MAKE PERFECT ICE TEA
I cut this recipe out of a Kraft Food Magazine a couple of months ago. I don't know if it is perfect but it does make nice ice tea. We have only made the sweetened tea. If you want to use sweetened tea, read instructions thoroughly to make as directed.

Steps:
- Place tea bags and baking soda in a large heat resistant glass measuring cup.
- Add 2 cups of boiling water. Cover and steep for 15 minutes.
- Remove tea bags and pour tea into a 2 quart pitcher.
- Add 6 cups of cold water. If you have hard water, use filtered water or bottled water.
- For sweetened tea, put approximately 1 cup of sugar (adjust to taste) in 2 quart pitcher. Then pour tea concentrate from step 2, and after sugar has dissolved, add 6 cups of cold water.
- To avoid cloudiness, cool to room temperature before refrigerating.
- Garnish with lemon or mint and serve over ice.
- Store in refrigerator for up to 2 days.
NUCLEAR ICE TEA
This is a refreshing summer drink that has a wonderful flavor from the mix of ingredients. I know you'll love it. I can't recall where I first found this recipe, but it's included on just about all the major bartending and mixology sites. So maybe I found it on one of those sites.

EASY ICE TEA (CLONE/COPYCAT OF LIPTON ICE TEA)
I got this off a copycat site and have made it many times. It is great in summer as long as you are patient and make it beforehand so it has time to cool and chill. It's a really inexpensive way to make ice tea and works well as long as you use Orange Pekoe Tea bags. It's not half as nice with other flavoured tea bags.

- Boil water in a pot and add tea bags and allow to steep for one hour.
- Pour into pitcher when cool and add sugar.
- Mix well until dissolved and then add lemon juice.
- Chill and serve.

THE BEST PEACH ICE TEA
Fresh peaches make this an outstanding summer drink. Use very ripe peaches - if buying from the grocery store, let them ripen in a paper bag on the counter for 3-4 days. It's okay if they're overripe or bruised, just pare out any really rotten bits. This is a sweetened tea, but it's not Southern-style sweet tea. For sweet tea, use an additional 1/4 to 3/4 cup of sugar, to taste.

- Fill a large pot with 1/2 gallon (2 quarts) hot tap water. Set over high heat.
- While the water comes to a boil, split the peaches down the seam, remove the pit, and cut the halves into 1/4-inch slices.
- Add the peaches to the water, bring to a simmer, and cook for about five minutes.
- While the peaches cook, juice the lemon and remove the seeds.
- Turn off the heat. Tie the strings of the tea bags together and add them to the hot water, dunking them several times. Be sure to leave the tags hanging outside the pot so you can remove them easily.
- IMMEDIATELY set a timer for 5 minutes! Do not let the tea seep any longer or it will get bitter in a way that no amount of sugar can fix.
- While the tea is seeping, prepare 1/2 gallon (2 quarts) of ice water in a beverage dispenser or large pitcher that can hold at least a gallon. Use as much ice as possible.
- When the timer goes off, remove and discard the tea bags. Stir in the sugar and half the lemon juice until the sugar dissolves completely.
- Pour the concentrated tea through a fine-mesh strainer into the ice water. Press on the peach slices to get as much liquid as possible into the tea.
- Taste and add more lemon juice or sugar. (Make sure the sugar dissolves,it will take a lot of stirring.).
- Refrigerate and serve cold.
