2 tablespoons unsalted butter, softened
1-1/2 cups sugar, divided
3 large eggs, room temperature
4 cups all-purpose flour
1 tablespoon baking powder
3 teaspoons ground cinnamon, divided
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
3/4 cup 2% milk
Oil for deep-fat frying

Steps:

  • In a large bowl, beat butter and 1 cup sugar until crumbly, about 2 minutes. Add eggs, 1 at a time, beating well after each addition., Combine the flour, baking powder, 1 teaspoon cinnamon, salt and nutmeg; add to butter mixture alternately with milk, beating well after each addition. Cover and refrigerate for 2 hours. , Turn onto a heavily floured surface; pat dough to 1/4-in. thickness. Cut with a floured 2-1/2-in. doughnut cutter. In an electric skillet or deep fryer, heat oil to 375°., Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. , Combine remaining sugar and cinnamon; roll warm doughnuts in mixture. Freeze option: Wrap doughnuts in foil and transfer to a resealable freezer container. May be frozen for up to 3 months. To use, remove foil. Thaw at room temperature. Warm if desired. Combine 1/2 cup sugar and 2 teaspoons cinnamon; roll warm doughnuts in mixture.

These are my favorite doughnuts ever. I've had an emotional attachment to them since I was living and working in Washington, D.C. I was super poor and there was a bakery stall in Eastern Market right on my way to work that would sell me two-day-olds for 50 cents, and I'd eat them while riding my bike to work. Oh, the salad days. I'll even eat the 7-Eleven ones in a pinch. I just love a blueberry cake doughnut. I've tried to sneak this doughnut onto the menu of every restaurant I've ever worked at. -Duff

Nonstick cooking spray
1/3 stick butter, softened
1 cup sugar
Pinch of kosher salt
1 teaspoon pure vanilla extract
1 cup cake flour
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
2 extra-large eggs, plus 1 egg yolk
1 pint (2 cups) frozen blueberries, thawed
1 cup buttermilk
Basic Sugar Glaze, recipe follows
3 cups powdered sugar
1/2 cup milk
Pinch of kosher salt
1 tablespoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F and spray the doughnut pans liberally with cooking spray.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream the butter, sugar, salt, and vanilla until light and fluffy.
  • In a separate bowl, whisk together the flours, baking soda, and baking powder.
  • Add the eggs and yolk to the mixer and cream until blended.
  • In 4 to 6 stages, alternately add the flour mixture and the buttermilk, mixing on medium-low the whole time and constantly scraping down the sides. Once the additions are done, turn the mixer to its lowest setting and gently add the blueberries, mixing just until evenly incorporated and the batter is a nice shade of blue.
  • Fill a large piping bag with the batter and fill each well in the pans about two-thirds full.
  • Bake for 18 to 20 minutes or until the dough springs back when poked for regular doughnuts, or 8 to 10 minutes for mini doughnuts.
  • When cool, dip the doughnuts into the glaze and shake off the excess. Place them on a wire rack so the glaze soaks in and gets a little crunchy on the outside.
  • In a big bowl, combine all the ingredients and whisk together. Adjust the consistency by adding either milk (to thin) or powdered sugar (to thicken).

2 tbsp white vinegar
3/8 cup milk (3 oz.)
2 tbsp shortening
1/2 cup sugar (and extra for putting on donuts)
1 egg
1/2 tsp vanilla
2 cups flour, sifted (extra may be needed)
1/2 tsp baking soda
1/4 tsp salt
Vegetable oil for deep-frying (or use canola oil, which is healthier)
Increase sugar to 3/4 cup
Add 1/2 cup cocoa powder to dry ingredients
OR add 2 oz. unsweetened chocolate, melted, to butter/sugar

Steps:

  • Stir vinegar into milk and let stand for a few minutes until thick.
  • Cream together sugar and shortening (and add melted chocolate if using that).
  • Add eggs and vanilla and stir until blended.
  • Sift together flour, salt, and soda (and cocoa if using that). Stir into sugar mixture, alternating with milk mixture to incorporate both thoroughly. ( I had to add about 1 1/2 cups extra flour to get a dough consistency myself.)
  • Roll dough out thick, about 1/3 inch and cut into doughnut shapes with a doughnut cutter. I used a large cup for the donuts and a narrow shot-glass for the holes. Roll excess dough into small balls and flatten to make more donut
  • Heat oil until it makes noise ( about 375°F ) and fry doughnuts.

My easy homemade donut recipe is made without yeast for a quick and easy breakfast or snack. These take just minutes to whip up for the best fried donut holes you've ever tasted! Recipe includes a how-to video!

