⅓ cup Dijon mustard
¼ cup honey
2 tablespoons mayonnaise
1 teaspoon steak sauce
4 skinless, boneless chicken breast halves

Steps:

  • Preheat the grill for medium heat.
  • In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.
  • Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!

1/4 cup honey
2 tablespoons lemon juice
2 tablespoons reduced-sodium soy sauce
1 teaspoon Dijon mustard

Steps:

  • Place chicken in an ungreased 11x7-in. baking dish. Combine remaining ingredients; pour over chicken. Bake, uncovered, at 350° for 35-40 minutes or until juices run clear, turning and basting with pan juices every 15 minutes.

Grilled, Dilled Lemon Chicken with Honey and Dijon image

Chicken is a tried and true protein. It's easy to make and an overall crowd pleaser. But there's always room to bring it to the next level, and this recipe does just that. After marinating in a mixture of lemon, vinegar, honey, mustard, dill and basil, the chicken is grilled to perfection. This recipe by JeanMarie Brownson was originally published in the Chicago Tribune.

2 medium lemons
1/4 cup extra-virgin olive oil
2 tablespoon white wine vinegar
1 tablespoon honey
1 tablespoon dijon mustard
3/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup each, chopped fresh: dill fronds, basil leaves
8 small (6 ounces each) boneless skinless chicken breast halves (about 3 pounds total) or 12 chicken thighs

Steps:

  • Finely grate zest from 1 lemon into a bowl. Squeeze the lemon and add the juice to the bowl. Stir in olive oil, vinegar, honey, mustard, salt and pepper until well blended.
  • Place chicken in a large resealable bag. Add 1/3 cup of the juice mixture to the bag along with half of the dill and basil. Close bag tightly.
  • Marinate chicken in the refrigerator, turning bag at least once, for 1 hour.
  • Meanwhile, heat a gas grill to medium-high, or prepare a charcoal grill for direct cooking.
  • Very thinly slice the remaining lemon; mix the slices with the remaining juice mixture. Set aside.
  • Remove chicken from bag; discard marinade. Grill chicken directly over the heat source, turning once, until chicken is nearly firm when pressed, 15 to 20 minutes.
  • Transfer chicken to the platter. Pour reserved lemon mixture over the chicken. Sprinkle with remaining dill and basil. Serve warm or at room temperature.

So easy and most ingredients are on hand. Mrs. Dash original blend is the key ingredient as well as dijon and honey,can't beat this for quick & easy.If you like to dip your chicken, make a double batch of mustard and honey. As usual with grilling chicken, sometimes I need to cook longer, but always check to see if the juices are running clear. Just 5 grams of fat and 5 grams of carbs. I found this at the Dash website (after tasting LorrieMom's carrots.. oh yum) I have done a touch of zaar adjusting to fit our tasts.

3 tablespoons Mrs. Dash seasoning mix (original blend)
4 (4 ounce) chicken breasts (boneless,skinless halves)

Steps:

  • Heat grill to medium high heat ( about 350 degrees).
  • Brush olive oil over both sides of chicken and sprinkle both sides with Mrs. Dash Seasoning.
  • Combine mustard and honey, place chicken on grill & brush half of mustard mixture over chicken.
  • Grill covered about 4 minutes, mabye more depending on the thickness of chicken breast and grill temperature.
  • Turn chicken and brush remaining mustard mixture over chicken and continue to cook another 4-5 minutes on a covered grill. (Or until juices run clear or knife inserted removes quickly and clean).
  • Everytime we make this dish I find the grilling time is different, so watch closely.

1/2 teaspoon kosher salt
Freshly ground black pepper
4 boneless skinless chicken breasts, butterflied
1 lime, cut into wedges

Steps:

  • In a small bowl, add the honey, mustard, 1 tablespoon of oil and salt and pepper, to taste. Mix well and put the mixture into a large plastic resealable bag. Add the chicken, seal the bag and shake to incorporate. Refrigerate at least 2 hours.
  • Preheat the grill to medium heat.
  • Remove the chicken from the bag and arrange it on a well-oiled grill. Cook until a nice crust forms on both sides, about 4 to 5 minutes per side. Let the chicken rest on a serving platter for 10 minutes before serving. Serve with lime wedges.

  • Marinade ... Add all the ingredients to a large ziplock bag or a baking dish/pan and mix well. The bag is the easiest way to go - just close the bag, shake and squeeze to cover all the chicken. But you can use a glass baking dish too - just make sure to mix well to cover all the chicken, then cover the entire dish with plastic wrap. I prefer to marinate mine over night, so in the morning I flip over the bag to make sure all the chicken is equally coated in the marinade. If using a dish, make sure to take it out of the refrigerate, stir it well and recover. I prefer 24 hours to get the best flavor, but at least 8 hours.
  • Grill ... Remove the chicken from the marinade shaking off most of the marinade, season with salt and pepper and grill. Indoor grill pan, outdoor grill or you can even use a saute pan. Cook until golden brown on both sides. Obviously, each cut of chicken will take a different cooking times. If you aren't sure, use a meat thermometer. Grill on medium heat, so the chicken doesn't burn.
  • Serve and ENJOY! ... Since I made mine on the grilled, some grilled squash and a salad is the perfect dinner.
