about halfway up the pan. Carefully place the baking dish in the oven and bake for 1 hour and 15 minutes.
- Carefully remove the dish from the oven, and then lift the flan pan out of the water bath. Remove the lid or aluminum foil and let it cool to room temperature. The flan may still be a little jiggly, but that's okay - it will continue to cook with the residual heat.
- Once it's cooled, cover with the lid or aluminum foil and refrigerate for 4 hours or overnight.
- To serve, remove the lid or aluminum foil and slide a knife along the edges of the pan to loosen it up. Place a plate or platter on top of the flan, grab a hold of both the plate and the pan and quickly and securely flip it over so that the flan is now upside down. Carefully lift off the flan pan. Your flan should be sitting in the caramel on the plate, ready to enjoy!
- Carefully lift the flan pan up. The flan should be on the plate - if it's not, place the pan back down and let it sit for a few minutes. Don't freak out! It will loosen up and slide out. You could try tapping the sides of the pan a bit or even giving the sides a squeeze.
- Slice the flan and serve with the rich caramel sauce!

- Preheat the oven to 325 degrees F (165 degrees C).
- Combine sugar and water in a saucepan over medium heat. Heat until sugar is dissolved and mixture is thickened and light brown, 7 to 10 minutes. Spread caramel evenly over the inside of a flan mold, tilting the mold to make sure the whole surface is covered.
- Combine evaporated milk, condensed milk, egg yolks, and vanilla extract in a large bowl. Stir lightly to prevent bubbles or foam from forming. Strain batter slowly into the caramel-lined flan mold. Cover with aluminum foil. Place mold onto a baking pan filled with water.
- Bake in the preheated oven until firm, about 1 hour. Let cool, about 30 minutes. Invert carefully onto a platter.

- Put brown sugar and water in a saucepan. Caramelize on high heat. It will be ready when you see big bubbles popping and the texture is thick.
- Line cake tin with caramel. Be sure to line the sides of the pan. A tip for getting the caramel to stick to the sides is to line it and then throw it in the freezer for a few minutes.
- Custard:.
- Blend all ingredients in a big bowl with a hand mixer or spoon as not to create bubbles.
- Pour mixture into caramel lined cake pan.
- Cover with aluminum foil.
- Place tin in a larger baking pan half filled with water.
- Place pan in pre-heated oven at 350 degrees and bake flan for about 1 hour or until firm.
- Take the foil off in the last 5 minutes of baking.
- Place serving deep dish over top of the cake pan, and invert. Flan will easily plate, and the caramel provides a wonderful sauce.

- In a pan, (or on the llanera or molder directly if possible) melt the sugar over medium heat until it liquefies and turns an amber color. Stir the Sugar occasionally to make it Smoother and Crystal-Free Syrup.
- Once the syrup acquires the color of amber, quickly remove it from the heat and pour into the Llanera to cover the bottom.
- Caramelized sugar hardens as it cools and you need to work fast to transfer the syrup to the ramekins before it hardens in the pan.

- Put 2 teaspoons of sugar and ¼ teaspoon of water on each Puto molds. Let it dissolve over low heat until it begins to bubble and the syrup turns into light brown. Continue making caramel until you’re done and turn off the heat. Set aside and let it cool down and harden.
- To make the leche flan mixture, in a mixing bowl, mix egg yolks, condensed milk, evaporated milk and vanilla essence and mix until well combined. Strain leche flan mixture to get rid some lumps and air bubbles. Gently pour the mixture on top of caramel until 2/3’s full, continue until you’re done filling.
- Put in a preheated steamer over low heat and let it steam for 15-18 minutes. Steam Mini-Leche Flan by batches, time depends on how large your steamer is. (I had mine steamed in 3 batches, 8 per load.)
- You can tell when your Leche Flan is cooked by inserting a toothpick and it comes out clean you’re done. Let it cool at room temperature or refrigerate for 20 minutes. To serve, run a thin knife around the edges of the mini molds to loosen the flan. Invert the molds on a serving plate and serve as a dessert or toppings.