Vegetable oil or canola oil (for frying)
2 cups all-purpose flour ((250g))
3 Tablespoons granulated sugar
1 Tablespoon baking powder
1 teaspoon salt
5 Tablespoons unsalted butter ((very cold, I like to place mine in the freezer 15 minutes before beginning) (70g))
¾ cups whole milk ((175ml))
⅓ cup granulated sugar ((67g))
1 ½ teaspoons ground cinnamon

Steps:

  • I find my oil takes about 20 minutes or longer to come to temperature, so I typically start the oil just before I start my donuts. Fill a medium-sized, heavy-bottomed saucepan 2-3 inches (5-7cm) deep with your oil over medium heat. Use a candy or frying thermometer (make sure it isn't touching the bottom of the pot) to monitor your temperature and heat oil to 350F (175C). Monitor the heat pretty regularly and note that you may need to increase/decrease your stove temperature to keep it consistent.
  • Combine flour, sugar, baking powder and salt in a large bowl and whisk until well-combined.
  • Use a box grater go grate the butter into small pieces and then add to the flour mixture and stir until well-incorporated (visible butter pieces will still remain). Note: If you do not have a box-grater, use a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs, instead.
  • Add milk and gently stir until all ingredients are combined and the dough clings together.
  • Transfer dough onto a well-floured surface, and knead gently until it forms a cohesive ball. If dough is too sticky to manage, continue to work in flour until it is smooth and manageable (I've found on hot days or if my butter isn't cold enough the dough can be quite sticky)
  • Portion off approximately 1 ½ Tbsp-sized pieces of dough and roll into smooth, tight balls. Set aside.
  • Prepare your cinnamon/sugar mixture for rolling by stirring together cinnamon and sugar in a small dish. Set aside.
  • Prepare a large plate or baking sheet for your cooked donut holes by lining generously with paper towels.
  • Once oil has reached 350F, very carefully fry your donut holes, only 2-3 at a time, carefully transferring them to the oil with a slotted spoon (don't drop them in or the oil may splash, lower them into the oil instead).
  • Fry donut holes for approximately 90 seconds*, turning half way through so they become evenly golden brown.
  • Remove carefully with a slotted spoon, and place donut holes on a paper towel laden plate. Allow them to sit for about a minute/until no longer too hot to touch, and then transfer them to your cinnamon/sugar dish, roll them in the mixture until fully covered. Make sure to allow your oil to return to 350F (175C) between batches.
  • Repeat until all donut holes are cooked and have been rolled in cinnamon sugar.

All this recipe takes is a few simple ingredients and 30 minutes or less for easy homemade glazed doughnut holes.

1 1/2 cups confectioners' sugar
3 1/2 tablespoons whole milk
2 teaspoons vanilla extract
5 cups vegetable oil, for frying
1 cup milk
1 large egg
2 cups all-purpose flour
2 Tablespoons sugar
4 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup (1/2 stick) unsalted butter, melted
Deep-fry thermometer; Small ice cream scoop

Steps:

  • Sift the confectioners' sugar into a medium bowl. Slowly stir in 3 tablespoons of milk and the vanilla extract until the mixture is smooth. If the glaze isn't thin enough, stir in 1 additional tablespoon of milk. Cover the glaze with plastic wrap and set it aside while you make the doughnut holes.
  • Add the vegetable oil to a large, heavy-bottomed pot. (There should be at least 2 inches of oil in the pot and at least 2 inches between the top of the oil and the top of the pot.) Attach the deep-fry thermometer to the pot and begin heating the oil over medium heat to 350ºF. Line a baking sheet with paper towels.
  • In a small bowl, whisk together the milk and the egg.
  • In a separate medium bowl, whisk together the flour, sugar, baking powder and salt. Stir the milk-egg mixture into the dry ingredients, then stir in the melted butter, mixing until a soft dough forms.
  • Once the oil has reached 350ºF, use a small ice cream scoop to drop about 1 tablespoon scoops of dough into the oil, careful not to overcrowd the pan. (See Kelly's Notes.) Fry the doughnut holes, flipping them in the oil, for about 2 minutes or until they're golden brown. Using a slotted spoon, transfer the doughnut holes to the paper towel-lined baking sheet.
  • Allow the doughnut holes to cool slightly. Place a cooling rack atop a baking sheet, then one by one, dip the doughnut holes into the glaze and transfer them to the rack to allow the excess glaze to drip off. Serve immediately.
  • The dough expands when fried, so 1 tablespoon of batter will yield about a 2-inch doughnut hole. If you prefer smaller doughnut holes, drop about 1 teaspoon of batter into the oil. This recipe yields about 2 dozen of the larger doughnut holes or 4 dozen of the smaller variety.
  • The roundness of the doughnut holes depends on how clean of a scoop of batter you drop into the hot oil. If you don't have a small ice cream scoop, you can use two small spoons to form the batter into mounds, however your doughnut holes will not be as uniformly round in shape.

15-Minute Homemade Donuts image

These homemade donuts taste just as good any cake donut you could buy at your local bakery but you can make them at home in just 15 minutes!

