SUPER-EASY SAUSAGE AND PEPPERS
A simple and delicious way to serve sausage and peppers with a tomato-based sauce. This is one of my husband's and kids' favorite meals. They like it served over rice because it makes a lot of 'gravy' that soaks into the rice. It 's one of my favorites because it's quick, easy, and has only a few ingredients that I usually have on hand.

EASY ITALIAN SAUSAGE AND PEPPERS
My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

Steps:
- Cut the peppers and onions as directed and shown in the image above for a sample. Also, dice/mince 2 garlic cloves.
- Select the SAUTE option on your Instant Pot. After about a minute when it is hot, add olive oil and then, add sausages in a single layer on the bottom.
- Brown for about 3 minutes each before turning. Turn each twice so it browns on 3 sides minimum for a total of 9 minutes for each link. Remove sausages to a plate and set them aside.
- Add the onions and let them cook in the hot oil for about 2 minutes, stir to ensure they do not stick or burn. Once brown add the garlic and stir. Add water and deglaze the bottom of the pan using a wooden spoon to scrape up all the bits.
- Turn the pot off by selecting CANCEL. This will stop the saute step. To the onions and garlic, add the bell pepper slices. On top of that line the sausage in a single layer over the vegetables.
- Next, add the full can of diced tomatoes including the liquid. For the last step, add the basil, salt, and pepper. Add the optional red pepper flakes.
- Once everything is in the Instant Pot, lock the lid in place and be sure the vent valve is closed and sealed. Select MANUAL and press the up/down buttons to set it for 3 minutes.
- Once it is done cooking let the electric pressure cooker naturally release for 5 minutes. Once the 5 minutes is reached on the digital readout, CAREFULLY open the valve on the Instant Pot to release the remaining pressure. CAUTION - STEAM WILL BE HOT!
- Serve immediately using a slotted spoon if spooning onto rolls for sandwiches. Enjoy as a sandwich or with pasta, polenta, and more.
- Instant Pot sausage and peppers can be stored in an air-tighter container in either the refrigerator for up to 5 days or 30 days in the freezer.

- Preheat the oven to 350 F. Heat the olive oil over medium heat in a large pan. Once the oil is hot add the sausages. Cook until all sides are seared turning them occasionally. Set to the side.
- Add more olive oil if needed to the same pan. Over medium high heat add the onions and peppers. Toss to coat them in the olive oil. Add the minced garlic. Saute the vegetable until slightly browned and softened. Season with the basil, oregano, crushed red peppers, salt and pepper.
- You may want to do this step 15 minutes before the sausage and peppers are done cooking. Heat 1/4 cup vegetable oil in a skillet on high heat until it's it's almost smoking. Add potatoes, and turn over every couple minutes until brown. Don't worry about trying to get them all crispy. A combo of soft and crispy potatoes is what you want. Cook until the potatoes are cooked through. Lightly season with salt and pepper.
- Add the seasoned peppers and onions into 9x13 pan. Scatter. Add the seared sausages on top of vegetables. Take any excess veggies from the sides and tops of the dish and place them on top of the sausages. If you didn't add the minced garlic yet do so now. Add the minced garlic on top of the veggies. Cover and bake for one hour. *See notes for slow cooker. Remove the foil and bake for an additional 20 mins. Serve hot with the optional sliced fried potatoes.
