Our rich tomato pizza sauce is achieved by cooking it over a low heat until thickened and glossy. It's easy to make and is perfect for pizza night.

Number Of Ingredients 9

2 tbsp olive oil
1 small onion, finely chopped
1 fat garlic clove, crushed
2 x 400g cans chopped tomatoes
3 tbsp tomato purée
1 bay leaf
2 tbsp dried oregano
2 tsp brown sugar
1 small bunch basil, finely chopped

Steps:

  • Heat the oil in a saucepan over a low heat, then add the onion along with a generous pinch of salt. Fry gently for 12-15 mins or until the onion has softened and is turning translucent. Add the garlic and fry for a further min. Tip in the tomatoes and purée along with the bay, oregano and sugar. Bring to the boil and lower the heat. Simmer, uncovered, for 30-35 mins or until thickened and reduced. Season. For a really smooth sauce, blitz with a stick blender, otherwise leave as is.
  • Stir the basil into the sauce. The sauce will cover 4-6 large pizza bases. Keeps well in the fridge for 1 week or stored in a container in the freezer.

2 cans (15 ounces each) tomato sauce
1 can (12 ounces) tomato paste
1 tablespoon Italian seasoning
1 tablespoon dried oregano
1 to 2 teaspoons fennel seed, crushed
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt

Steps:

  • In a large saucepan over medium heat, combine tomato sauce and paste. Add remaining ingredients; mix well. Bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1 hour, stirring occasionally. Cool. , Pour into jars or freezer containers, leaving 1/2-in. headspace. Freeze up to 12 months. Thaw frozen sauce in refrigerator before serving.

¼ tsp freshly ground black pepper
1 tsp sugar* (coconut sugar for paleo or omit)

Steps:

  • Mix tomato paste and sauce together in a medium size bowl until well combined (all the lumps of paste are incorporated into the sauce).
  • Add the rest of the ingredients (oregano, Italian seasoning, garlic powder, onion powder, garlic salt, pepper and sugar) and mix well!
  • Use in your favorite pizza recipe!

15 lbs. Fresh Roma Tomatoes
3 Large Onions, minced (about 3 cups)
4 Cloves Garlic, minced
6 Tbsp. Olive Oil
2 tsp. Peppercorns, cracked
2 Tbsp. Sugar
2 Tbsp. Oregano
4 Tbsp. Parsley, chopped
2 Tbsp. Basil, chopped
2 tsp. Rosemary
2 tsp. Sea Salt
1 Tbsp Pure Lemon Juice (for EACH jar)

Steps:

  • Peel and puree fresh tomatoes, set aside.
  • Mince onions and garlic; place both into a large metal stock pot with 6 Tbsp Olive Oil. Saute' in oil on medium until translucent and tender.
  • Add tomato puree, mix well.
  • Add remaining dry ingredients, stir to mix well.
  • Bring pot to a boil, reduce heat to simmer on medium-low for about 2+ hours. (Simmer to reduce by at least 1/2 to create a "thicker" sauce; stirring occasionally).
  • Once to desired thickness, add Lemon Juice to hot sterile jars, ladle to 1/2 inch headspace.
  • Wipe rim with clean damp cloth, place on lid and tighten to finger tight.
  • Place in water bath canner bring to a boil. Process for 25 minutes.
  • Remove canner, place on towel on counter, allow to cool 12-24 hours.
  • Check seal, label and store.

  • TOMATOES: Pour the tomatoes into a large bowl and using your hands, kitchen shears, or an immersion blender, break the tomatoes down so that they’re chunky but not completely liquid.
  • AROMATICS: In a medium saucepan placed over medium heat, heat the olive oil, grated onions, oregano, basil, and red pepper flakes. Allow them to cook for 3-4 minutes, stirring frequently so nothing sticks or burns. Add garlic and continue to cook for another 30 seconds to a minute.