1 1/4 cups (176g) all-purpose flour ((scoop and level to measure))
2 tsp baking powder
1/4 tsp salt
1/2 cup (120 ml) buttermilk*
1/4 cup (50g) granulated sugar
3 Tbsp (42g) melted butter
3 - 4 cups vegetable oil, (for frying)
1/3 cup (66g) granulated sugar**

Steps:

  • Pour about 1/2-inch oil into a large saute pan or pot and heat over medium heat to 355 degrees F. (keeping an eye on it as it is heating). Meanwhile prepare donut dough.
  • In a medium mixing bowl, whisk together flour, 1/4 cup sugar, baking powder and salt.
  • Separately whisk together buttermilk and melted butter. Pour buttermilk mixture into flour mixture and using a fork, stir in dry ingredients and mix just until combine (be careful no to over-work dough).
  • Roll dough into 1/2 Tbsp balls. Once the oil has reached 355 degrees F, fry about 1/2 the dough balls at a time.
  • Fry until just golden brown on bottom, then flip and cook reverse side until golden brown.
  • Carefully remove with a spider strainer or metal tongs drain onto a paper towel lined baking sheet.
  • Pour 1/3 cup sugar into a dish, roll donuts in sugar. Repeat this process with remaining dough.

  • Cover dough and chill for one hour, or until firm enough to shape.

1 1/2 cups milk
2 1/2 ounces vegetable shortening, approximately 1/3 cup
2 packages instant yeast
1/3 cup warm water (95 to 105 degrees F)
2 eggs, beaten
1/4 cup sugar
1 1/2 teaspoons salt
1 teaspoon freshly ground nutmeg
23 ounces all-purpose flour, plus more for dusting surface
Peanut or vegetable oil, for frying (1 to 1/2 gallons, depending on fryer)

Steps:

  • Place the milk in a medium saucepan and heat over medium heat just until warm enough to melt the shortening. Place the shortening in a bowl and pour warmed milk over. Set aside.
  • In a small bowl, sprinkle the yeast over the warm water and let dissolve for 5 minutes. After 5 minutes, pour the yeast mixture into the large bowl of a stand mixer and add the milk and shortening mixture, first making sure the milk and shortening mixture has cooled to lukewarm. Add the eggs, sugar, salt, nutmeg, and half of the flour. Using the paddle attachment, combine the ingredients on low speed until flour is incorporated and then turn the speed up to medium and beat until well combined. Add the remaining flour, combining on low speed at first, and then increase the speed to medium and beat well. Change to the dough hook attachment of the mixer and beat on medium speed until the dough pulls away from the bowl and becomes smooth, approximately 3 to 4 minutes. Transfer to a well-oiled bowl, cover, and let rise for 1 hour or until doubled in size.
  • On a well-floured surface, roll out dough to 3/8-inch thick. Cut out dough using a 2 1/2-inch doughnut cutter or pastry ring and using a 7/8-inch ring for the center whole. Set on floured baking sheet, cover lightly with a tea towel, and let rise for 30 minutes.
  • Preheat the oil in a deep fryer or Dutch oven to 365 degrees F. Gently place the doughnuts into the oil, 3 to 4 at a time. Cook for 1 minute per side. Transfer to a cooling rack placed in baking pan. Allow to cool for 15 to 20 minutes prior to glazing, if desired.

3/4 cup warm milk
1 packet active dry yeast
1/4 cup granulated sugar
2 1/2 cups plus extra for dusting your dough and board all purpose flour
1/4 teaspoons kosher salt
2 tablespoons at room temperature unsalted butter
2 egg yolks
for frying (can substitute vegetable oil) peanut oil
1 stick room temperature butter
2 1/2 cups confectioner's sugar
2 teaspoons vanilla extract
4 tablespoons hot water
for garnish sprinkles

Steps:

  • In the bowl of a standing mixer, pour warm milk, sugar and yeast. Let stand until yeast starts to foam. About 10 minutes. Attach dough hook to standing mixer while yeast is activating.
  • In a medium mixing bowl, whisk together the flour and salt.
  • Add flour mixture, butter and egg yolks to the yeast mixture and beat on medium speed until it comes together and forms a ball. Just about 3-5 minutes. Cover the bowl and and allow the dough to rise in a warm place for 1 hour.
  • Spray a sheet tray with non stick cooking spray and set aside. Transfer the dough to a lightly floured work surface and roll out to a 1/2″ thickness. Using a 2″-3″ donut cutter (you can also use a drinking glass or biscuit cutter to cut out your donuts and a plastic bottle cap to cut out the holes), cut out donuts and transfer them and their holes to the prepared baking sheet, spacing them 1″ apart. Spray the tops of the donuts and holes with nonstick cooking spray and cover with plastic wrap. Let stand in a warm place until they have almost doubled in size, about 30 minutes.
  • Using a deep fryer or dutch oven, heat oil to 350º. Line a baking sheet with paper towels or brown paper and set aside.
  • Working in batches, fry the donuts and donut holes until lightly golden brown, about 1 minute per side. Transfer to the paper lined baking sheet and let cool for 10 minutes before glazing.
  • To make the glaze: In a large mixing bowl using a hand mixer or whisk, mix all ingredients together. Mixture should be thin. Add more hot water if needed to thin out the glaze. Keep glaze warm until ready to use.
