GROUND BEEF GYROS
This is a great summer meal and quick and easy to put together and tastes wonderful. Refreshing served with the cucumber sauce and is even low in fat. I think this came from Quick Cooking. It's a favorite in our house.

Steps:
- In a bowl, combine first 5 ingredients.
- Cover and refrigerate. (If possible overnight).
- In separate bowl, combine ground beef and seasonings.
- Mix well.
- Shape into 4 patties.
- Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.
- Cut patties into thin slices.
- Stuff into pitas.
- Add lettuce,cucumber, tomato, and onion.
- Serve with yogurt sauce.

- In small bowl, combine Yogurt Sauce ingredients, mixing well. Cover and refrigerate.
- Heat oven to 350ºF.
- In medium bowl, combine ground beef and seasoning ingredients, mixing lightly but thoroughly.
- Divide beef mixture into 16 equal portions and shape into patties 2 inches in diameter.
- Place patties on rack in broiler pan.
- Bake in oven 10 minutes or until no longer pink OR GRILL over medium heat.
- To serve, place equal amounts of beef and tomato in each pita half; top with yogurt sauce.

- In a large bowl combine the ground lamb, beef, garlic, all spice powder, onions, salt, and pepper. Mix to combine. Shape the meat into 12 small patties. Alternately, you could just shape them into 4-5 larger ones. Set aside.
- In a small bowl, combine the ingredients for the tzatziki sauce. Add salt and pepper to taste. Set aside for serving.
- In a large skillet, heat 1 tablespoon of oil and fry the patties for 3-4 minutes (smaller) and 6 minutes (larger) or until they are cooked to desired doneness.
- to serve: Warm the pita bread, layer with meat patties, sliced onions, tomatoes, and lettuce. Top with tzatziki sauce and serve immediately.

- Add the ground beef to a skillet over medium-high heat and cook until browned, about 5-7 minutes. Add the seasonings and 1/2 cup of water. Simmer over medium heat until the sauce has thickened around the meat, about 5 minutes.
- While the beef cooks, make the Tzatziki sauce. Start by squeezing the excessive liquid out of the grated cucumber, discarding the liquid. In a small bowl, mix the grated cucumber with the remaining ingredients.

HOMEMADE GREEK-AMERICAN STYLE GYRO MEAT
Make this classic restaurant-style gyro meat at home. Gyros are the most popular Greek sandwich and it is very easy to make. In Greece, layers of meat are roasted on a spit then sliced and served in a pita with tzatziki sauce. The Greek-American version is made with thinly sliced meatloaf made with beef and lamb. Follow this recipe and make a few extra batches for those busy weeknights.

- Preheat oven to 325 degrees Fahrenheit, 163 degrees Celsius.
- Place the garlic cloves in a food processor and pulse until very finely chopped.
- Add onion and puree until smooth.
- Add ground meat with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses.
- Place the mixture in a loaf pan. Compact it as much as possible.
- Bake for 45 minutes till 1 hour.
- Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan.
- Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches.
- At this point, the gyro slices can be placed in a freezer-safe bag and frozen for future use.
- To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides.
- Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately.
