30 Chicken Wings, flats and drums
1/3 Cup Olive Oil
1 TBSP Granulated Garlic Powder
1 TBSP Granulated Onion Powder
1 TSP Cumin
1 TSP Ground Mustard
1 TSP Hungarian Paprika
1 TSP Kosher Salt
1/2 TSP Fresh Cracked Black Pepper
1/4 TSP Cayenne Powder

Steps:

  • Preheat your gas grill with all burners on HIGH. Make sure that it is clean and at about 500 degrees before grilling.
  • In bowl large enough to fit all the wings, add in the olive oil and all the spices. Mix well to combine.
  • Add in the wings and mix with a rubber spatula to coat the wings.
  • If you are running a 4 burner grill, turn the 2 burners on the right to low. Add all the wings over those 2 burners. Cook for 10 minutes, watching for flare-ups.
  • After 10 minutes, use tongs and flip the wings to the other side of the grill. After the wings have been moved, turn the left burners to low and the right burners to high. Cook for another 8-10 minutes.
  • Remove the wings from the grill and serve hot. Enjoy!

1 tbsp Kosher salt
1 tbsp Garlic powder
1⁄2 tbsp Sugar
1⁄2 tbsp Paprika

1 cup Barbecue sauce
Hickory wood chips or chunks
1⁄2 cup Honey
2 tbsp Ketchup
2 tbsp Hot sauce
4 tbsp Butter

Steps:

  • Preheat the oven to 375.
  • Wash, dry and then season the chicken with the dry ingredients.
  • Spray a cookie sheet with a generous amount of the cooking spray.
  • Place the wings in a single layer on cookie sheet.
  • Bake the wings for 35-40 minutes. (Turn wings once part way through.)
  • Combine all of the ingredients for the sauce in a saucepan, and simmer on low heat while the chicken cooks.
  • Place the chicken in the sauce.
  • Bake or grill for another 5 minutes. (Grilling has the best results)

The marinade is simply wonderful and so easy. If you bite into one of these hot off the grill the rest may not make it into the house! Make extras because the kids will eat them cold the next day. I marinated the wings for 6 hours to overnight. I also use 1 tablespoon of fresh ginger finely grated instead of ground ginger.

2 tbsp BBQ Dry Rub
2 tsp Baking Powder

Steps:

  • This method uses 2 zone cooking. The wings will be cooked in indirect heat at first and then will move to the direct heat side of the grill to finish off and get crispy.
  • Prepare Your Chicken Wings: Dry off your wings fully with a paper towel and remove the wing flap if necessary.
  • Prepare Your Dry Rub and Toss With Chicken Wings: In a large bowl, whisk your dry rub together along with the baking powder until it is evenly combined. Toss your wings into the bowl and coat them evenly with dry rub. This will vary by dry rub, but for every 1.5 pounds of wings, use 2 tbsp dry rub and 2 tsp baking powder.
  • Marinate: Let the wings marinate in the dry rub mixture UNCOVERED in the fridge for at least 2 hours or up to 24 hours.

Marinated in onions, garlic and lemon with several warm spices, these Mediterranean-style Grilled Chicken Wings are infused with flavor in every bite. They take only 20 minutes to grill, but for best results, allow the wings sometime to marinate in the fridge.

1 large red onion, quartered
8 garlic cloves
1/2 cup extra virgin olive oil
juice of 2 lemons
1 teaspoon sweet paprika
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon Aleppo pepper ((or 1/2 teaspoon red pepper flakes))
1/2 teaspoon turmeric
1/2 teaspoon nutmeg
2 1/2 pounds chicken wings
Kosher salt
2 lemons, halved

Steps:

  • In the bowl of a large food processor fitted with a blade, combine the onion, garlic, olive oil, lemon juice and spices. Pulse until well combined into a thick marinade.
  • Season the chicken wings well with Kosher salt and put them in a zip top bag. Pour the marinade over and zip the bag shut. Massage the bag a bit to distribute the marinade.
  • Lay the bag of wings flat on a large plate or tray. Refrigerate for 2 to 4 hours, turning the bag over once midway through.
  • Heat a gas grill to 425 degrees F and lightly oil the grates.
  • Shake off excess marinate then arrange the wings over direct heat. Cover the grill and cook the wings for 15 to 20 minutes, turning over every 5 minutes, until they are fully cooked through. Grill the lemons, flesh side down.
  • Serve the wings immediately with the grilled lemons. And squeeze the lemons all over to your liking. Add your favorite sauce for dipping (I like the coolness of Tzatziki yogurt cucumber sauce).

  • Marinade ... Add all the marinade ingredients to a large ziploc bag, seal, and shake to combine. Add the chicken, close, 'shake and squish' to make sure all the chicken is well coated; then, refrigerate and marinate 4-8 hours - I usually let it go all day. This can also be done in a non-reactive (glass) bowl, but the ziploc bag is so much easier.
  • Wings ... I really prefer the grill for these, but; if you don't have that available, you can broil them. Both the grill and broiler will take about the same time; approximately 7-10 minutes er side. You want them to get a nice golden crisp skin.
  • A couple of notes about grilling and broiling. They can and will burn if you are not careful. I like to broil them on the second shelf down; and, on the grill ... start off on indirect heat until some of the fat burns off; then, transfer to a hotter portion of the grill. You do need to keep an eye on them.
  • Serve ... NO dip and NO garnish for these - simple and delicious. I usually serve these for dinner; but, they make a great party food or appetizer too. ENJOY!
