Easy Homemade Berry Syrup image

This berry syrup is easy and super yummy on so many things, especially cheesecake and French toast. The syrup can also be used for pancakes, waffles, crepes, etc.

2 (12 ounce) packages frozen mixed berries
2 ¼ cups warm water, divided
½ cup white sugar
2 tablespoons cornstarch

Steps:

  • Pour frozen berries and 2 cups water into a medium saucepan and cook over medium heat, stirring occasionally, until they have thawed but are not hot. Add sugar and bring to a simmer; cook for about 5 minutes, stirring frequently.
  • Mix remaining 1/4 cup water and cornstarch together in a bowl. Add to the berry mixture and cook over medium-low heat to thicken slightly, about 3 minutes.

This flavored simple syrup is very versatile and goes with so many things. I especially like to put it on top of French toast, in pancake or waffle batter, and it's very yummy in cornbread or biscuit batter. This can be made in advanced and stored and refrigerated in a glass jar.

1 cup blueberries
1 cup warm water
1 cup white sugar
1 teaspoon lemon juice

Steps:

  • Mix blueberries, water, and sugar together using a whisk in a small saucepan over low heat until sugar is dissolved, about 5 minutes. Increase heat to medium and bring a gentle boil, stirring often, until syrup is thickened, about 15 minutes.
  • Whisk lemon juice into syrup; serve immediately or cool.

This recipe is good for treating colds and the flu, and good on anything you would put syrup on, like waffles, pancakes, or ice cream. You may try blueberries, blackberries, or raspberries for different flavors.

1 cup fresh elderberries
3 cups water
1 cinnamon stick
3 whole cloves
1 teaspoon minced fresh ginger root
1 cup honey

Steps:

  • Place elderberries, water, cinnamon stick, cloves, and ginger in a saucepan over medium heat. Bring to a boil, reduce heat to low, and simmer for 30 minutes. Use a potato masher to mash berries to release juice; strain the mixture through a fine sieve, retaining juice and discarding the pulp. Let juice cool.
  • Stir in honey until thoroughly combined and transfer to a lidded jar. Keeps in refrigerator 2 to 3 months.

1 and 1/2 cups blueberries
1 cup blackberries
1 and 1/2 cups strawberries (12 large berries)
1/4 cup water
1/3 cup sugar

Steps:

  • Add all ingredients to a saucepan over medium heat and cook while stirring for 10 minutes
  • When the berries are cooked and soft, mash them with a masher or spatula
  • After it is all mashed, continue to simmer for 5 minutes
  • For a thicker syrup, cook for another 5 to 15 minutes
  • For a smoother syrup, strain through a fine mesh strainer
  • Serve immediately for a hot syrup, or chill for a few hours to serve cold

6 1/2 cups fruit (strawberries, raspberries, etc.)
6 3/4 cups sugar

Steps:

  • Wash, stem, and crush fruit in saucepan.
  • Heat to boiling and simmer about 10 minutes.
  • Pour hot fruit through colander or strainer to remove seeds, then again through cheesecloth or a jelly bag.
  • Discard pulp.
  • The yield of juice should be about 5 cups.
  • Combine juice with sugar and boil in large saucepan for 1 minute.
  • Skim off foam.
  • it is ready to serve or to can in 1/2 pint jars.
