16 ounce can refried beans
8 ounce package cream cheese, room temperature
1 cup sour cream
2 tbsp taco seasoning
16 ounce container prepared guacamole
16 ounce jar chunky salsa, (drain 3 tablespoons of the liquid and reserve)
16 ounces Mexican blend shredded cheese

Steps:

  • Mix 3 tablespoons of the Salsa liquid and 2 tablespoons of the sour cream in with the refried beans and stir until combined. Then spread refried beans evenly on the bottom of a 9x13 casserole dish.
  • In a medium mixing bowl, combine the cream cheese, remaining sour cream, and taco seasoning. Stir until combined. Spread over refried beans.
  • Add the guacamole in an even layer. Pour salsa over the guacamole and spread until covered. Top with a layer of cheese.
  • Garnish with chopped tomatoes, chopped pickled jalapenos, chopped cilantro, and sliced black olives.
  • Cover and chill until ready to serve.
  • Serve with corn chips, tortilla chips, or assorted dipping vegetables.

1 (6 ounce) container guacamole
12 ounces sour cream
1 (1 ounce) package taco seasoning mix

Steps:

  • In a clear pie pan, or similar dish, spread a layer of bean dip. Top the bean dip with a layer of guacamole. Allow the layers to thicken in the refrigerator for approximately 20 minutes.
  • In a mixing bowl, while the bean dip and guacamole chill, combine the sour cream and taco seasoning. When the chilled mixture is sufficiently thickened, spread a layer of the sour cream mixture over the layer of guacamole. Top the sour cream layer with the grated cheese. Garnish the layers with the jalapenos and tomatoes.

1 16 oz can Traditional Refried Beans
1 12 oz container refrigerated guacamole
1 16 oz container sour cream
1 1.25 oz package taco seasoning mix
1 cup shredded Cheddar and Monterey Jack cheese blend
1 2.25 oz can sliced ripe olives, drained
1/4 cup sliced green onions
Tortilla chips, optional

Steps:

  • Reserve 1/2 a cup of drained tomatoes and set aside. Blend the remaining tomatoes and reserved liquid with the beans in a medium bowl.
  • Spread the bean and tomato mixture in an 8×8-inch glass baking dish or round casserole dish. Top with the guacamole.

1/2 cup sour cream (or enough to cover one layer)
1 ripe avocado, mashed
1 teaspoon lemon juice
1 tomato, diced
1/2 cup ready made salsa
1/2-3/4 cup grated tasty cheese

Steps:

  • In a small bow, mix together the refried beans and taco seasoning.
  • Spoon bean mixture into the base of a shallow square casserole dish, spread to form bottom layer.

1 3.8 oz can of sliced black olives

1 small onion, (chopped fine.)
2 small tomatoes, (chopped.)

Steps:

  • Prepare by cooking your hamburger meat until done, and no longer pink. Drain the grease from the meat, and discard. While meat is cooking, in a small saucepan, warm up the refried beans on low heat so that they are just heated through.
  • chop up the onion, and the tomatoes. Set aside.
  • In a casserole or baking dish, you can begin layering with the refried beans. Then add hamburger meat, onions, a thin layer of salsa (if you are choosing to use salsa), tomatoes, lettuce, and dollops of sour cream.Spead the sour cream across the entire top of the dish. 1 cup salsa

Steps:

  • Spread refried beans in the bottom of a (1-quart) shallow serving dish.

1 lb of grass-fed hamburger meat
1 small onion (diced)
1/2 red pepper (diced)
1/2 green pepper (diced)
2 Tbsp taco seasoning* (use your favorite, or see below for my Paleo Taco Seasoning)
1/2 cup tomato sauce
1 large tomato (diced)
1/2 cup red onion (finely diced)
2 cups of guacamole
7 oz canned green chilis
1/2 cup black olives (sliced)
1/3 cup fresh cilantro (chopped (for garnish))
1 tbsp chili powder
1 tsp salt
1 tsp ground pepper
1 tsp oregano
1 tsp thyme
1 1/2 tsp cumin
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp red pepper flakes
Use just 2 Tbsp for the meat mixture seasoning

Steps:

  • If making fresh, combine ingredients above in a small bowl and set aside
  • In a frying pan add 2 tablespoons of a fat of your choice in a skillet over medium heat. Add the ground beef, onion and peppers. Cook until meat is browned. Add just 2 tablespoons of the taco seasoning to the meat, then add 1/2 cup of tomato sauce. Stir and allow to simmer for a few minutes while you chop the remaining vegetables.
  • Finely dice 1 tomato, dice a half cup of red onion, slice the black olives, dice the 7-ounce can of green chilis, and chop the cilantro for the garnish. Keep veggies separated. (I used canned green chilis, but you could certainly do fresh - just dice and slightly sauté them before adding to the mix.
  • Bottom Layer: 1/2 of the meat mixture
  • Next: 1 large diced tomato (save a couple tablespoons to garnish the top later)
  • Next: 1/2 cup finely diced red onion
  • Next: 1 cup of guacamole
  • Next: The remaining half of the meat mixture
  • Next: green chilis
  • Next: Sliced black olives
  • Next: 1 cup of guacamole
  • Top Layer: Toss on your reserved diced tomatoes and about 1/3 cup of chopped fresh cilantro

Steps:

  • Have ready a 4-cup capacity, rimmed serving dish. You could also use a pie dish or a small casserole dish.
  • To make the guacamole, in a medium-sized mixing bowl, mash together the flesh of avocados, lime juice, and Kosher salt using a fork or potato masher t until smooth.
  • In a small mixing bowl, stir together sour cream, mayonnaise, vinegar, and taco seasoning.
